1 package (12 ounces) whole wheat penne pasta
1-1/2 pounds boneless skinless chicken breasts, cut into 1/4-in.-thick strips
3 tablespoons olive oil, divided
3/4 teaspoon salt, divided
1/4 teaspoon pepper
3 garlic cloves, minced
1/2 cup reduced-sodium chicken broth
1/2 cup dry white wine or additional broth
6 plum tomatoes, chopped
2 cups fresh baby spinach
3/4 cup crumbled feta cheese

Steps:

  • In a 6-qt. stockpot, cook pasta according to package directions. Drain; return to pot., Meanwhile, toss chicken with 2 tablespoons oil, 1/2 teaspoon salt and pepper. In a large skillet, cook and stir chicken, half at a time, over medium-high heat 3-5 minutes or until no longer pink; remove from pan., In same skillet, heat remaining oil over medium heat. Add garlic; cook and stir 1-2 minutes or until tender. Add broth and wine. Bring to a boil, stirring to loosen browned bits from pan; cook 2 minutes. Stir in tomatoes and remaining salt; cook until tomatoes are softened. Stir in spinach until wilted., Add chicken and tomato mixture to pasta; heat through, tossing to combine. Serve with cheese.

Mediterranean-inspired salad served warm. Also delicious cold. Don't add salt - the feta, olives and capers provide plenty. A short sturdy pasta works best such as bowties, shells, elbows.

2 tablespoons olive oil
1 tablespoon balsamic vinegar
3 garlic cloves, sliced
5 -6 cups pasta, hot cooked
2 cups spinach, raw chopped
1/2 cup kalamata olive, pitted (sliced if desired)
2 tablespoons capers, rinsed
3/4 cup feta cheese, crumbled
1/4 teaspoon pepper

Steps:

  • In a large bowl, whisk olive oil, vinegar and garlic.
  • Add remaining ingredients and toss to mix. The spinach will wilt from the hot pasta.
  • Season with pepper to taste.
  • Garnish with more cheese crumbles if desired. Though it's delicious refrigerator cold, I think it tastes best when served warm.

VINAIGRETTE:
1/2 cup olive oil
1/2 cup white wine vinegar
1/3 cup grated Parmesan cheese
1 tablespoon Dijon mustard
2 garlic cloves, minced
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
SALAD:
1 package (6 ounces) fresh baby spinach
3 medium tomatoes, seeded and chopped
3/4 cup (6 ounces) crumbled feta cheese
4 green onions, thinly sliced
1/2 cup sliced ripe or Greek olives

Steps:

  • In a Dutch oven, cook pasta according to package directions. Drain and rinse in cold water; drain again., Meanwhile, in a small bowl, whisk the vinaigrette ingredients. In a large bowl, combine the pasta, spinach, tomatoes, feta cheese, onions and olives. Add vinaigrette; toss to coat. Serve immediately.

I developed this recipe after having something similar at an Italian restaurant. My husband loves it! The pine nuts really add a special element of flavor. Adjust the amount of feta cheese to your own tastes; I happen to like a lot in this dish.

1 lb penne pasta
3 tablespoons olive oil
3 cloves fresh garlic, minced
8 ounces crumbled feta cheese
3/4 cup shredded parmesan cheese (not grated)
5 cups fresh Baby Spinach
1/3 cup pine nuts

Steps:

  • Cook penne pasta according to package directions.
  • As pasta is cooking, toast pine nuts lightly in a small skillet over medium-low heat, stirring frequently and keeping a close eye on them to prevent burning.
  • Remove pine nuts from heat when lightly browned, after about 1-2 minutes.
  • Set aside pine nuts.
  • Drain cooked pasta and set aside.
  • Heat olive oil in a large, deep skillet or wok.
  • Add garlic and saute over medium heat for about 30 seconds, being careful not to let garlic brown.
  • Stir in cooked pasta.
  • Stir in feta and Parmesan cheese and cook for a 2-3 minutes, until feta cheese just starts to melt and pasta and cheese is thoroughly heated through.
  • Stir in spinach and continue to heat until spinach barely starts to wilt.
  • Take pasta off heat and stir in the toasted pine nuts.
  • Transfer to serving dish and serve.

2 tablespoons olive oil
½ cup chopped onion
1 clove garlic, minced

2 cups spinach leaves, packed

1 pinch red pepper flakes
8 ounces feta cheese, crumbled

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.

My favorite recipe category: few ingredients, outstanding results! Delightful, healthful, quick and easy to prepare. I strongly recommend that you use only kalamata olives in this recipe. Otherwise I used 9 ounces bagged spinach, 6 ounces pasta myself, but published the recipe as written. From a cookbook called "The Best in the World" by Physicians Committee for Responsible Medicine. This particular recipe came from Au Bar (renamed Je Me Souviens) in Palm Beach, Florida.

1 tablespoon olive oil
1 medium onion, chopped
1 (14 1/2 ounce) can tomatoes, diced
1/2 cup kalamata olive, pitted, sliced
1 lb fresh spinach, coarsely chopped
1 tablespoon fresh parsley, chopped
8 ounces penne pasta
salt and pepper, to taste
1/4 cup parmesan cheese (optional)

Steps:

  • Heat oil in large, non-stick skillet. Add onion and saute over medium heat for 3 minutes.
  • Add chopped tomatoes, bring to a boil and reduce heat. Cover and simmer to 20 minutes.
  • Add sliced olives, chopped spinach and parsley. Cook an additional 5 minutes.
  • Meanwhile, cook pasta according to package directions. Drain and transfer to a serving bowl. Add spinach mixture and toss gently. Add salt and pepper, to taste. Serve immediately with parmesan on the side.
  • For Vegan do not use the parmesan cheese.

1 (16 ounce) package penne pasta
1 ½ tablespoons butter
½ cup chopped red onion
2 cloves garlic, minced
1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
1 (14 ounce) can artichoke hearts in water
1 tomato, chopped
½ cup crumbled feta cheese
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1 teaspoon dried oregano
salt to taste
ground black pepper to taste

Steps:

  • In a large pot with boiling salted water cook penne pasta until al dente. Drain.
  • Meanwhile, in a large skillet over medium-high heat melt butter, add onion and garlic and cook for 2 minutes. Add chopped chicken and continue cooking, stirring occasionally until golden brown, about 5 to 6 minutes.
  • Reduce heat to medium- low. Drain and chop artichoke hearts and add them, chopped tomato, feta cheese, fresh parsley, lemon juice, dried oregano, and drained penne pasta to the large skillet. Cook until heated through, about 2 to 3 minutes.
  • Season with salt and ground black pepper. Serve warm.
