Tortellini alla panna, or "tortellini with cream", is an incredibly simple pasta recipe that is the epitome of comfort food! This easy dinner, featuring prosciutto and peas, will be on the table in less than 30 minutes.

19 oz frozen tortellini (or refrigerated)
1 tbsp unsalted butter
3 cloves garlic, (minced or pressed)
1 cup heavy cream
Light grating of nutmeg, (to taste)
Ground black pepper, (to taste)
2 tsp fresh basil, (diced (more if you like))
2 tsp fresh parsley, (diced (more if you like))
1/2 cup freshly grated Parmesan (or Pecorino Romano)
1/3 cup frozen peas
1 oz sliced prosciutto, (cut into bite-sized pieces)

Steps:

  • Bring a large pot of water on the stovetop to a boil. While it heats, add butter to a large skillet set over low-medium heat. Once the butter is melted, add minced garlic and saute for 1 minute.
  • Once the garlic is sauted, pour in the cream and add the nutmeg, pepper, basil, and parsley. Stir frequently as the cream heats and begins to thicken. Adjust the temperature as needed so the mixture doesn't reach a boil or bubble too much.
  • Once the pot of water is boiling, add the frozen tortellini and cook for 3 minutes, or according to package directions. Add the frozen peas to the pot with the pasta after 2 minutes, so when there's 1 minute remaining of cook time. Once cooked, drain the water and return the tortellini and peas to the pot.
  • Add the grated Parmesan to the skillet with sauce in two increments, stirring well after each addition so it melts. Once the cheese has melted and the sauce has thickened to your liking, add the cooked tortellini and peas, as well as the sliced prosciutto, and stir to coat. Serve immediately.

This is a very tasty and quick pasta meal. I got the recipe years ago when I was still at school and went home with one of my friends to have dinner at her house. Her family traveled to Tuscany every year and this was their version of a pasta dish they had eaten there. Serve with a side salad and some crusty bread. You can use any type of pasta really if you haven't got penne pasta, it's really nice with tortellini as well.

400 g penne pasta, cooked
250 -400 ml cream
200 g cooked ham or 200 g prosciutto, finely sliced and cut into small pieces
1/2-1 teaspoon cayenne pepper
1/2-3/4 cup parmesan cheese
1 1/2 tablespoons vodka (optional)
1 teaspoon olive oil

Steps:

  • Heat the oil in a skillet.
  • On a high heat, quickly fry the ham or prosciutto until starting to brown, keep stirring it continuously to stop it from burning.
  • Turn down to a low heat or if cooking on an electric hob turn it off, pour in 250 ml of cream.
  • Add the cayenne pepper and stir in the parmesan.
  • If the sauce seems really thick add some more cream, the pasta shouldn't be dry, but neither should it swim in sauce.
  • Stir in the pasta and serve straight away.

1 pound penne pasta
½ pound cooked small shrimp
½ cup chopped prosciutto
2 teaspoons olive oil, or to taste
2 (5 ounce) skinless, boneless chicken breast halves
1 pinch salt and ground black pepper to taste
3 tablespoons butter
2 tablespoons minced garlic
3 tablespoons Marsala wine
2 cups heavy cream
1 cup grated Parmesan cheese
½ cup milk
½ cup chicken broth
1 tablespoon cornstarch
1 tablespoon brown mustard
2 teaspoons minced fresh rosemary
½ teaspoon minced fresh thyme
½ teaspoon salt
¼ teaspoon cayenne pepper
3 tablespoons grated Parmesan cheese
1 ½ teaspoons paprika

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and transfer to a large bowl; mix in shrimp and prosciutto.
  • Preheat an outdoor grill for high heat and lightly oil the grate. Brush olive oil over chicken breasts and season with salt and pepper. Grill until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), about 5 minutes per side. Cool briefly before slicing into strips. Add to the penne mixture.
  • Preheat the oven to 500 degrees F (260 degrees C).
  • Prepare the sauce by melting butter over medium-low heat. Add garlic, cover, and cook until softened but not browned, about 5 minutes. Pour in Marsala wine and cook for 5 minutes. Stir in heavy cream, Parmesan cheese, milk, chicken broth, cornstarch, mustard, rosemary, thyme, salt, and cayenne pepper. Bring sauce to a simmer and cook, stirring occasionally, until flavors combine, about 10 minutes.
  • Pour sauce over the penne mixture and mix well. Transfer to a 9x13-inch baking dish. Sprinkle Parmesan cheese and paprika over the top.
  • Bake in the preheated oven until the top slightly browns, 10 to 12 minutes.

4 boneless skinless chicken breasts (1 1/2 lbs)
1/4 cup flour, for dredging
1 egg
1/2 cup seasoned bread crumbs
1 small onion, chopped
4 ounces mixed mushrooms, sliced
1/2 cup chicken broth
kosher salt & freshly ground black pepper
1/2 ounce butter
1/4 cup brandy or 1/4 cup dry sherry
2 teaspoons flour
1/4 cup chicken broth
2 tablespoons heavy cream

Steps:

  • Heat oil in a skillet over medium high heat. Prepare an assembly line for breading your chicken by placing the flour, a beaten egg, and the bread crumbs on 3 separate shallow dishes.
  • Dredge chicken in flour, then dip both sides into the egg, then coat with bread crumbs.
  • Place breaded chicken in skillet and brown both sides, about 5 minutes total; remove from skillet and set aside.
  • Add onions and mushrooms to skillet, and cook, while stirring, until onions begin to soften, about 5 minutes.

1 pound salmon filet, skinned and cubed into bite-size pieces (500 g)
1 tablespoon olive oil
Salt and pepper
1 onion, peeled, halved and thinly sliced
2 tablespoons olive oil
2 packages (14 ounces) cream cheese (400 g)
7 ounces grano padano, grated (200 g)
7 ounces butter (200 g)
1 cup (8 ounces) milk (250 mL)
1 cup young peas, frozen
1 tablespoon fresh or frozen parsley, chopped
Salt and pepper
1 pound durum wheat semolina penne, the best you can find (500 g)

Steps:

  • In a large stock pot, bring salted water to a boil, but don't add the pasta until the sauce is done. In a large frying pan, saute cubed salmon in 1 tablespoon olive oil over medium heat until cooked through (but do not overcook). Season with salt and pepper and set aside. Either in the same frying pan or in another large one, heat 2 tablespoons olive oil and saute onion over medium heat until wilted and transparent. Add cream cheese, grano padano, butter and milk. Occasionally stir until ingredients are well blended together. Add sauted salmon, peas and parsley. Remove from heat, cover and set aside. Add penne to boiling water and cook according to package instructions. In a large serving bowl, toss the pasta and sauce together, then serve immediately. NOTE: You might not use all the sauce. The remainder of the sauce can be stored in the refrigerator for several days in an air tight container. When reheating, add a bit of milk to make it creamy again.
