1 lb ground beef (at least 90% lean)
2 cups diced bell peppers
1/2 cup diced yellow onion
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
3 cloves garlic, finely chopped
2 cups Progresso™ beef flavored broth (from 32-oz carton)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 tablespoon soy sauce
1 cup uncooked white basmati rice
1 1/2 cups shredded cheddar cheese or cheddar cheese blend (6 oz)

Steps:

  • In 5-quart Dutch oven, cook beef, bell peppers, onion, Italian seasoning, salt and pepper over medium-high heat 8 to 10 minutes, stirring frequently, until beef is brown and vegetables soften.
  • Add garlic. Cook and stir 1 minute longer.
  • Reduce heat to medium; add broth, tomatoes, tomato sauce and soy sauce. Stir until well combined. Heat to boiling.
  • Add uncooked rice. Return to boiling; reduce heat to low. Cover and simmer about 25 minutes or until rice is tender.
  • Remove from heat; stir in 1 cup of the shredded cheese. Sprinkle with remaining 1/2 cup cheese. Cover; let stand 3 to 5 minutes or until cheese melts.

1/2 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
4 small red potatoes, halved
1 medium onion, halved and sliced
1 medium sweet red pepper, cut into 1-inch pieces
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup heavy whipping cream
Minced fresh parsley

Steps:

  • In a small bowl, combine the sausage, potatoes, onion and red pepper. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. Transfer to a greased 1-qt. baking dish. , Cover and bake at 375° for 45 minutes. Stir in cream; cover and bake 10-15 minutes longer or until vegetables are tender and the cream has thickened. Sprinkle with parsley.

6 small green bell peppers, chopped
1 large onion, chopped
2 cloves garlic, chopped

2 (14.5 ounce) cans diced tomatoes
1 cup cooked white rice

2 teaspoons Worcestershire sauce

2 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a large pot over medium heat; cook and stir green bell peppers, onion, and garlic in the hot butter until vegetables are slightly soft, 2 minutes. Stir sausage and ground beef into bell pepper mixture; cook until meat is crumbly and browned, stirring often, 10 to 12 minutes. Drain grease. Season mixture with salt, black pepper, oregano, and garlic powder.
  • Mix diced tomatoes, rice, tomato paste, and Worcestershire sauce into meat mixture and bring to a simmer; cook until heated through, about 5 minutes, stirring occasionally. Pour mixture into a large baking dish.
  • Whisk tomato soup with water in a bowl until smooth; pour soup over meat mixture. Spread Cheddar cheese over casserole.
  • Bake in the preheated oven until casserole is heated through and Cheddar cheese is browned and bubbling, about 30 minutes.

3 1/2 pounds butternut squash
1 large red bell pepper, cut into 1-inch pieces
3 tablespoons olive oil
2 large garlic cloves, minced
3 tablespoons minced fresh parsley leaves
1 1/2 teaspoons minced fresh rosemary leaves
freshly ground black pepper to taste
1/2 cup freshly grated Parmesan (about 2 ounces)

Steps:

  • Preheat oven to 400°F.
  • With a sharp knife cut squash crosswise into 2-inch-thick slices. Working with 1 slice at a time, cut side down, cut away peel and seeds and cut squash into 1-inch cubes (about 9 cups).
  • In a large bowl stir together squash, bell pepper, oil, garlic, herbs, black pepper, and salt to taste. Transfer mixture to a 2- to 2 1/2-quart gratin dish or other shallow baking dish and sprinkle evenly with Parmesan.
  • Bake casserole in middle of oven until squash is tender and top is golden, about 1 hour.

UNSTUFFED GREEN PEPPER CASSEROLE

Found this on About.com under Southern foods. I changed the peppers from being stuffed to lining the casserole dish. Sort of a Lazy Stuffed Peppers. I changed the recipe from stuffed pappers to unstuffed. I love the filling for stuffed peppers and the taste the peppers give the filling but not too keen on chomping on the peppers themselves.

Steps:

  • NOTE:.
  • You can use any combo of the following to suit your tastes = sauce, paste and diced(undrained) tomatoes,.
  • Cut tops off peppers; remove seeds and membranes, and cut each pepper into 4 to 8 pieces.
  • Cook peppers in simmering water to cover for 5 minutes.
  • Brown ground beef and onions; pour off excess grease.
  • Add seasonings, rice, and corn(if used) and tomato sauce.
  • Heat until hot and bubbly.
  • Lay the pepper pieces across the bottom of the casserole dish and pile filling on top.
  • Place cut off tops on top of filling.
  • Add strips of raw bacon on top of that and pour tomato(combo) sauce over.
  • Bake stuffed peppers at 350° for 30 minutes.

