CREAMED PARMESAN PEARL ONION CASSEROLE

Number Of Ingredients 11

2 jar(s) 15-oz. whole pearl onions (*such as aunt nellie's holland style-- don t use pickled onions!)
1/3 c butter
1/3 c all purpose flour
2 c cream or half 'n half
1 -2 Tbsp dry sherry (optional-- not necessary!!!)
1/3 c freshly grated parmesan cheese
1/2 tsp dry mustard powder
pinch nutmeg
salt and pepper to taste
1/2 c grated cheddar cheese
paprika

Steps:

  • 1. Open jar and drain onions. Preheat oven to 350 Deg. F.
  • 2. Melt butter in a 2-quart sauce or saute pan over medium heat. Turn heat to low and stir in the flour. Cook for 2-3 minutes, stirring constantly (you must cook a little to avoid a "raw flour" flavor). Stir in Cream (or Half N Half) and sherry. stir to blend.
  • 3. Stir in Parmesan, mustard powder, nutmeg and salt and pepper to taste. Stir well to thoroughly combine ingredients and melt cheese.
  • 4. Grease a small oven baking dish (or spray with nonstick cooking spray). Put drained onions into baking dish, then cover thoroughly with white sauce mixture. Sprinkle with cheddar cheese over top, then sprinkle on Paprika over top.
  • 5. Bake at 350 deg. F. for 35-40 minutes, until mixture is bubbly and hot. If desired, broil the top briefly until golden brown.
  • 6. Note: You can make this one day ahead and partially bake. Then finish baking for 10-15 minutes on the day you will be serving it.

2 cups pearl onions
2 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 cloves garlic, minced
1 shallot, chopped
2 bay leaves
3 cups assorted mushrooms (such as oyster, cremini and shiitake), trimmed and sliced

2 tablespoons fresh thyme
Freshly ground pepper
3 tablespoons all-purpose flour
3 cups whole milk
Vegetable oil, for frying
4 shallots, thinly sliced
All-purpose flour, for coating
Kosher salt

Steps:

  • Prepare the casserole: Preheat the oven to 350 degrees F. Bring a large pot of salted water to a boil. Add the green beans and pearl onions and cook until the beans are bright green, 2 to 3 minutes. Drain the vegetables, then plunge into an ice bath to stop the cooking. Drain, then remove the skins from the pearl onions.
  • Combine the olive oil and butter in a large skillet over medium heat. Add the garlic and shallot and cook, stirring, until the shallot is caramelized, about 5 minutes. Add the bay leaves, then the mushrooms. Stir to combine, then add the thyme and season with salt and pepper. Sprinkle the mixture with the flour to tighten it up. Add the milk and boil 3 minutes to thicken; remove the bay leaves.
  • Place the green beans and pearl onions in a 3-quart casserole dish. Pour the "mushroom soup" over the vegetables and toss to make sure they are well coated. Transfer to the oven and bake 30 minutes.
  • Make the topping: Heat about 2 inches of vegetable oil in a large pot or Dutch oven until a deep-fry thermometer registers 360 degrees F. Toss the shallots in a bowl with enough flour to lightly coat. Working in batches, fry the shallots until golden brown and crisp, about 3 minutes. Using a slotted spoon, remove to paper towels to drain; season lightly with salt. Scatter over the casserole before serving.

Bring to a boil; cook and stir until thickened, 1-2 minutes. Reduce heat; stir in cream cheese until blended. Add to vegetables; stir gently to coat. 3/4 cup dry white wine

Steps:

  • Sprinkle chicken breasts with 1/4 teaspoons of salt and 1/4 tsp of pepper and sauté chicken in 1 tablespoons olive oil until browned on both sides, about 5 minutes.
  • Set chicken aside, and keep warm.
  • Add remaining 1 tablespoons of olive oil to pan and cook onions and garlic 3 to 4 minutes until onions are brown.
  • Add mushrooms and cook until softened, about 4 minutes.
  • Add wine and cook until most of the liquid is absorbed.

