ARUGULA SALAD WITH PROSCIUTTO, BLUE CHEESE, AND PEAR
This is a simple but elegant salad when plated correctly.

Steps:
- Coarsely chop chives and put in a food processor. Add olive oil and purée for 1 minute. Transfer to a squeeze bottle dispenser and set aside.
- Evenly distribute arugula onto 4 medium plates. Top with prosciutto and blue cheese.
- Peel and core pears, then cut in half. Cut each half into thin slices and add to plates in a fan shape.
- Drizzle chive olive oil over each salad and decoratively add some to the sides of the plates. Repeat with balsamic glaze.

Steps:
- In small dishes, place egg whites and bread crumbs.
- In a large skillet over medium high heat, melt butter.
- Dip goat cheese slices first in the egg whites, second in the bread crumbs.
- Cook coated goat cheese in the hot butter until just golden, around 30 seconds for each side.
- Remove and set aside.
- In a small bowl whisk together all the ingredients from orange juice to the pepper.
- On each of 4 salad plates, arrange 3 lettuce leaves.
- Place 2 pear fans on each plate.
- Place/tuck 3 slices of Prosciutto on each plate.
- Center the goat cheese rounds, dividing evenly.
- Drizzle with vinaigrette and sprinkle with walnuts.
- Serve.
SMOKED TURKEY AND PEAR SALAD WITH POMEGRANATE VINAIGRETTE AND PROSCIUTTO CROUTONS
Steps:
- In a small bowl, whisk together pomegranate juice, olive oil, red wine vinegar, and salad dressing mix; set aside.
- Separate prosciutto slices, tear or chop into 1/2-inch pieces.
- In a medium frying pan, heat olive oil over medium-high heat, add prosciutto pieces and brown on all sides (approximately 3 to 4 minutes); set aside on paper towels.
- In a large bowl, add arugula and salad dressing. Toss to combine and place on a platter.
- Top with rolled up turkey slices, pear slices and crumbled goat cheese. Garnish with glazed nuts and prosciutto "croutons".
HARICOTS VERTS AND PEAR SALAD WITH HAZELNUTS AND PROSCIUTTO
Steps:
- Trim the ends of the haricots verts. Bring a large pot of salted water to a boil over high heat. Cook the beans until crisp-tender, 2 to 4 minutes, then drain and transfer to ice water to preserve the color. Drain again and pat dry. Cut in half crosswise. Place in a large mixing bowl.
- For the vinaigrette: Put the vinegar, shallot, and mustard in a small bowl and whisk to blend. Gradually whisk in the oils. Season with salt and pepper.
- Trim the core and any dark green outer leaves and leaf tips from the frisée. Tear the pale yellow center leaves into bite-size pieces. Slice the endives on a slight diagonal into 1-inch pieces. Separate into individual layers and discard the core. Add the frisée, endive, arugula, and hazelnuts to the bowl with the beans.
- Cut the pear in half, remove the core and slice thinly lengthwise. Add to the bowl. Toss with enough of the vinaigrette to coat the salad lightly; you may not need it all.
- If the prosciutto slices are large, tear in half. Make a loose ring of prosciutto on each plate, then mound a handful of salad in the center of the ring. Serve immediately.
- Enjoy with Cakebread Cellars Chardonnay Reserve or another full-bodied white wine.
PROSCIUTTO, PEAR AND FENNEL SALAD

- Combine pear and vinegar in medium bowl. Add fennel, walnuts, oil and fennel fronds. Season with salt and pepper and toss to blend.
- Cross 2 prosciutto slices on each of 4 plates, forming an X. Spoon pear mixture onto center of prosciutto slices, dividing equally.

- Cut pears in half and core them.
- Peel one pear half, chop into cubes and place in a blender with the vinegar, mustard, salt and pepper. Puree until smooth. With the blender running add the olive oil; set aside.
- Cut remaining (unpeeled) pear halves into thin slices and place into a large bowl with the spinach.
- Pour the dressing over the top and gently toss.
- Place greens and pears onto each plate.
- Top each with 1/4 of the prosciutto, candied pecans and serve.

MESCLUN, ARUGULA AND FENNEL SALAD WITH PROSCIUTTO AND PEAR VINAIGRETTE

- Directions: In a small bowl, stir together the pear nectar and vinegar. Season with salt and pepper. Set the dressing aside. Cut off the stems and feathery tops and any bruised outer stalks from the fennel bulb. Cut the fennel bulb in half lengthwise and cut away and discard the core. Slice crosswise paper-thin. Set aside. In a bowl, combine the mesclun and arugula. Add half of the dressing and toss well. Divide the greens evenly among individual plates. Top the greens with the fennel, prosciutto and figs and drizzle with the remaining dressing. Using a cheese plane or a vegetable peeler, shave thin slices from the cheese and sprinkle over the salads. Season with pepper and serve. Serves 4 Adapted from

Pour in oil and blend, then set aside. 2). Cut remaining (unpeeled) pear halves into 1/2" wedges and place in a bowl with the spinach. Pour the dressing over top and sprinkle with remaining salt. Toss. Place 1 1/2 cups of greens and pears onto each plate. Top each with 1/4 of the prosciutto and 2 tbs walnuts. Peel 5 strips of cheese over each plate, then serve.