2 1 1/4-pound eggplants, thinly sliced crosswise
1 1/2 tablespoons olive oil
1 large onion, chopped
5 large garlic cloves, chopped
1 28-ounce can Italian-style tomatoes
2 large fresh thyme sprigs
olive oil (for frying)
3 pounds russet potatoes, peeled, thinly sliced
3 green bell peppers, cored, thinly sliced
5 tablespoons minced fresh thyme

Steps:

  • Place eggplant slices on 2 baking sheets. Lightly salt eggplant on both sides. Let stand 1 hour. Using paper towels, pat eggplant dry, wiping off salt.
  • Heat 1 1/2 tablespoons oil in large skillet over medium heat. Add onion and garlic, sauté until golden, about 10 minutes. Add tomatoes with their juices and thyme sprigs; bring to boil. Reduce heat and simmer until mixture is reduced to 2 1/2 cups, breaking up tomatoes with back of spoon, about 20 minutes. Season sauce with salt and pepper. Discard thyme sprigs.
  • Preheat oven to 350°F. Add oil to 2 large skillets to depth of 1/4 inch. Heat over medium-high heat. Working in batches, add eggplant to skillets and cook until golden, adding more oil to skillets as necessary, about 5 minutes per side. Transfer to paper towels and drain. Working in batches, add potatoes to skillets, cook until golden, about 3 minutes per side. Transfer potatoes to paper towels. Add green peppers to same skillet; sauté until almost tender, about 5 minutes. Transfer to paper towels.
  • Layer half of eggplant in 15x10x2-inch glass baking dish. Sprinkle with 1 tablespoon thyme. Spoon 1/2 cup sauce over. Top with half of potatoes. Season with salt and pepper. Top with 1 tablespoon thyme. Spoon 1/2 cup sauce over. Place all pepper slices over. Season with salt and pepper. Top with 1 tablespoon thyme. Spoon 1/2 cup sauce over. Top with remaining eggplant. Top with 1 tablespoon thyme. Spoon 1/2 cup sauce over. Top with remaining potatoes. Season with salt and pepper. Top with 1 tablespoon thyme and 1/2 cup sauce.

1 cup shredded mozzarella cheese (4 oz.)

Steps:

  • Heat over to 375 deg. F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. Cut each sausage link into 4 pieces. In 12-inch nonstick skillet, cook sausage over medium heat 10 to 12 minutes, stirring occasionally until brown; drain.
  • In baking dish, mix sausage and remaining ingredients except cheese. Cover baking dish with foil.

8 baby Italian eggplants, sliced lengthwise 1-inch thick
Canola oil
Kosher salt and freshly ground black pepper
4 grilled or roasted red peppers, skin and seeds removed and chopped
3 tablespoons pine nuts
3 cloves garlic
2 teaspoons fresh thyme leaves
1/2 cup olive oil
3/4 cup grated Parmesan
1 pound fresh mozzarella, thinly sliced, weighted for a for a few hours to remove excess liquid
2 tablespoons fresh oregano leaves
1/2 cup extra-virgin olive oil
1/4 cup canola oil
2 cloves garlic, smashed to a paste
1 teaspoon Spanish paprika
Pinch cayenne
6 slices day old Italian bread, crusts removed, coarsely ground in food processor
3 tablespoons finely chopped fresh flat-leaf parsley
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1/2 cup spice rub from Cajun-rubbed spiced turkey

Steps:

  • For the casserole: Heat a charcoal grill to medium-high heat. Brush the eggplant with canola oil on both sides and season with salt and pepper. Grill until lightly golden brown and just cooked through, about 3 minutes per side.
  • Combine the peppers, pine nuts, garlic, and thyme in a food processor and process until coarsely chopped. With the motor running, slowly the cup olive oil and process until emulsified. Add 1/4 cup Parmesan and some salt and pepper and pulse a few times to incorporate.
  • Spoon about 1/2 cup of the pesto over the bottom of a baking dish. Line the dish with the some eggplant slices and then the mozzarella slices. Season with salt and pepper and scatter the oregano leaves over the top. Dollop another 1/2 cup or so of the pesto over, then more eggplant, a bit more pesto and finally the remaining Parmesan. Put on the grill, cover and bake until the cheese is melted and the casserole is hot, about 20 minutes.
  • For the breadcrumbs: Heat the oil in a medium saute pan over medium heat. Add the garlic and cook for 30 seconds. Add the paprika and cayenne and cook for 30 seconds. Add the breadcrumbs and cook, stirring occasionally, until the crumbs are lightly golden brown. Add the parsley and thyme and season with salt and pepper.
  • While the casserole cooks, make the breadcrumbs: Heat the olive oil in a heavy skillet over hot coals or over medium heat. Stir in the breadcrumbs (about 2 cups) and the spice rub and toast, stirring, until the crumbs are golden brown and crisp. Remove from the heat, stir in the parsley, and scatter over the casserole. Let rest 5 minutes before serving.

