MOM'S COUNTRY GRAVY

This is my mother's recipe I grew up with. It is very tasty and is great with biscuits and sausage.

½ cup vegetable oil
¾ cup all-purpose flour
1 teaspoon salt
1 teaspoon ground black pepper
4 cups milk

Steps:

  • Heat the oil in a large skillet over medium heat. Whisk in the flour, salt and pepper until smooth. Cook and stir over medium heat until browned, about 10 minutes. Gradually stir in milk so that no lumps form, and continue cooking and stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk.

A fellow JAP member asked if I had a recipe for milk gravy, so here it is friend. A delicious base gravy for to use on chicken fried steak or add sausage or chipped beef for over biscuits. Yum! Use bacon drippings or butter, it's all up to you.

Number Of Ingredients 5

2 Tbsp bacon drippings or butter
2 Tbsp flour
1 1/4 c milk - more to thin if needed
Fresh cracked black pepper - i use 6 - 7 turns of the pepper mill
Kosher salt to taste ( i use about 1/2 tsp )

Steps:

  • 1. In a medium saucepan over medium heat, heat bacon fat or melt butter to bubbling. Once bubbling, whisk in flour and continue cooking and whisking for 1 - 2 minutes, watch not to burn. Whisk in the milk and continue stirring as mixture comes to a boil and thickens. Season to taste with pepper and salt. If preparing ahead, may need to thin out with a bit more milk. It's a great gravy for adding sausage or chipped beef to serve over biscuits or toast.

Ina Garten's Homemade Gravy recipe, from Barefoot Contessa on Food Network, gets its flavor from leftover turkey drippings and a touch of cognac.

Number Of Ingredients 9

1/4 pound (1 stick) unsalted butter
1 1/2 cups chopped yellow onion (2 onions)
1/4 cup flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Defatted turkey drippings plus chicken stock to make 2 cups, heated
1 tablespoon Cognac or brandy
1 tablespoon white wine, optional
1 tablespoon heavy cream, optional

Steps:

  • In a large (10 to 12-inch) saute pan, cook the butter and onions over medium-low heat for 12 to 15 minutes, until the onions are lightly browned. Don't rush this step; it makes all the difference when the onions are well-cooked.
  • Sprinkle the flour into the pan, whisk in, then add the salt and pepper. Cook for 2 to 3 minutes. Add the hot chicken stock mixture and Cognac, and cook uncovered for 4 to 5 minutes until thickened. Add the wine and cream, if desired. Season, to taste, and serve.