1 (3- to 3 1/2-pound) chicken, excess fat removed and legs tied
1 tablespoon olive oil
4 tablespoons unsalted butter (2 tablespoons cold, 2 tablespoons softened)
1 lemon, halved
1 ounce small dried morel mushrooms
1 cup warm water
1 pound medium green asparagus, peeled and trimmed
Kosher salt to taste
1/4 cup dry white wine

Steps:

  • Preheat oven to 425°F.
  • Blanch onions in boiling salted water 1 minute. Drain in a colander and rinse under cold running water to stop cooking. Trim root ends and peel.
  • Pat chicken dry. Coat a 17- by 12-inch flameproof roasting pan with oil and put chicken in pan. Rub 2 tablespoons softened butter into skin over entire chicken. Season chicken inside and out with salt and pepper. Put 1 lemon half in cavity and squeeze remaining half over chicken.
  • Roast chicken in middle of oven 20 minutes. Baste chicken, then continue to roast, basting about every 7 minutes, 20 minutes more. Scatter onions around chicken and continue to roast, turning onions and basting every 7 to 8 minutes, until chicken is golden and a thermometer inserted into fleshy part of a thigh registers 170°F (juices will run clear), 25 to 35 minutes more.
  • Once chicken begins roasting, soak morels in warm water 20 minutes. Lift mushrooms out of water, squeezing excess liquid back into bowl, and reserve liquid. Rinse morels thoroughly to remove grit and squeeze dry. Trim any tough stems.
  • Pour reserved soaking liquid through a sieve lined with several layers of cheesecloth or a paper towel into a small bowl.
  • Cut asparagus diagonally into 2-inch lengths. Arrange on a steamer rack and sprinkle with kosher salt. Steam asparagus, covered, over boiling water until crisp-tender, about 5 minutes, then transfer to a bowl of ice water to stop cooking.
  • Transfer roast chicken to a platter, then discard string and cover chicken loosely with foil. Transfer onions and pan juices to 2 separate small bowls (do not clean roasting pan). Skim and discard fat from juices.
  • Set roasting pan over a burner. Add wine and deglaze by boiling over high heat, stirring and scraping up brown bits, until reduced to about 2 tablespoons. Add pan juices from bowl, any juices that have accumulated on platter (from chicken), mushroom-soaking liquid, and morels, then boil until liquid is reduced to about 1/3 cup.
  • Cut remaining 2 tablespoons butter into pieces and add to morels with onions and asparagus. Cook over moderately high heat, shaking pan, until butter is just incorporated and vegetables are glazed. Season vegetables with salt and pepper and spoon around chicken.

1/4 cup dried currents
3 tbs. madiera**
1 tsp.red wine vinegar
2 cups cranberries
*or frozen pearl onions
**I have also substituted wine, cognac and a really great dark rum.

  • combine first 5 ingredients in heavy saucepan over med-high heat. cook til syrupy, about 12 mins. use frozen onions or blanch fresh onions in boiling water for 4 mins.drain, rinse under cold water and peel. melt butter in large skillet on med-high heat.saute onions until starting to brown, 6-12 mins. add salt, 1 tsp. sugar and currents and stir 2 mins. add madiera and vinegar, stir 1 min. add sugar sauce and 1 cup cranberries, cook 5 mins. add rest of cranberries, cook 5 more mins. discard cinnimin, cover and chill. let stand 20 mins. before searving.

2 cups apple juice
1 cup sugar
2 tablespoons cider vinegar
6 cloves
1 teaspoon coriander seeds
2 quinces, peeled, cored, and cut into 1/2-inch cubes
1 (12-ounce) bag fresh or frozen cranberries (not thawed if frozen)

Steps:

  • Trim root end of each onion and cut an X in it. Blanch in boiling water 1 minute, then drain in a colander. Cool slightly, then peel.
  • Bring juice, sugar, vinegar, and spices to a boil in a 3-quart heavy saucepan, stirring until sugar has dissolved. Add onions and quinces and simmer, uncovered, stirring occasionally, until tender but not falling apart, about 30 minutes.
  • Add cranberries and simmer until tender but not falling apart, 5 to 8 minutes. Discard cloves. Transfer fruit and onions to a bowl using a slotted spoon, then boil syrup, if necessary, until reduced to 1/2 cup. Pour syrup over compote and cool to room temperature.

