  • For the coating and dough: Combine 1/4 cup sugar and 1/2 teaspoon peppermint extract in a resealable plastic bag and rub together until coated; spread on a baking sheet and let dry 1 hour. Mix the peppermint sugar with 3 tablespoons red sanding sugar in a medium bowl. In a separate bowl, whisk 2 eggs, 3/4 cup ricotta, 3 tablespoons sugar and 1/4 teaspoon peppermint extract. Stir in 1 cup self-rising flour.
  • To fry: Working in batches, deep-fry tablespoonfuls of the dough in 350˚ vegetable oil in a large dutch oven, turning, until golden, about 4 minutes. Remove to a paper towel-lined plate with a slotted spoon and let drain 10 seconds, then toss with the peppermint sugar.

3 cups semisweet chocolate chips
1 can sweetened condensed milk
Red peppermint candies, crushed, for topping

Steps:

  • Line an 8-by-8-inch square baking pan with aluminum foil. Spray the foil with cooking spray.
  • In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk and stir until melted and smooth. Pour into the prepared baking pan and spread to even out the surface. Sprinkle on the crushed candies. Refrigerate for 2 hours.
  • Lift the foil out of the pan and peel off the fudge. Cut into small squares.

1 3/4 cups flour
1 teaspoon baking powder
½ teaspoon salt
1 tbsp sugar
2 tbsp melted butter
⅔ cup milk
Powdered sugar for sprinkling
Oil for frying

Steps:

  • Mix dry ingredients in a large bowl.
  • Add milk and melted butter. Mix with a fork, then transfer to a board and knead with hands for 2 minutes.
  • Form a ball and let the dough rest for 10 minutes.
  • Divide into 8 pieces and roll to 3/8" thick.
  • Heat 1 inch of oil in a deep pan to 375°F (180°C) over medium heat.
  • Carefully lower the rolled dough into the pan - fry the dough in batches, do not overcrowd the pan.
  • Let it cook for 1 minute, then flip over and cook 1 more minute on the other side.
  • Top with powdered sugar and enjoy!

8 ounces pastry scraps
Confectioners' sugar, for sprinkling

Steps:

  • Pour some oil into a heavy-bottomed pot and heat over medium heat until a deep-frying thermometer registers 400 degrees F.
  • Cut the pastry scraps into thin strips. Drop the strips into the hot oil, in batches if necessary, and fry for about 30 seconds, flipping. Drain on a paper towel-lined plate and sprinkle with confectioners' sugar.
