CHOCOLATE PECAN DROPS

When my son was in fourth grade they had to cook something and then they made a cookbook out of it. He is now 34 years old. This is what another child brought and we made it and its pretty good.

5 c frosted flakes
1 c salted pecan pieces
12 oz peanut butter chips
6 oz chocolate chips

Steps:

  • 1. In a bowl stir cereal and pecans.Mix well. Place peanut butter and chocolate morcels in a small bowl to microwave. Heat on high for 2 minutes, stirring halfway through cooking. After cooking, stir morcels until smooth.Pour over cerael and pecans. Mix well. Drop by rounded tablespoons onto cookie sheet lined with wax paper. Chill until set, approximately 15 minutes. Store at room tempature.

These drops are essentially pecan pralines without the heavy cream and butter. The nuts are suspended in caramel, then sprinkled with flaky sea salt.

Vegetable oil cooking spray
3/4 cup sugar
1/4 cup light corn syrup
1/2 cup coarsely chopped pecans
Large-flake sea salt, preferably Maldon

Steps:

  • Coat 16 cups of two 12-cup mini muffin tins with cooking spray. Bring sugar and corn syrup to a boil in a medium saucepan, stirring and brushing down sides with a wet pastry brush to prevent sugar crystals from forming, until sugar dissolves. Cook, swirling occasionally, until mixture just starts to turn golden around edge.
  • Stir in pecans. Cook, stirring occasionally, until mixture is pale amber, about 8 minutes. Working quickly, spoon caramel into muffin cups (about 1 tablespoon each), and immediately sprinkle with salt. Let cool completely. Remove from tins. (You may need to bang the tins to release.)

2 1/2 cups sifted flour
10 tablespoons shortening
1 cup sifted powdered sugar
2 teaspoons vanilla

  • Preheat over to 325.
  • Mix together all ingredients.
  • Drop by teaspoonful on ungreased cookie sheets.
  • Bake 15-20 minutes until delicate brown color.
  • If you like dust lightly with powdered sugar when cool.

My family looks forward to Christmas each year because that's the only time I make this candy. For a chocolate treat, I like to use chocolate kisses in place of the vanilla chips.

5 cups sugar
1 can (12 ounces) evaporated milk
1/2 cup butter, cubed
2 packages (10 to 12 ounces each) vanilla or white chips
1 jar (7 ounces) marshmallow creme
3 teaspoons vanilla extract
6 cups chopped pecans

Steps:

  • In a large heavy saucepan, bring the sugar, milk and butter to a boil over medium-low heat, stirring constantly. Boil and stir for 8 minutes. Add the remaining ingredients; stir until combined. Cool for 10 minutes., Quickly from by tablespoonfuls onto waxed paper-lined baking sheets. If mixture becomes too thick, reheat slightly. Refrigerate for 20 minutes or until firm. Store in an airtight container in the refrigerator.

The cherry center gives a festive look to my nutty cookies. They're easy to make and take to holiday gatherings.

2 cups ground pecans
1/2 cup all-purpose flour
1-1/4 cups sugar, divided
4 egg whites
1/2 teaspoon vanilla extract
5 to 6 maraschino cherries, coarsely chopped

Steps:

  • In a large bowl, combine pecans, flour and 1 cup sugar; set aside. In a small bowl, beat egg whites until foamy. Gradually add remaining sugar, beating until stiff peaks form. Fold in vanilla and half of the flour mixture. Fold in remaining flour mixture. Drop by rounded teaspoonfuls 2 in. apart onto ungreased foil-lined baking sheets. Top each with a cherry piece. Bake at 325° for 20-25 minutes or until edges are lightly browned. Cool completely before removing from pans.

1 cup butter, softened
2 cups sugar
2 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon each ground cinnamon, nutmeg, allspice and cloves
1/2 teaspoon salt
2 cups chopped pecans

Steps:

  • In a large bowl, combine butter and sugar. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, spices and salt; gradually add to the creamed mixture and mix well. Stir in pecans. , Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 12-14 minutes or until edges are firm. Remove to wire racks to cool.