2 Tbsp unsalted butter
2 Tbsp flour
1-1/4 c hood's light cream
pinch salt and pepper, to taste
pinch ground mustard
dash(es) ground nutmeg
1-1/2 c good quality shredded, sharp white cheddar cheese
6 Tbsp melted butter
1-1/4 c italian style fine breadcrumbs
1 Tbsp fresh thyme, chopped

Steps:

  • 1. Heat oven to 350. In a medium sized pot, melt 2 Tbsp butter over low heat. Whisk in the flour until smooth. Slowly whisk in the light cream. Increase heat to medium and cook & stir until thickened. Add salt & pepper to taste.
  • 2. Add mustard and nutmeg. Add 1 cup of the cheese. Cook, stirring until cheese is melted. Stir in onions. Spoon into a 1 quart casserole dish.Sprinkle the top w/ remaining cheese.

1 lb fresh green beans
2 cups white pearl onions
2 tablespoons olive oil
2 tablespoons butter
2 garlic cloves, minced
1 shallot, chopped

3 cups assorted wild mushrooms, sliced (oyster, cremini, shiitake, or any other type of mushroom)
salt and pepper
2 tablespoons fresh thyme leaves
2 tablespoons flour
3 cups milk
1 (6 ounce) can French fried onion rings

Steps:

  • Blanch the green beans and pearl onions by placing them into a large pot of rapidly boiling water. Cook them for 2 minutes, until the green beans brighten in color.
  • Remove the vegetables from the boiling water, then plunge in ice water to stop the cooking process.
  • Drain them, then remove the skins from the onions and set aside.
  • Coat a skillet with olive oil and butter. Over medium heat, cook the shallot and garlic down until caramelized. Add bay leaves, then the mushrooms; stir to combine. Season with salt, pepper, and thyme and then sprinkle the mixture with flour.

2 cups canned low-salt chicken broth
2 cups canned beef broth
8 cups diced peeled turnips (from about 6 large)
3 tablespoons butter
1/4 cup all purpose flour
1 teaspoon dried thyme
1/2 cup whipping cream
2 cups grated Gruyère cheese (about 8 ounces)

Steps:

  • Boil onions in large saucepan of boiling salted water 3 minutes to loosen skin. Drain. Peel onions.
  • Bring chicken and beef broths to boil in large pot. Add turnips; reduce heat to medium, cover, and simmer until just tender, about 10 minutes. Drain, reserving 3 cups broth. Melt butter in same pot over medium-low heat. Add flour and thyme; stir 1 minute. Whisk 3 cups broth into pan, increase heat to medium-high and whisk until sauce thickens slightly, about 2 minutes. Add onions, reduce heat to medium, and simmer until tender, about 12 minutes. Stir in cream and turnips. Simmer until vegetables are coated with sauce, about 2 minutes. Season to taste with salt and pepper. (Can be made 1 day ahead. Cool slightly, cover and refrigerate in pan. Rewarm over low heat.)

3/4 stick (6 tablespoons) unsalted butter
1/2 cup chicken broth
2 large celery ribs, sliced 1/2 inch thick
2 large shallots, coarsely chopped (1/2 cup)
1 sprig fresh thyme
3 tablespoons dry white wine

Steps:

  • Blanch onions in a large saucepan of boiling water 3 minutes, then drain and transfer to a bowl of ice and cold water. Drain onions and peel.
  • Cook chestnuts in 3 tablespoons butter in a large saucepan over moderately low heat, stirring occasionally, 2 minutes. Add broth and celery and cook at a bare simmer, stirring occasionally, until liquid is reduced to about 1/4 cup, about 10 minutes.
  • While chestnuts are cooking, heat remaining 3 tablespoons butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté shallots and peeled onions with thyme and salt and pepper to taste, stirring, until onions are tender and golden brown in patches. Add wine and simmer until slightly reduced, about 2 minutes.
  • Gently stir onion mixture into chestnut mixture and season with salt and pepper.

