2 ounces pepper Jack cheese
2 boneless skinless chicken breast halves (4 ounces each)
1 teaspoon taco seasoning
1 tablespoon canola oil

Steps:

  • Cut cheese into two 2-1/4x1x3/4-in. strips. Flatten chicken to 1/4-in. thickness. Place a strip of cheese down the center of each chicken breast half; fold chicken over cheese and secure with toothpicks. Rub Mexican seasoning over chicken., In a large skillet, brown chicken in oil on all sides. Transfer to a greased 8-in. square baking dish. , Bake, uncovered, at 350° for 25-30 minutes or until meat is no longer pink. Discard toothpicks.

2 ounces monterey jack pepper cheese (can also use sliced deli cheese or cheese cubes)
4 boneless skinless chicken tenders or 4 chicken breast halves
1 teaspoon taco seasoning
1 tablespoon vegetable oil

Steps:

  • Cut cheese into two 2-1/4 in x 3/4 in strips.
  • Flatten chicken with a meat mallet.
  • Place a strip of cheese down the center of chicken.
  • Fold chicken over cheese and secure with toothpicks.
  • Rub seasoning over the outside of chicken.
  • In a large skillet brown chicken on both sides.(once the chicken has fried on one side you can remove the toothpick).
  • Transfer chicken to a greased baking dish.
  • Bake uncovered at 350 for 25-30 minutes or until juices run clear.

I was looking for an easy way to grill chicken and still keep it moist. This recipe is what resulted. The first time I fixed it for my husband he spent the next two days at work bragging about what a great cook his wife was. It is a good thing I started with something this simple.

2 boneless skinless chicken breasts
monterey jack pepper cheese
4 slices bacon
spices (we use black pepper and cumin)

Steps:

  • Flatten the chicken breasts.
  • Sprinkle seasonings on both sides (it doesn't take much).
  • Place cheese on chicken.
  • Roll the chicken around the cheese.
  • Secure with toothpicks.
  • Wrap the bacon around the chicken (be sure to cover the ends as well, or your cheese will run out).
  • Place on grill
  • Grill for a total of 9-12 minutes, rotate 3-4 times to equally cook.

This is a modified, kicked-up version of a Monterey Chicken recipe I made one time. Prep and cook times are approximate.

3 slices bacon
2 boneless chicken breasts, halved lengthwise, and sliced to desired thickness
2 tablespoons butter
1 small onion, diced
1/2 red bell pepper, diced
2 garlic cloves, minced
1 jalapeno pepper, chopped (and seeded if desired)
3 tablespoons flour
1 cup chicken broth
1/2 cup milk
1 cup shredded monterey jack pepper cheese
1/4 cup sour cream
1 pinch cayenne
16 ounces penne pasta
3 green onions, tops thinly sliced

Steps:

  • Over medium heat, cook bacon until semi-crisp, reserving drippings.
  • Drain bacon on paper towels and crumble when cool.
  • Sauté sliced chicken in bacon drippings until no longer pink.
  • Remove from pan and set aside.
  • In the same skillet, add the butter and cook onion, peppers and garlic until just tender.
  • Stir in the flour and cook for 1 minute.
  • Add 3/4 cup of the broth, and the milk. Cook and stir until bubbly.
  • Stir in cheese and sour cream; then add the chicken and crumbled bacon to the sauce.
  • Reheat, stirring to melt cheese, but do no allow to boil to avoid separation. If the sauce is too thick, add the remaining 1/4 cup chicken broth and/or a little more milk.
  • Serve over cooked penne pasta and sprinkle with chopped green onions before serving.

2 Boneless skinless chicken breast
4 tablespoons cream cheese
1/4 cup Pepperjack cheese, shredded
2 tablespoons green onion, chopped
4 to 8 pieces of bacon

Steps:

  • Cut chicken into 4 equal size pieces. Pound breast so it is about 1/4" thick. Mix together softened cream cheese, chopped green onions and shredded pepperjack cheese. Put 1/4 of this mixture into the middle of each piece of chicken. Starting at the long side, roll chicken breast up, keeping the cheese mixture to the middle. Wrap 1 to 2 slices of bacon around the chicken breast, secure with toothpick, if needed. One piece of bacon wrapped around each breast is enough. But 2 pieces of bacon for each breast fully wraps the chicken and is outstanding. Place on baking sheet and back for 30 minutes at 375 degrees F. • 4 skinless, boneless chicken breasts (tenderloins removed and saved for another use)
• 3 tablespoons olive oil, plus more for grill pan
• 1 teapsoon lime zest
• 1-1 ½ teaspoons lime juice
• 1 teaspoon salt
• 1 teaspoon dried oregano
• 1 teaspoon ground cumin
• 1 teapsoon paprika
• ½ teaspoon granulated onion
• ½ teaspoon granulated garlic
• ½ teaspoon ground coriander
• Pinch black pepper
• 1 ¼ cup shredded pepper jack cheese
• ½ cup black beans
• ½ cup corn kernels
• ¼ cup sliced roasted red peppers (from jar)
• Pico de Gallo (prepared), for garnish
• Cilantro leaves, for garnish
• Lime slices/wedges, for garnish

  • Preparation: -Place the chicken breasts into a medium-size bowl, and add in all of the ingredients beginning with the olive oil, up to and including the black pepper, and toss to season the meat well; marinate the chicken for at least 20 minutes, or even overnight, if preparing ahead. -Once chicken in marinated, preheat your oven to 350°, and line a baking sheet with foil and top with a wire rack. -Preheat your grill pan over medium-high heat, and drizzle in about 1-2 tablespoons of oil; once hot, add in the chicken breasts (work in a couple of batches, if necessary) and grill them for about 3 minutes per side, or just until golden on the outside (the chicken will not be cooked through at this point, which is fine.) -Once the chicken is cool enough to handle, make a pocket in the thickest part of the breast, taking care not to cut all the way through, but just creating a large enough of pocket to stuff with filling; add a generous ¼ cup of the cheese, then a couple of tablespoons each of the black beans and corn, and then a few slices of the roasted red peppers. -Use a couple of toothpicks to secure the opening, and place the stuffed breasts onto the wire rack, and place into the oven to bake for about 8-10 minutes, or until the chicken is cooked through and the cheese is melty. -Top each stuffed chicken breast with some of the Pico de Gallo, plus a few cilantro leaves, if desired, and a slice/wedge of lime, for garnish.
