3/4 cup creamy peanut butter
1/4 cup rice vinegar
1/3 cup reduced sodium tamari or reduced-sodium soy sauce
3 tablespoons honey
1 1/2 teaspoons grated fresh ginger or 1/2 teaspoon ground ginger
1 to 2 medium cloves garlic, pressed or minced, to taste
1/4 teaspoon red pepper flakes, plus more for sprinkling
2 to 4 tablespoons water or coconut milk, or as necessary to reach your desired consistency
Optional garnishes: sprinkling of chopped roasted peanuts and additional red pepper flakes

Steps:

  • In a 2-cup liquid measuring cup or medium-sized mixing bowl, whisk together the ingredients until well blended. If your peanut butter is particularly thick, you may need to use the full 4 tablespoons of water to thin out the mixture (or more, if necessary).
  • Feel free to adjust to taste here-for example, sometimes I want my sauce more savory and add another clove of garlic, or a little sweeter, so I add extra honey.
  • If you're serving the sauce as a party dip, transfer it to a serving bowl and sprinkle with chopped peanuts and red pepper flakes for some visual interest!

2 cloves garlic, minced
2 tablespoons brown sugar
1 tablespoon fish sauce
2 teaspoons soy sauce
2 teaspoons toasted sesame oil
½ lime, juiced
1 teaspoon chile-garlic sauce (such as Sriracha), or to taste
1 (5.6 ounce) can coconut milk
2 teaspoons chopped red bell pepper, or to taste
2 teaspoons chopped fresh cilantro, or to taste
2 teaspoons chopped peanuts, or to taste

Steps:

  • Place peanut butter in a mixing bowl. Whisk garlic, brown sugar, fish sauce, soy sauce, and sesame oil into peanut butter, followed by lime juice and chile-garlic sauce.
  • Bring coconut milk to a simmer in a small saucepan over medium heat; pour over into peanut butter mixture. Whisk until smooth.

1/4 teaspoon cayenne (optional)
1/4 teaspoon ground ginger
1 banana, very ripe and mashed
1 cup low-sodium tomato juice
1/2 cup apple juice
1/2 cup unhomogenized unsweetened peanut butter

Steps:

  • In saute pan, cook onions until tender.
  • Add cayenne, ginger, mashed banana, and saute, stirring frequently.
  • After five minutes, add the juices.

3 tablespoons chunky peanut butter
1 teaspoon minced fresh gingerroot
1 -2 garlic clove, minced
2 scallions, minced
1/3 cup vegetable stock
3 tablespoons soy sauce or 3 tablespoons tamari
2 tablespoons rice vinegar
2 -3 tablespoons honey
3 tablespoons minced fresh cilantro
1 teaspoon thai hot sauce (I use the one with the rooster on the bottle)
vegetables, for dipping (optional)
noodles, of your choice
fresh cilantro (to (to garnish) (optional)

Steps:

  • Combine peanut butter, ginger root, garlic, scallions, stock, soy sauce or tamari, vinegar, honey, cilantro and hot sauce in a mixing bowl and whisk until smooth.
  • Check the seasoning and add more soy sauce, vinegar or honey according to your taste. The sauce should be a little sweet, sour and salty.
  • Serve it with veggies for dipping or toss it with noodles and garnish with LOTS (we like lots) of freshly chopped cilantro.

The intro to this recipe says, "Serve this delicious and extremely versatile sauce with steamed vegetables or spring rolls, or toss with hot or cold cooked noodles." For a natural sweetener I use agave nectar although any other natural sweetener is fine if not using refined sugar. My husband and I are always in need of a peanut dipping sauce for his awesome homemade rice paper spring rolls. I haven't yet found a store-bought sauce that I'd buy again.

1 tablespoon garlic, minced
1/4 cup tamari (your preferred soy sauce is fine)
1/4 cup water, plus additional as needed

1 teaspoon sugar or 1 teaspoon agave nectar
2 tablespoons fresh cilantro leaves, finely chopped

Steps:

1/4 cup water
2 tablespoons tomato paste
1 teaspoon Asian chili sauce (optional)
2 teaspoons peanut oil or 2 teaspoons vegetable oil
2 medium garlic cloves, minced
1 teaspoon red pepper flakes, adjust to taste

Steps:

  • Whisk peanut butter, hoisin sauce, water, tomato paste, and chili sauce, if using, in small bowl.
  • Heat oil, garlic, and red pepper flakes in small saucepan over medium heat until fragrant, 1 to 2 minutes.
  • Stir in peanut butter mixture; bring to simmer, then reduce heat to medium-low and cook, stirring occasionally, until flavors blend, about 3 minutes. (Sauce should have ketchup-like consistency. To thin, add water, 1 teaspoon at a time, until proper consistency is reached.).
  • Transfer to bowl; cool to room temperature.
  • The sauce can be refrigerated in an airtight container for up to 3 days. Serve at room temperature.