1 spaghetti squash, about 3 pounds
1 pound pearl onions
2 tablespoons olive oil
1 tablespoon butter, plus more for tossing the squash
1 teaspoon sugar
1 parsnip, peeled and finely diced
1 carrot, peeled and finely diced
1/2 teaspoon chopped fresh thyme leaves
1 teaspoon chopped fresh sage leaves
Salt to taste
Freshly ground black pepper to taste
1 large clove garlic, minced
1 pound oyster mushrooms, stems removed
4 teaspoons tomato paste diluted with 1/4 cup water or red wine
2 tablespoons mushroom soy sauce or regular soy sauce
1/2 cup mushroom or vegetable stock, or water
2 tablespoons chopped parsley

Steps:

  • Preheat the oven to 375 degrees. Using a fork, pierce the squash in several places and place it in a roasting pan. Bake for 40 minutes, turn and bake for an additional 15 to 30 minutes, until the squash is tender when pressed with a finger. Turn the oven off and leave the squash there until needed.
  • Meanwhile, bring a small pot 2/3-filled with water to a boil. Cut a sliver off the root end of each of the onions and boil them for 1 minute. Drain and plunge them into a bowl of cold water. When cool, peel the onions and cut the larger ones in half.
  • Heat 1 tablespoon of the oil and 1 tablespoon of the butter in a large skillet over medium heat. Add the onions, toss to coat and sprinkle with sugar. Cook, shaking the pan occasionally, until the onions color, about 10 minutes. Add the parsnip, carrot, thyme and sage, season with salt and pepper and continue to cook until the onions are caramelized, about 10 minutes.
  • Transfer the vegetables to a bowl, add the remaining tablespoon of oil to the skillet and return it to the heat. Add the garlic and the mushrooms to the skillet and cook, stirring, until the mushrooms begin to brown, about 5 minutes. Return the vegetables to the pan and add the diluted tomato paste and the soy sauce. Continue to cook until the mushrooms are tender, then add the stock and cook for 1 more minute. Turn off the heat and cover the pan.
  • Cut the cooked squash in half lengthwise and scoop out the seeds. With a fork, comb to separate the squash strands and toss them with butter and salt and pepper to taste, and lift out of the shell. Divide the squash among 4 dinner plates, spoon the vegetables around the squash, garnish with parsley and serve.

1/8 teaspoon chipolte sauce (Recommended: Tabasco)
1 cup all-purpose flour
1/4 cup cornmeal
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon granulated garlic
1/2 teaspoon dill weed
1/2 teaspoon celery seed
1/2 teaspoon cayenne pepper
1 cup sour cream
1 tablespoon chili sauce (recommended: Srirachi)
2 strips smoked bacon, small dice
3 clove garlic, minced
2 cups milk
2 cups heavy cream
1/4 cup whole butter
1 cup grits
Salt and pepper

Steps:

