Picante Roast Beef Sandwich with Garlic, Lime and Green Chile image

Number Of Ingredients 11

2 teaspoons olive oil
1/2 cup diced onions
2 to 3 cloves garlic, minced
12 ounces sliced roast beef, sliced into strips
1 (14-ounce) can diced tomatoes
1 (4-ounce) can minced green chiles
2 tablespoons fresh lime juice
1 teaspoon ground cumin
2 tablespoons chopped fresh cilantro leaves
Salt and ground black pepper
4 sandwich rolls, sliced in 1/2

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and garlic and saute 3 minutes, until soft. Add roast beef slices and saute 3 to 5 minutes, until browned on all sides, stirring frequently. Add tomatoes, jalapenos, lime juice, and cumin and stir to combine. Bring to a simmer and cook 5 minutes, to heat through and reduce slightly.
  • Remove from heat and stir in cilantro. Season, to taste, with salt and black pepper. Spoon onto sliced rolls with plenty of sauce and serve.

I created Picante Beef Roast because I love the flavor of taco seasoning and think it shouldn't be reserved just for tacos! My recipe couldn't be easier, and it works great with a pork roast, too. -Margaret Thiel, Levittown, Pennsylvania

1 beef rump roast or bottom round roast (3 pounds), trimmed
1 jar (16 ounces) picante sauce
1 can (15 ounces) tomato sauce
1 envelope taco seasoning
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Cut roast in half; place in a 5-qt. slow cooker. In a large bowl, combine the picante sauce, tomato sauce and taco seasoning; pour over roast. Cover and cook on low for 8-9 hours or until meat is tender. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer 3 cups to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with roast.
