Handmade Pastry
3 tablespoons all-purpose flour, plus more for dusting
3 pounds apples such as Rome, Cortland, or Granny Smith, or a combination, peeled, cored, and cut into 3/4-inch wedges (about 8 cups)
1/2 cup sugar, plus more for sprinkling
1/2 to 3/4 teaspoon ground spices (combination of cinnamon, ginger, allspice, nutmeg, and clove)
1 tablespoon freshly squeezed lemon juice (or orange juice)
1 teaspoon grated lemon zest (or orange zest), optional
Pinch of salt
2 tablespoons unsalted butter, cut into pieces
2 tablespoons heavy cream

Steps:

  • Preheat oven to 400 degrees. On a lightly floured surface, roll one disc of dough into a 12-inch round that's 1/8-inch thick. Fit into a 9-inch pie plate. Set aside in the refrigerator.
  • In a large bowl, combine apples, sugar, flour, spices, lemon juice, zest, and salt; toss to combine. Pour into lined pie plate. Dot with butter. Roll second disc of dough into a 12-inch round that's 1/8 inch thick. Lay dough over fruit. Cut vents into top crust. Trim edges to 1 inch over pie pan, and seal, crimping edges with thumb and forefinger. Chill for 30 minutes.
  • Remove pie from refrigerator. Brush crust with heavy cream, and sprinkle with sugar. Place on a baking sheet; this will catch any juices that may overflow during baking. Bake until pastry is golden and juices in center of pie are bubbling, 45 to 60 minutes. Cool for 1 hour before serving.

¼ cup brown sugar
¼ cup white sugar
¼ cup all-purpose flour
¾ teaspoon ground cinnamon
¾ cup all-purpose flour
¾ cup quick-cooking oats
⅔ cup brown sugar
2 tablespoons brown sugar
⅓ cup butter, melted
1 (9 inch) deep-dish pie shell

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix apples, 1/4 cup brown sugar, white sugar, 1/4 cup flour, and cinnamon together in a bowl.
  • Combine 3/4 cup flour, oats, and 2/3 cup plus 2 tablespoons brown sugar in a bowl. Drizzle melted butter over flour mixture; stir until crumbly.
  • Pile apple mixture into the pie shell. Scatter crumbly topping over apples.
  • Bake in the preheated oven until apples start to soften, about 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C). Continue baking until apples are soft and topping is browned, about 40 minutes more.

5 Granny Smith apples, peeled and sliced
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/4 teaspoon salt
Juice of 1/2 lemon
1 recipe Perfect Pie Crust, recipe follows
6 tablespoons butter
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
1 1/2 sticks cold butter
3/4 cup vegetable shortening
1 egg
5 tablespoons cold water
1 tablespoon distilled white vinegar

Steps:

  • Preheat the oven to 375 degrees F.
  • In large bowl, stir together the apples, brown sugar, granulated sugar, flour, salt and lemon juice. Set aside and see how long you can keep from sneaking a slice of apple.
  • With a rolling pin, begin rolling out the Perfect Pie Crusts into large circles. Roll the dough from the center outward. Be gentle and patient, it'll take a little time to get the dough completely rolled out.
  • If you think the bottom is really sticking to the surface below, use a nice, sharp spatula to loosen the dough and sprinkle some extra flour on top. Then flip it over to finish rolling. Remember to roll from the center in single, outward strokes, no back-and-forth rolling.
  • Again with a spatula, loosen and lift the dough and carefully place the circles on large baking sheets.
  • Place half the apple mixture on one crust and the other half on the other crust. Fold over the edges of each crust so that it covers 2 to 3 inches of the apple mixture. No need to be artistic - the more rustic the better. Dot the tops of the pies with chunks of the butter.
  • Bake until the filling is golden and bubbly, 30 to 40 minutes. If the crust appears to brown too quickly, cover the edges with aluminum foil for the remaining baking time.
  • Allow to cool slightly, then slice into wedges with a pizza cutter. Eat 'em on the go!
  • Combine the flour and salt in a large bowl. Add in the butter and shortening. Using a pastry cutter, gradually work the butter and shortening into the flour until the mixture resembles tiny pebbles. This step should take 3 or 4 minutes.
  • Lightly beat the egg with a fork, and then add it to the mixture. Next, add in the cold water and vinegar. Stir the mixture together until it's just combined, and then remove half the dough from the bowl.