1 teaspoon coconut aminos, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place cauliflower in a food processor and pulse into grounds the size of rice grains. Transfer to a large casserole dish.
  • Combine beef, onion, and garlic in a skillet over medium heat; cook and stir until meat is browned and onion is tender, about 5 minutes. Add green bell peppers and Italian seasoning; continue cooking until slightly tender, about 2 minutes.
  • Drain excess moisture from the beef mixture. Add tomatoes and beef broth. Simmer until flavors combine, about 5 minutes. Add mixture to the cauliflower in the casserole dish; mix to combine. Shake coconut aminos over the casserole; top evenly with Cheddar cheese.
  • Bake in the preheated oven until sauce is bubbly, about 35 minutes.

1 ½ pounds cauliflower, cut into chunks
2 pounds ground beef
1 (16 ounce) can tomato sauce
3 medium bell peppers, diced
¼ cup shredded Cheddar cheese, or to taste

Steps:

  • Place cauliflower in the bowl of a food processor; pulse until it resembles rice grains. Don't process too much or it will get mushy. Transfer to a dry skillet and heat over low heat to cook out any moisture.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes.
  • Add riced cauliflower, tomato sauce, and bell peppers to the meat; mix to combine. Transfer mixture to a casserole dish and sprinkle with Cheddar cheese.
  • Bake in the preheated oven until golden brown, 45 minutes to 1 hour.

3 pounds ground beef
5 small onions, chopped
3 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 tablespoon paprika
3 medium green peppers, chopped
1 can (16 ounces) peas, drained
1 can (8 ounces) mushroom stems and pieces, drained
1 jar (4 ounces) pimientos, drained
Salt and pepper to taste
1 package (16 ounces) medium pasta shells
Grated Parmesan cheese

Steps:

  • In a Dutch oven, cook beef and onions over medium heat until meat is no longer pink; drain. Add soup and paprika. Cover and simmer for 1 hour. , Stir in the green peppers, peas, mushrooms, pimientos, salt and pepper. Cover and simmer for 15 minutes or until peppers are tender. , Meanwhile, cook macaroni according to package directions; drain. Place in a large serving bowl; top with meat mixture. Sprinkle with Parmesan cheese.

1 (30-ounce) bag Ore-Ida Shredded Hash Brown Potatoes, thawed completely
1 (14-ounce) bag broccoli florets, thawed completely
1/2 pound good quality deli ham, chopped small
1/2 large red pepper, chopped small
1/2 large onion, chopped small
1 clove of garlic, minced
2 cups Pepper Jack cheese, shredded, divided
2 cups Sharp Cheddar cheese, shredded, divided
2 tablespoons butter
12 eggs
1 1/4 cup 2 % fat or higher milk
1 1/4 cups sour cream
1 tablespoon dried parsley
1 1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat your oven to 350°F. Sauté the red pepper, onion and garlic in 2 tablespoons of butter until softened about 5 minutes. Set aside. In an extra large mixing bowl, combine the potatoes, ham and 1 1/2 cups of each of the cheeses. Evenly spread half of the potato mixture into a lightly greased 10-x15-inch (4 quart) baking dish. If you do not have a casserole dish that large, you may divide it into two separate dishes. Top the potato layer with the broccoli and then the red pepper mixture. Cover the vegetables with the remaining potato mixture. In the same mixing bowl, whisk together the eggs, milk, sour cream and salt and pepper. Pour the egg mixture evenly over the casserole. Sprinkle with dried parsley and top with the remaining cheese (1 cup total). Bake covered loosely for 30 minutes, then uncover and bake an additional 15 to 20 minutes or until the egg is set and does not appear to be runny. Remove from the oven and let cool for 10 minutes before serving. May be served hot or at warm at about room temperature. Store any left over casserole in the refrigerator. Note: Cooking time will vary depending on the size and shape casserole dish you use. I love to use a pretty round dish for special occasions, but it makes the casserole thicker, requiring at least 20 more minutes of cooking time, so use your judgement. If you are making this ahead of time, prepare the casserole, cover and store in the refrigerator up to 24 hours until you are ready to bake it.

2 large red bell peppers
1 tablespoon olive oil
3 garlic cloves, chopped
3 tablespoons chopped fresh parsley
coarse salt

Steps:

  • Preheat oven to 400°F.
  • Cut squash into 1-inch cubes if too large.
  • In a large bowl, toss together squash, bell pepper, olive oil, garlic, parsley, black pepper, and salt to taste. Pour into a 2 quart flat baking dish. Sprinkle parmesan evenly over the top.
  • Bake squash approximately 50 minutes until tender.
  • *Can use cooking spray instead of olive oil. Can use 1 green and 1 red pepper if desired.
