PEPPERONCINI BEEF
Roast beef cooked in a slow cooker with garlic and pepperoncini makes a delicious and simple filling for gyro sandwiches. Serve on hoagie rolls with provolone or mozzarella cheese, and your choice of condiments.

Steps:
- Make small cuts in roast, and insert garlic slices in cuts. Place roast in the slow cooker, and pour the entire contents of the jar of pepperoncini, including liquid, over meat.
- Cover, and cook on Low for 6 to 8 hours.
- When making the sandwiches, place meat in rolls, top with cheese, and zap in a microwave for a few seconds. Don't forget to use the pepperoncini in the sandwiches!

CROCK POT PEPPERONCINI BEEF ROAST

This makes the absolute best beef sandwiches to enjoy with friends during the big game, or just to share with the family. The pepperoncini flavor is subtle, not overpowering! Steps:
- Place beef roast in crock pot.
- Pour Onion soup mix, beef, and chicken broths over roast.
- Cut tops and stems off each pepperoncini pepper, and return them to their original jar in the juice.
- Pour entire jar of pepperoncini peppers w/juice over beef roast and mix with large spoon to blend soups.
- Cover crock pot and cook on low for 11 hours.
- (note - 11 hours, not 8 hours like most recipes)This is important to the success of this roast.
- The last 1/2 hour of cooking time, take roast out of crock pot and "shred" the meat apart with a knife, and return meat to the juices in crock pot for 30 minutes.
- Serve on your favorite bun or hoagie roll, with extra juice on the side.
- Serving Suggestion: Sprinkle shredded mozzarella cheese over beef sandwich and microwave for 35 seconds before serving, then spoon additional au jus over the bread!

CROCK POT ITALIAN BEEF WITH PEPPERONCINI
Wonderful roast for Italian Beef sandwiches. Not for salt restricted diets, but exceptional flavor. The original recipe calls for beef roast and pepperocini only, but I have tweaked it to suit my taste. Try it, you'll love it! (Preparation time does not include cook time.) Also, adjust seasoning to your taste, add onion, mushrooms or whatever you like.

- Place roast, pepperocini and half the pepperocini juice in crockpot.
- Mix water, au jus, oregano, basil and garlic in measuring cup and pour over roast.
- Cook on low heat for 7 to 8 hours.
- When roast is tender, pull apart with forks and let simmer in juice another 1/2 hour or so.
- Serve on toasted Hoagie rolls with cheese, pepperocini and juice from pan for dipping.

Steps:
- Using a crock pot (on high setting), cook roast about 6-8 hrs, depending on the roast cut, in the peppers juice.
- Set the peppers aside for later.
- Once the meat is cooked it should be falling apart, you can either take it out to shred it and put it back in the pot, or do your best to separate the meat while it stays inside the crock pot.
- Add the peppers and sliced onion.
- Add Au Jus mix, I take some of the pepper juice out and mix the Au Jus so there are no lumps, and then add it back to the meat, you may want to add a little water, so the meat is covered.
- Cook on low for about another hour or so.

2-INGREDIENT PEPPERONCINI BEEF ROAST
This is a recipe DH and I begged off a former co-worker, Barbara, years ago. She brought it to a potluck, and our co-workers raved about it. It's a beef roast (your choice of cut) with a whole jar of pepperoncinis and juice dumped into a Crock Pot and cooked on low for 8 hours. The beef turns out amazingly tender and tangy but not spicy, and the peppers soften and absorb the juices wonderfully. Eat the beef with the pepperoncinis or without. Sometimes we serve it on burger buns or without. Left-overs are yummy too--cold or hot!

- Place beef roast in a 10 quart Crock Pot and dump in the entire jar of pepperoncinis, including the juice.
- If the liquid does not come to the top of the beef roast, add just enough water to be level with the top of the roast.
- Set Crock Pot on low heat and cook for 8-10 hours.
- To serve, drain juices from meet but reserve pepperoncinis. Shred meat on a platter and arrange pepperoncinis around the outside. Serve on a burger bun or beef only with or without pepperoncinis.
LAZY BUTT PEPPERONCINI CROCK POT BEEF
Three ingredients + almost zero prep + your trusty slow cooker = *RGF*. (Really Good Food.) While there's a tiny kick from the peppers, it's not the eye-watering kind of heat I tend to fear. I got this from allrecipes.com where the author suggests serving the meat and peppers on toasted hoagie rolls with provolone or mozzarella and your choice of condiments. If using cheese, (which would help temper any heat from the peppers), top the roll with the meat, then cheese and zap it in the microwave for a few seconds or, better yet, under the broiler, particularly if you're toasting your rolls there. You could also slap a serving on tortillas with appropriate condiments. (Damn, I'm getting hungry.) Some reviewers add broth and onions to the crock pot, but it really doesn't need it. Let your taste buds be your guide! *** UPDATE *** The other night I mixed some shredded Monterey Jack and this lovely seriously aged Dutch Unie Kaas Robusto, broiled it on the top half of a sesame seed bun until melted, then slapped that puppy on the meat-topped lower half of the bun. I also experimented with a little Cattlemen's (Smokehouse) bbq sauce. And in addition to the slices of garlic inserted into the meat, I put 1/2 of a head of garlic in one of those little drawstring bags and plopped that puppy in the crockpot to cook with the rest of the ingredients. Yum!

- Place all ingredients in crockpot and cook on low for 7-10 hours.
- Once roast is falling apart, remove roast and shred in a large bowl.
- Skim out pepperoncinis and add to the shredded roast.
- Reserve the au jus liquid.
- Split rolls in half and place on a cookie sheet in oven to toast 3-5 minutes, remove from oven.
- Place shredded roast and pepperoncini( about a cup) on one half of roll and 1/2 cup shredded cheese on other half.
- Put back on oven to melt cheese.
- Pour au jus liquid into individual cups for dipping.
- Serve.