3/4 cup sugar
2 tablespoons all-purpose flour
3/4 teaspoon cinnamon

  • Heat oven to 425°F.
  • Place one pie crust in a 9" pie place. Press firmly against the side and bottom.
  • In a large bowl, gently mix filling ingredients; spoon into crust-line pie plates. Top with second pie crust. Wrap excess top pie crust under the bottom crust edge, pressing edges together to seal; flute. Cut slits of shapes in several places of top crust.
  • Bake 40 - 45 minutes, or until apples are tender and crust is golden brown. Cover crust with 2-3 inch wide strips of foil 15 - 20 minutes of baking to prevent excessive browning. I bought one of those round crust shields that really works here. Cool on cooling rack at least 2 hours before serving.
  • Variation short cut: One 21 oz can of apple pie filling and one 21 oz can of sliced apples can be substituted for the filling - still use the spices.
  • Add- on - Caramel Apple Pie - immediately after removing pie from the oven, drizzle 1/3 cup (or less) of caramel sundae toppng (like Smuckers) on top of the pie and sprinkle with @ with two tablespoons of chopped pecans. I have done this and it is wonderful both in taste and appearance.

1 egg

Steps:

  • 1. For pie crust, combine flour & salt in a large bowl. Add in butter & shortening. Using pastry cutter work butter & shortening into flour until it looks like tiny pebbles.
  • 2. Lightly beat egg w/fork & add to mixture. Next add in water & vinegar. Stir mixture together til just combined & remove 1/2 the dough from bowl. Yields dough for 2 crusts.
  • 3. Preheat oven to 375. In large bowl, stir together apples, sugars, flour, salt & lemon juice.

FILLING:
7 to 8 cups thinly sliced peeled tart apples

  • In a bowl, combine flour and salt; cut in shortening. Gradually add cold water, 1 tablespoon at a time, tossing lightly with a fork until dough forms a ball. Chill for 30 minutes. On a floured surface, roll half of dough into 10-in. circle. Place into a 9-in. pie pan. , In a bowl, toss apples with lemon juice. This is a very simple apple pie recipe, and one that I have always had success with, it is the one I always choose when I want to make a perfect apple pie. Of coarse you can use your favorite pie crust recipe if desired. Remember, use only Granny Smith or Pippin for this pie otherwise you will end up with a mushy filling. This pie can also be made with a crumb topping instead of a top pastry crust see recipe below. Once you try this recipe for apple pie you will always come back to it! The amount of apple filling is enough for one large 10-inch deep-dish pie or divide in half and make two 8-inch pies, also the crumb topping for this recipe is enough for two small pies.

1 double crust pie crust (for a 10 inch deep-dish pie, my butter pie crust Kittencal's No-Fail Buttery Flaky Pie Pastry/Crust works great for this or use your fav)
8 tart green apples, peeled, cored and cut into no larger than 1/2-inch slices (use Granny Smith or Pippin apples for this only)
2 tablespoons fresh lemon juice (or juice of half lemon)
1 cup sugar (if you prefer a sweeter filling increase the sugar by a couple tablespoons)
1/4 cup light brown sugar
1/4 cup all-purpose flour
1 1/2-2 teaspoons cinnamon
1 pinch nutmeg (optional)
1/8 teaspoon salt or 1/4 teaspoon kosher salt
2 tablespoons butter (no subs)
1 egg white, lightly beaten
1 tablespoon sugar (preferably coarse sugar)

Steps:

  • Prepare a double pie crust as directed.
  • Roll out one disk on a lightly floured surface into a 12-inch circle and place the pastry in the pie plate.
  • Gently press the dough into sides pie plate leaving an overhang of crust.
  • Refrigerate while preparing the apple filling.
  • Set oven rack to the second-lowest position and heat to 425 degrees.
  • Peel, core and slice the apples into 1/2-inch slices (no larger than 1/2-inch).
  • Place in a bowl and gently toss the apples with the fresh lemon juice.
  • In a small bowl combine sugar, flour, cinnamon, salt and nutmeg (if using).
  • Add the sugar mixture to the apples and toss well to coat.
  • Transfer the apple mixture into the chilled prepared crust and mound the apples slightly in the center.
  • Dot with 2 tablespoons butter.
  • Roll out the second pastry, and place over filling.
  • Flute the edges together.
  • Make several slits in the top crust to allow steam to escape (if the pie dough is too soft, place in the freezer for 10 minutes).
  • Whisk an egg white with a fork, and brush onto top of crust.
  • Sprinkle with sugar.
  • Place on a cookie sheet to catch any spills.
  • Bake for 25 minutes.
  • Reduce oven temperature to 375 degrees (leave the pie in the oven and do not open the oven door) continue baking for about another 30-35 minutes, or until the crust is deep golden brown and the fruit is bubbling.
  • Transfer to a wire rack and cool for at least 4 hours before slicing the pie.
  • TO MAKE PIE WITH CRUMB TOPPING: in a bowl combine 1 cup flour, 1/2 cup brown sugar, 1-2 teaspoons cinnamon; mix well with a spoon.
  • Add in 1/2 cup COLD butter (no subs) cut into small chunks and mix together with your fingers to combine well.
  • Add in some chopped walnuts if desired.
  • Place in the fridge while preparing the pie.
  • Make the pie filling exactly as directed, and dot with 2-3 tablespoons of butter before sprinkling on the topping.
  • Bake as directed, but cover with foil the least 15 minutes of baking.

Lately, I've been on an apple pie binge and I've made it so many times that they're all starting to blur together. I started out simple, with just a recipe I found somewhere, but then I started tweaking, and I think that this recipe is almost perfect, well, for me anyway. This recipe can also be made gluten free!! Now I have been trying to make this pie all organic (which makes it taste 10x better!! highly recommend it!) but I've run into a problem with the apples. They're just too juicy to make the filling come out gooey, if you have any suggestions please leave a comment!

7 xl granny smith apples (non organic)
1 cup sugar
4 1/4 tablespoons cornstarch
1 1/2 tablespoons organic cinnamon
1/4 tablespoon freshly grated nutmeg
1 tablespoon lemon zest
2 tablespoons softened butter
3 cups flour
2 tablespoons sour cream, gluten free only
1 cup of cold butter or 2 sticks butter flavor shortening
3/4 teaspoon salt
ice cold water
1 egg
1/2 cup cinnamon sugar, mixture

Steps:

  • Making the Crust:.
  • Combine flour and salt in a large bowl. Cut in cold butter/shortening with flour salt mixture until it starts balling up to the size of a pea or smaller.
  • Knead the cold water into the flour mixture by spoonful until the bowl starts to clean itself or the dough start to feel slightly wet (make sure not to over knead!). Pack your dough carefully into a ball and put into a zip-lock bag and refrigerate it for at least 30 minute.
  • Making the Filling (Preheat the oven to 450 F).
  • Split the dough into halves, flour a flat surface, roll out into circle until 1/4 inch thick, and put into the pie pan. Place the pie pan back into the fridge along with the.
  • Combine sugar, cinnamon, nutmeg, and cornstarch in a small bowl. Peel, core, and slice Granny Smith's to desired thickness (prefer 1/4 inch) and place inside large bowl. Add lemon zest and sugar mixture to the apples until evenly distributed.
  • Place apples into into pie crust one layer at a time. In between layers add drops of softened butter, about 5 small drops on each layer. Once apples are all in, add the extra juice from the bottom of the bowl.
  • Roll out your top crust on a floured surface, Place your top crust on the pie (if not lattice, make sure to cut about 3 finger length slits in the top for the steam to escape).
  • Beat 1 egg and brush over the pie crust. Sprinkle cinnamon sugar mixture to the crust until completely covered.
  • Bake for 10 minutes at 450 F (put a cookie sheet a rack beneath your pie in case it dribbles over).Turn oven down to 350 F and bake for 50 minutes.
  • Take it out and set on cooling rack. Let it cool completely and then enjoy!

