Grilled Tilapia W/ Peach BBQ Sauce image

PEACH BBQ SAUCE:
3/4 cup(s) ketchup
3 tablespoon(s) yellow mustard
1/2 cup(s) olive oil, extra virgin
1/2 cup(s) apple cider vinegar
1/2 teaspoon(s) garlic salt
3 tablespoon(s) worcestershire sauce, low sodium
2 teaspoon(s) paprika
1/4 cup(s) lemon juice
1 teaspoon(s) pepper
3 tablespoon(s) dark brown sugar
3/4 cup(s) water
1 large onion, finely chopped
2 cup(s) peaches, fresh or canned, drained
1/8 cup(s) lime juice
FISH:
4 - tilapia fillets
1 tablespoon(s) garlic powder
1 teaspoon(s) salt
1/2 teaspoon(s) pepper
- rice

Steps:

  • PEACH BBQ SAUCE: Mix all ingredients, except peaches, together in a saucepan & simmer over medium heat for 15 - 20 minutes.
  • While the sauce is simmering, puree 2 C of canned or fresh peaches. Once the sauce is cooked, add pureed peaches to the sauce & stir together.
  • Preheat grill to medium heat.
  • FISH: Season fish with garlic powder, salt & pepper. Cook the fish on each side for 3 - 4 minutes. During last few minutes of cooking, brush fish with bbq sauce.
  • Once cooked & plated, ladle more peach bbq sauce on top of fillets. Serve over rice.
