PICANTE CHICKEN RICE BURRITOS



Picante Chicken Rice Burritos image

Flour tortillas filled with a mildly spicy, cheesy, picante chicken and rice mixture, then topped with more cheese and baked. A great dinner inspired by Mexican flavors. This is my favorite chicken recipe!

2 tablespoons butter
½ cup chopped green onion
1 clove garlic, minced
7 cups shredded, cooked chicken meat
1 tablespoon chili powder
2 ½ cups chicken broth, divided
1 (16 ounce) jar picante sauce, divided
1 cup uncooked long grain rice
½ cup sliced black olives
3 cups shredded Cheddar cheese, divided
12 (10 inch) flour tortillas

Steps:

  • To Make Chicken Mixture: In a large skillet over medium heat, melt butter and saute green onion and garlic until soft; stir in chicken, chili powder, 1/4 cup broth and 3/4 cup picante sauce. Heat through, then set aside.
  • To Make Rice: In a large saucepan, bring rice and remaining 2 1/4 cups broth to a boil. Reduce heat, cover pan and simmer for 20 minutes. Stir in remaining 1 1/4 cups picante sauce, cover and simmer for another 5 to 10 minutes or until rice is tender.
  • Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • To Assemble Burritos: Stir chicken mixture into rice, then add olives and 2 cups of the cheese. Mix well. Spoon 1 cup of filling onto each tortilla, off center. Fold sides and ends over filling, then roll up. Arrange filled tortillas in two 9x13 inch baking dishes and sprinkle remaining cup of cheese on top.
  • Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until heated through.

1/2 c chopped onion
2/3 - 1 c chicken broth
1 Tbsp butter or olive oil
1/2 c picante sauce
1/8 tsp garlic powder
1/2 c rice (uncooked)

Steps:

  • 1. Melt butter or heat oil. Saute onion until tender.
  • 2. Add broth and picante sauce. Stir and bring to a boil.
  • 3. Stir in rice and garlic powder.
  • 4. Cover and simmer 20 - 25 minutes. Watch closely, as it is prone to scorching.

PICANTE TOFU AND RICE

1/2 cup chopped red onion
1/2 cup each chopped green pepper and red
2 tablespoons chopped green chilies
2 teaspoons minced garlic
6 ounces firm tofu, drained and cubed
1 teaspoon olive oil
1/3 cup uncooked rice
3/4 cup pinto bean, rinsed and drained
2/3 cup vegetable broth
1/3 cup picante sauce
1 teaspoon cumin
1/4 teaspoon chili powder or to taste
1/2 cup tomato wedges
1/8 avocado, sliced
1/4 cup shredded low-fat Monterey Jack cheese

Steps:

  • 1. Sauté onion, peppers, chilies, garlic, and tofu in oil until just tender-crisp.2. Add rice, beans, broth, and picante sauce. Bring to a boil. Reduce heat, cover, and simmer 15 minutes until rice is tender.3. Add seasonings. Toss and let stand until liquid is absorbed.