1 tsp salt
2 tbsps sugar
11 tbsps (1 stick + 3 tbsps) unsalted butter, cut into 1/4-inch pieces and frozen
7 tbsps vegetable shortening, frozen
Apple Filling:
4 tbsps (1/2 stick) unsalted butter
3 1/2 lbs apples that hold their shape during baking*, peeled, quartered, cored and sliced 1/4-inch thick.
1/2 lb apples that soften during baking**, peeled, quartered, cored and sliced 1/4-inch thick
3/4 cup sugar
3/4 tsp ground cinnamon
2 tbsps cognac, brandy or applejack
1 tsp vanilla extract
1 egg white
1 tbsp sugar
*Apples that hold their shape include Braeburn, Golden Delicious, Granny Smith, Jonagold, Rome Beauty, and Winesap.
**Apples that soften include Cortland, Empire, Macoun and McIntosh.
*** Apples not recommended for pie baking are Fuji and Red Delicious.
Pie Dough: Mix flour, salt and sugar in a food processor fitted with a steel blade. Scatter butter pieces over flour mixture, tossing to coat butter with a little flour. Cut butter into flour with five 1-second pulses. Add shortening and continue pulsing until flour is pale yellow and resembles coarse cornmeal, with butter bits no larger than small peas, about 4 more 1-second pulses. turn mixture into a medium bowl.
Sprinkle 5 tablespoons ice water over mixture. With rubber spatula, use a folding motion to mix. Press down on dough with broad side of spatula until dough sticks together, adding up to 1 tablespoon more ice water if necessary.

Steps:

  • 3. Divide dough into 2 balls, one slightly larger than other. Flatten each into 4-inch-wide disk. Dust lightly with flour, wrap in plastic and refigerate for at least 30 minutes. (Dough can be refigerated overnight.) 4. Apple Filling: Meanwhile, heat butter in a large (11-to-12 inch) skillet over medium-high heat. Add apple slices, sugar and cinnamon, and when they start to sizzle and steam, reduce heat to low. Cover pan and simmer until apples soften and release their juices, about 8 minutes. Uncover, increase heat to medium-high and cook, stirring frequently, until softer apples start to fall apart and juices thicken to thin syrup consistency, about 5 minutes longer. Transfer apples to a jelly roll pan; refrigerate or set in a cool place until apples cool to room temperature. Stir in cognac, brandy or applejack and vanilla extract. 5. Adjust oven rack to lowest position and preheat oven to 400 degrees F. Remove larger dough disk from refrigerator. (Let stand to soften slightly if refrigerated for longer than 30 minutes.) Roll disk out on a lightly floured surface into a 12-inch circle, about 1/8 inch thick. Transfer and fit dough into a 9-inch ovenproof glass pie pan, leaving any overhanging dough in place. Turn cooled apples into pie shell. 6. Roll smaller dough disk out on a lightly floured surface into a 10-inch circle. Lay it over fruit. Trim top and bottom edges to 1/2 inch beyond pan lip. Tuck this rim underneath itself so that folded edge is flush with pan lip. Flute dough or press with fork tines to seal. Cut 4 vents at right angles on top of dough to allow steam to escape. Brush pie top with egg white and sprinkle with sugar. Freeze pie for 15 minutes. 7. Place pie on a baking sheet and bake until top crust is golden, about 15 minutes. Reduce oven temperature to 350 degrees F and continue baking until crust is golden brown and juices bubble, 30 to 35 minutes. Transfer to a wire rack; cool slightly. Serve warm.

