WHITE CHOCOLATE PEPPERMINT POPCORN

30 peppermint candies
1 pound white chocolate chips
2 tablespoons coconut oil
10 cups store-bought popped kettle corn
1/4 cup mini semisweet chocolate chips
2 tablespoons red sprinkles
2 tablespoons green sprinkles
2 tablespoons red sanding sugar
2 tablespoons green sanding sugar

Steps:

  • Line 2 baking sheets with waxed paper.
  • Place the peppermint candies in a large resealable plastic bag. Crush with a rolling pin until you have a mix of smaller chunks and crumbs. Set aside.
  • Place the white chocolate chips and coconut oil in a microwave-safe bowl. Microwave in increments of 15 to 30 seconds (this will depend on your microwave), stirring after each, until completely melted and smooth.
  • Place the kettle corn in a large bowl. Pour the white chocolate mixture over the popcorn and fold with a spatula until evenly coated. Transfer the popcorn to the lined baking sheets in a single layer. Working quickly, sprinkle the popcorn with the crushed peppermint candies, mini chocolate chips, red and green sprinkles and red and green sanding sugar. You can you use more or less of each topping based on what you like.
  • Allow the popcorn to dry to the touch, about 15 minutes, before packing in bags as gifts or storing in an airtight container.

  • In a microwave, melt candy coating; stir until smooth. In a large bowl, combine the popcorn and crushed candy. Pour candy coating over top; toss to coat. Pour onto a waxed paper-lined baking sheet. If desired, sprinkle with nonpareils. When hardened, break apart. Store in an airtight container.

5 cups popcorn, popped
12 ounces white chocolate, chopped or 12 ounces white candy coating
1 cup peppermint candy, crushed

Steps:

  • Cover a baking pan with foil or wax paper; set aside.
  • Place popcorn in a large bowl; set aside.
  • Melt chocolate in a double boiler over barely simmering water, stirring until smooth OR melt according to package directions.
  • Stir in crushed peppermints after chocolate is melted.
  • Pour chocolate mixture over popcorn mixture and stir to coat.
  • Spread onto prepared pan; allow to cool completely.
  • When chocolate is cooled and set, break into chunks for serving.
  • Store in an air-tight container at room temperature.

15 starlight mints, coarsely crushed (about 1/3 cup)

Steps:

  • Heat oil in large saucepan on medium heat. Add popcorn; cover with lid. Cook until popcorn is popped, constantly shaking pan on burner to prevent popcorn from burning. Pour popcorn into large bowl.
  • Melt butter in same saucepan on low heat. Add marshmallows; cook until marshmallows are completely melted and mixture is well blended, stirring constantly. Pour over popcorn; toss until popcorn is evenly coated with marshmallow mixture.

  • Spray large rimmed baking sheet with cooking spray. I got this recipe from good friend of mine. This stuff is seriously addicting! It makes a big batch! Anytime I have family in town I make it so I don't eat the whole batch myself. It is the perfect Christmas treat! You can eat it all year long substitute the candy cane for , heath bits, Recesses pieces, m&m's etc.. Watch out now! I bet you can't eat just one bite!

1/2 cup(s) butter
1/2 cup(s) margarine
1 1/3 cup(s) sugar
1/2 cup(s) corn syrup, light
1 teaspoon(s) vanilla
1 - 16 oz bag of mini marshmallows (if you can't find a 16 oz bag just use 1 1/2 bags of the 10.5 oz)
2 - gallons of air popped popcorn (or 3 bags of microwave popcorn,use very light butter)
30 - miniature candy canes, crushed

Steps:

  • Melt butter and margarine in a pot. Add the sugar, corn syrup, and vanilla. Boil for 5 minutes on med heat.
  • Layer the popcorn, candy canes and marshmallows in a large bowl or pot.
  • Pour the sauce over and mix well with a large spoon. It can be hard to stir this sticky goodness but it is worth it! You can add more popcorn till it is the consistency you want.
  • When you are done mixing, pour it onto wax paper and spread it out to cool. You can store it in gallon Ziploc bags.

1 box (6 ounce) candy canes, crushed
1 package Almond Bark
1 teaspoon peppermint extract or a few drops of peppermint oil

  • Place popcorn in a very large bowl - the biggest one you have. Pour crushed candy canes on top of the popcorn. (I crush my candy canes in the food processor - it is quick and it pulverizes the candy canes!) Melt almond bark according to instructions on the package.