  • Wild Georgia Shrimp and Crab Cake:
  • Place 1 tablespoon oil on a heated saute pan, add green peppers and garlic, cook for 30 seconds stirring constantly. Add shrimp and cook for 1 to 2 minutes until shrimp is pink. Drain excess liquid and place cooked shrimp, peppers and garlic in a medium mixing bowl. Add crabmeat, mayonnaise, mustard, lemon juice, egg and blackening spice to the mixing bowl and combine. Gradually add breadcrumbs until bound together. Form shrimp mixture into 2-ounce cakes. Saute cakes in 2 tablespoons of hot oil for 2 to 3 minutes on each side over medium heat.
  • Pearl Onion Marmalade:
  • Place all ingredients in saucepan and cook over medium heat until thick.
  • Fried Shrimp Marinade:
  • Combine all ingredients together and marinate for 30 minutes.
  • Fried Shrimp Breading:
  • Combine all ingredients together and mix. Remove shrimp from egg mixture and dredge in seasoned flour mix. Deep fry in 350 degree F hot oil for 30 to 45 seconds.
  • Chili Sour Cream:
  • Combine ingredients together and place in plastic squirt bottle.
  • Bacon and Garlic Grits:
  • Render bacon in saucepot until crispy. Add garlic to pot and saute for 20 to 30 seconds.
  • Add milk, cream and butter, bring to boil. Add grits and stir. Turn heat to medium and cook for 10 minutes, stirring often. If grits become too thick, add milk to thin it out. Season, to taste, with salt and pepper.

4 Bartlett pears, peeled, cored, and cut into 1/4-inch dice
Juice of 2 lemons
2 1/2 cups dried cherries
1 pound red pearl onions, roots trimmed, peeled, and cut in half lengthwise
1 1/2 cups red-wine vinegar
1 cup sugar
1 teaspoon coarse salt
1/4 teaspoon ground cloves

Steps:

  • In a large bowl, toss pears with lemon juice.
  • Place cherries, pearl onions, half of the pears, the vinegar, sugar, salt, cloves, and 2 cups water in a low-sided, 6-quart saucepan. Set the saucepan over high heat, and bring liquid to a boil.
  • Reduce heat to medium low, and simmer until fruit is tender, about 45 minutes.
  • Increase heat to high; cook until liquid has been absorbed, about 10 minutes. Stir in remaining pears, and reduce heat to low; cook just until pears are heated through, about 5 minutes. Remove pan from heat.
  • Transfer to a large bowl set over an ice bath to chill; store in airtight container, refrigerated, for up to 4 weeks.

1 c. + 1 tsp. firmly packed brown sugar
1 c. water
2 cinnamon sticks
2 Tbls. chopped fresh ginger
1 tsp. grated lemon peel
1 10-ounce basket pearl onions (or use frozen)
2 1/2 Tbls. unsalted butter
1/8 tsp. salt
1/4 c. dried currents
3 Tbls. Madeira wine (or whatever red wine you have around)
1 tsp. red wine vinegar
2 c. fresh cranberries

Steps:

  • Combine 1 cup sugar, water, cinnamon, ginger, and lemon peel in heavy medium saucepan over medium-high heat. Cook until liquids become syrupy, stirring occasionally, about 10 minutes. Set aside. If using fresh onions, blanch in medium pot of boiling water 4 minutes. Drain and rinse under cold water. Peel onions. Omit this step if using frozen onions. Melt butter in heavy large skillet over medium-high heat. Add onions and saute until beginning to brown, about 6 minutes. Mix in salt and remaining 1 tsp. sugar. Add currents and stir 2 minutes. Add Madeira and vinegar and stir 1 minute longer. Add sugar mixture and 1 cup cranberries and cook 5 minutes, stirring often. Mix in 1 cup cranberries; cook until thickened, stirring often, about 5 minutes. Discard cinnamon. Cover and chill. Let stand 30 minutes before serving.

Steps:

  • Heat oven to 350 Cheese Sauce: Heat milk, flour, 1/4 c. butter, salt & pepper in 2 qt pan, stirring constantly. Boil & stir 1 minute, stir in shredded cheese until melted, stir in sour cream. In 3 qt pan, boil water and add broccoli. Cook for 5 min until crisp tender, drain well. In same water, boil onions about 2 minutes, drain & peel. Mix broccoli & onions in 2 qt baking dish & top with cheese sauce. Topping: In medium bowl, mix melted 1/4 c. butter & bread crumbs. Top. Bake uncovered 15-20 min until hot & bubbly.