2 9-10" pie crusts
1/2 c unsalted butter
3 Tbsp all-purpose flour
1/4 c water

  • 5. Stir together until smooth, simmer for 3-4 mins.
  • 6. Add apples and toss to coat.
  • 7. Add coated apples to pie plate; reserve some remaining liquid.
  • 8. Lay pastry strips over apples in a criss-crossing pattern and press ends to the top edge of bottom pastry. Use the longest pieces for the middle of the pie, and the shorter pieces towards the outside, leaving about 1 inch in between rows.
  • 9. Crimp the edges closed.
  • 10. Lightly brush the top of pastry lattice with some remaining sugar syrup mixture.
  • 11. Drizzle any remaining mixture over the pie allowing it to run down into the apples through the pastry lattice.
  • 12. Bake at 425 for 15 minutes.
  • 13. Reduce heat to 350 and bake for another 40 mins.

I PREPARED SEVERAL PRIZE WINNING APPLE PIES, THEN TWEEKED THEM INTO ONE RECIPE TO ACHIEVE A JUICY, FLAVORFUL PIE. MY SISTER-IN-LAW IS A PROFESSIONAL COOK. I USED HER KITCHEN TO PREPARE THIS FINAL APPLE PIE AND AFTER SERVING HER, SHE EXCLAIMED, "THIS IS THE PERFECT APPLE PIE!" I AGREED.

2 9" deep dish marie callendar pie crusts
4 large granny smith apples - peeled, cored and sliced thin (between 1/4" - 1/3" thick - if cut too thick, the apples will not cook through
zest and juice from one small lemon
1/2 tsp cinnamon
1/4 tsp nutmeg
1 stick unsalted butter (1/2 cup)
2 Tbls all purpose flour
1/2 cup white sugar
1/2 cup brown sugar, packed
2 Tbls water
MAKES ONE SEMI-THICK, FLAVORFUL, JUICY, DEEP DISH PIE - THE RESULT OF MUCH EXPERIMENTING.

Steps:

  • 1. In large bowl, mix together apples and lemon. Set aside.
  • 2. In a medium bowl, soften butter in microwave (about 30 seconds). Stir in flour to form a paste. Add water, white sugar, brown sugar, and spices. *Set aside 1/4 cup of sugar butter mix. Fold the remaining sugar butter mix evenly throughout the apple lemon mix.
  • 3. Fill bottom crust with apple mix, mounded slightly in the center to reduce spill over.
  • 4. Ball up and re-roll the 2nd pie crust into about 11" circle, then cut it into 1/2" or 3/4" strips for the lattice top. (I use a ruler for a straight edge.) Using the strips, cover apple pie with a lattice work crust.
  • 5. *Using a rubber spatula or your fingers, spread the reserved 1/4 cup sugar butter mixture evenly on top of the lattice. The mixture is thick, but will form a thin, sweet crust on the lattice work.
  • 6. *Alternate method to sweeten the lattice - Instead of brushing the top lattice crust with the sugar/butter mixture, after the pie has cooked 35-40 minutes, brush lattice with a little milk and sprinkle the top with sugar and cinnamon. (Course ground sugar works great for this.)
  • 7. Bake 35-40 minutes in the preheated oven. Loosely cover the pie with tin foil to prevent burning and bake an additional 35-40 minutes.

2 1/4 cups flour
1 tsp. salt
1 cup shortening
5 to 7 T ice cold water
6 cups thinly sliced peeled tart apples (about 4 large apples)
3/4 cup sugar
1 T cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 T lemon juice (optional)

Steps:

  • Preheat oven to 400°F. Mix flour and salt in large bowl. Cut in shortening using a pastry blender or two knives until mixture resembles coarse crumbs. Add water, 1 Tbsp. at a time, mixing lightly with fork until flour mixture is evenly moistened and clings together when pressed into a ball. Divide dough in half; shape each half into 1/2-inch-thick round. Wrap each dough round in plastic wrap; refrigerate 15 min. Meanwhile, toss apples with sugar, cornstarch, cinnamon, nutmeg and lemon juice in large bowl; set aside. Place 1 dough round between two large sheets of plastic wrap; roll out dough with rolling pin to flatten slightly, working from center of dough to the edge. Turn over; continue rolling until dough round is about 2 inches larger than diameter of inverted 9-inch pie plate. Peel off top piece of plastic wrap; invert dough into pie plate. Peel off remaining piece of plastic wrap; press dough evenly onto bottom and up side of pie plate, being careful not to stretch the dough. Trim any dough hanging over edge of pie plate with sharp knife or kitchen shears; reserve trimmings. Fill with apple mixture; set aside. Roll out remaining dough as directed; place over filling. Trim top crust about 1/2 inch beyond edge of pie plate. Fold edge of top crust under edge of bottom crust; pinch edges together to form a ridge. Flute edge (see Tip). Cut several slits near center of pie to allow steam to escape. Bake 45 to 50 min. or until juices form bubbles that burst slowly. Cool.

