PEANUT 'N PINEAPPLE-CRUSTED COD

Steps:
- Preheat oven to 350°F. Combine peanuts, pineapple and jalapenos; set aside.
- Line 15x10x1-inch baking pan with foil; spray foil with cooking spray. Place fish on prepared baking pan. Spread evenly with mayo; spoon 1/4 cup of the peanut mixture over each fish fillet, pressing peanut mixture into fish to secure.
- Bake 20 min. or until fish flakes easily with fork. Sprinkle with cilantro.

How to make Peanut-Crusted Cod

Steps:
- In a small bowl, combine flour and cayenne pepper. Spread flour mixture on a plate. Spread peanuts on a separate plate. Season filets with salt and pepper on both sides. Dredge one filet through flour and shake off excess. Dip floured filet into egg whites. Press one side of the filet into chopped peanuts. Coat a large nonstick skillet with cooking spray. Melt margarine over medium heat. Place filets peanut side down in skillet and cook for about 3 minutes on each side.