8 oz sturdy green like kale, turnip greens or mustard greens
1 lb turnips, peeled and cubed
1 c frozen pearl onions
3 Tbsp butter
3 Tbsp all purpose flour
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp ground nutmeg
2 c half-and-half or light cream
1/2 c shredded white cheddar cheese (2 oz.)
1 1/2 c soft bread crumbs (about 2 slices)
2 Tbsp butter, melted

Steps:

  • 1. Remove stems and any bruised leaves from the greens. Wash thoroughly in cold water; drain well. Chop the leaves into rough, wide ribbons (should have about 6 cups packed greens).
  • 2. In a Dutch oven, cook the greens, covered, in salted boiling water for 4 minutes. Add the turnips; cook for 6 to 8 minutes longer or until the greens are tender but still bright-colored and turnips are tender. Add the pearl onions; return to a boil just to thaw the onions. Drain well in a colander; set aside.
  • 3. In a large saucepan melt the 3 Tbsp. butter. Stir in the flour, salt, pepper, and nutmeg. Add half-and-half all at once. Cook and stir over medium heat until thickened and bubbly. Remove from heat. Add shredded cheese, stirring until melted. Gently stir in the cooked greens mixture, then transfer to a 2-quart baking dish.
  • 4. In a small bowl stir together the bread crumbs and the 2 Tbsp. melted butter. Sprinkle over the turnip mixture. Bake in a preheated 375-degree oven for 20 minutes or until bubbly and crumbs are golden brown.

1 lb fresh green beans
2 cups pearl onions
2 tablespoons olive oil
2 tablespoons butter
2 garlic cloves, minced
1 shallot, chopped
2 bay leaves
3 cups assorted wild mushrooms, sliced (such as oyster, cremini and shiitake)
salt and pepper, to taste
2 tablespoons fresh thyme leaves
2 tablespoons flour
3 cups milk
1 (3 ounce) can fried onions

Steps:

  • Blanch the green beans and pearl onions by placing them into a large pot of rapidly boiling water.
  • Cook them for about 2 minutes, until the green beans have brightened in color.
  • Remove the vegetables from the boiling water with a strainer then plunge into an ice bath to stop the cooking process.
  • Drain them, then remove the skins from the onions and set aside.
  • Coat a skillet with olive oil and butter over medium heat.
  • Sweat the garlic and shallot down until they caramelize.
  • Add the bay leaves then the assorted mushrooms.
  • Stir to combine, season with salt, pepper and thyme.
  • Sprinkle the mixture with flour to tighten up.
  • Add the milk and boil for 3 minutes to thicken.
  • Place the green beans and pearl onions in a 2-quart casserole dish.
  • Pour the "mushroom soup" over the vegetables.
  • Toss to make sure the vegetables are well coated.
  • Bake in a preheated 350 degree oven for 30 minutes.
  • Top with fried onions and continue to bake for 10 minutes.

24 pearl onions
1 cup water
3 teaspoons salt
3 cups sliced fresh mushrooms
10 tablespoons butter, divided
2 teaspoons lemon juice
1/4 cup all-purpose flour
2 cups whole milk
1 cup shredded cheddar cheese
1/2 cup soft bread crumbs

Steps:

  • In a small saucepan, combine the onions, water and salt. Cover and cook for 20 minutes or until crisp-tender; drain. Transfer to two greased 1-qt. baking pans; set aside. , In a large skillet, saute mushrooms in 4 tablespoons butter and lemon juice until tender. In a small saucepan, melt 4 tablespoons butter; stir in flour until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir into mushroom mixture. Pour over onions. , Melt remaining butter. Add cheese and bread crumbs; toss to coat. Sprinkle over each casserole. , Cover and freeze one casserole for up to 3 months. Cover and bake the second casserole at 375° for 15 minutes. Uncover; bake 10 minutes longer or until golden brown. , To use frozen casserole: Thaw in the refrigerator for 8 hours. Bake as directed.