This filling for an apple Pie, Crisp or Cobbler Has to be My all Time Favorite filling recipe . I pile, & mound My apples really high in a Pie when I am making one. I have old 12" pie pans that are Not Easy to Find. I found them in the early 70's and I have a hard time Keeping hands off them, they just want to dissapear, Because when you get a slice of this pie you know You have had a slice of Pie. non of this sliver of an 8" pie for me, if I can help it. Hope you'll try it. Note: If Baking a pie with this filling I bake about 45-50 Min, till crust is golden in color. Same with the Crisps, or cobblers

10 Lg - apples peeled and sliced thin
1/2 C - sugar
2 Tbs - butter
2 Tbs - brown sugar, firmly packed
1/2 tsp - ginger
1/4 tsp - nutmeg
1/2 tsp - cinnamon
- just a sprinkle of mace
1/2 tsp - just a sprinkle of vanilla
1/2 - lemon, (juice only)

- this filling is enough for a 10 in pie x 4 " high

Steps:

  • Use Combination of Different Apples. The best are Granny Smith mixed with Cortland types. Granny smith retain their shape, while Cortland types Cook down like into applesauce. Wash, Peel, Core & Slice Apples into Thin Wedges.
  • 1. Mix; Nutmeg, ginger, Cinn, with the Sugar's. 2. Sprinkle the sugar with the Few drops of vanilla. 3. Work the BUTTER and Flour or cornstarch ( not Both) as thickner, into the sugars.
  • If making pie; 1. In large Bowl, Slice apples into Thin wedges, 2. Sprinkle the Juice of 1/2 a lemon over apples, Toss well. 3. Then Add 1/2 of the Sugar Mixture to apples and toss well. 4. Now, place all into a Mound into a rolled out pie dough, packing apples tightly in the pan. Now Sprinkle the Surgar Mix over the Apples evenly.

6 cups thinly sliced, peeled apples (about 6 medium)

  • Heat oven to 425°F. Place 1 pie crust in ungreased 9-inch glass pie plate. Press firmly against side and bottom. In large bowl, gently mix filling ingredients. 1 unbaked pastry for double-crust pie
8 tablespoons unsalted butter
4 1/2 lbs golden delicious apples
1 lemon, juice of
1 cup dark brown sugar, packed
1 1/2 tablespoons flour
1 teaspoon sugar
2 teaspoons milk

Steps:

  • Peel, halve and core the apples. Cut them into 3/4 inch wedges. Toss the apples in a large bowl with the juice of the lemon.
  • Melt the butter in a 12" skillet. Stir in the brown sugar. Add the apples and turn to coat. Increase the heat to high and cook, turning occasionally, until most of the wedges are tender but not mushy, about 15 minutes. Do not overcook.
  • Immediately scoop the apples and their juices onto a rimmed baking sheet. Sprinkle the flour and cinnamon over them and toss until the flour disappears. Place the baking sheet on a wire rack and let the apples cool to room temperature, about 40 minutes.
  • Preheat the oven to 450. Arrange the apples in the pie shell; drizzle the juices over them. Cover with top crust and crimp. Dissolve the sugar into the milk and brush the top crust with a pastry brush. Prick with a fork.
  • Bake the pie for 25 minutes, or until the crust is golden brown. Reduce the heat to 375 and bake for 20 minutes longer, or until you hear the filling bubbling.
  • Transfer the apple pie to a wire rack and let cool for at least 1 hour before serving.