1 cup chopped dates
1/3 cup chopped maraschino cherry, well drained
1 1/2 cups coarsely crushed corn flakes cereal
15 maraschino cherries, quartered, drained

Steps:

  • Heat oven to 375 degrees.
  • Grease cookies sheets.
  • In large bowl, combine sugar, shortening, milk, vanilla, and eggs; beat well.
  • Stir in flour, baking powder, baking soda, salt, pecans, dates, and 1/3 cup chopped cherries; mix well.

1 (18-ounce) package German chocolate cake mix with pudding
1/2 cup vegetable oil
2 eggs large, beaten
6 ounces semi-sweet chocolate chips (1 cup)
1 cup pecans pieces
48 pecans halves

Steps:

  • 1. Heat oven to 375°. Have baking sheets ready.2. To make topping, mix chopped pecans, sugar, and hot water.3. To make cookies, place cake mix in a large bowl and press out any lumps with the back of a spoon. By hand, beat in oil and eggs. Stir in chocolate chips and pecan pieces. Drop by rounded tablespoonfuls about 2 inches apart onto baking sheets. Flatten each cookie lightly with the back of a spoon. Sprinkle 1 teaspoon of the topping over each cookie. These classic thumbprint cookies are so easy to make. Just roll balls of dough in chopped pecans, bake and fill with jam for a delicious treat.

Yield Makes 3 dozen or 36 servings, 1 cookie each.

Number Of Ingredients 7

3/4 cup sugar
1/2 cup (1 stick) margarine or butter, softened
1/4 cup cholesterol-free egg product
1 tsp. vanilla
2 cups flour
2/3 cup finely chopped pecans
3 Tbsp. raspberry jam, jelly or preserves

Steps:

  • Beat sugar and margarine in small bowl with electric mixer on medium speed until light and fluffy. Add egg product and vanilla; beat 1 minute. Add flour; mix well. Cover and refrigerate 1 hour.
  • Preheat oven to 350°F. Shape dough into 36 balls, each about 1-1/4 inches in diameter; roll in pecans, pressing into dough. Place, 2 inches apart, on greased baking sheets. Indent center of each ball with thumb or back of wooden spoon. Bake 10 minutes; remove from oven.
  • Spoon 1/4 tsp. jam into each cookie indentation. Bake an additional 2 to 5 minutes or until lightly browned. Remove to wire racks. Cool completely. Store in tightly covered container at room temperature.

1/2 c +2 tablespoons shortening
1 c powdered sugar
2 1/4 c flour
2 tsp vanilla

Steps:

  • 1. Preheat oven to 325. Cream margarine and shortening together until smooth.
  • 2. Gradually beat in sugar. Stir in flour. Add vanilla and pecans. Mix well.
  • 3. Drop by spoonfuls onto ungreased cookie sheet. Bake 15-20 minutes or until light brown. Makes 4 dozen.

CHOCOLATE-PECAN DROPS

Number Of Ingredients 18

1 cup butter, softened
2 cups sugar
1 (8-ounce) package premelted unsweetened baking chocolate, divided
2/3 cup milk
2 teaspoons vanilla extract
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup chopped pecans
Garnish: red decorating sugar
Frosting:
2 cups powdered sugar
2 tablespoons hot water
1 teaspoon almond extract
1/2 teaspoon anise extract
red food coloring
1/2 teaspoon peppermint extract
green food coloring

Steps:

  • With an electric mixer on medium speed, blend together butter and sugar. Add 4 pouches chocolate, reserving remaining pouches for another recipe, milk and vanilla; blend well. In a separate bowl, whisk together flour, baking powder and salt. Add to chocolate mixture; stir in nuts. Cover dough and chill 2 to 3 hours. Drop dough by rounded teaspoonfuls onto an ungreased baking sheet. Bake at 375 degrees for 7 minutes. Let cool on baking sheet 2 minutes; transfer to wire racks. Spread cookies with desired frosting and sprinkle with red sugar. For Frosting: Combine powdered sugar, hot water and almond extract in a medium bowl. Divide frosting between 2 bowls. To one bowl add anise extract and desired amount of red food coloring; stir well to blend. To the second bowl, stir in peppermint extract and desired amount of green food coloring; stir to blend thoroughly.
