PEANUT BUTTER CHICKEN CURRY

1 large chicken , jointed, or 1.5kg bone-in chicken pieces
6 garlic cloves , 2 finely chopped, 4 left whole
3 lemongrass stalks, bashed and roughly chopped
thumb-sized piece of ginger , peeled and finely chopped
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp ground turmeric
2 limes , juiced
2 red chillies , 1 roughly chopped and 1 sliced to serve (optional)
1 small onion , roughly chopped
2 tbsp vegetable oil
100g smooth peanut butter
4 tbsp kecap manis , or 3 tbsp soy sauce mixed with 1 tbsp light brown soft sugar
400g can coconut milk
a few spring onions , chopped
small handful of coriander , chopped
small handful of roasted peanuts , roughly chopped (optional)

Steps:

  • Put the chicken, chopped garlic, a third of the lemongrass and half the ginger, spices and lime juice in a large bowl. Toss, then cover and leave for 30 mins, or chill for up to 24 hrs. Blitz the whole garlic, the rest of the lemongrass and ginger, remaining spices, chopped chilli, onion and a large splash of water to in a food processor. Set aside.
  • Heat the oil in a pan and brown the chicken all over. Set aside on a plate. Cook the paste for 8-10 mins until it splits. Stir in the peanut butter and kecap manis. When thickened, add the coconut milk and half a can of water, bring to a simmer, season, then add the chicken with its juices. Continue to simmer for 40 mins, stirring often. Turn off the heat, add the rest of the lime juice and season. Leave to rest for 10 mins. Scatter over the sliced chilli, spring onions, fresh coriander and peanuts to serve.

2 tablespoons canola oil
1 1/2 pounds chicken breast, cut in 1-inch pieces
Salt and pepper
8 ounces frozen cut green beans, thawed (recommended: C&W)
8 ounces frozen pepper strips, thawed (recommended: C&W)
1 1/2 cups light coconut milk
1/2 cup low-sodium chicken broth
1 tablespoon red curry paste
1/3 cup chunky peanut butter
2 tablespoons brown sugar
2 tablespoons lime juice, plus wedges for garnishing
Coconut Rice, recipe follows
Cilantro sprigs for garnishing
3/4 cup light coconut milk (recommended: A Taste of Thai)
1 cup low-sodium chicken broth
1/2 lime, juiced
2 cups instant rice
1/4 cup shredded sweetened coconut, toasted

Steps:

  • Heat oil in a large frying pan over medium-high heat. Add cut up chicken, season and saute until cooked through stirring occasionally, about 5 minutes. Add green beans and pepper strips and continue cooking for 3 minutes.
  • While chicken cooks, start the peanut curry sauce. In a medium mixing bowl, whisk together all ingredients for the sauce. Pour sauce into a frying pan over the chicken and vegetables, stir to combine. Turn heat up to high and bring to boil, stirring occasionally. Reduce heat and simmer until sauce thickens slightly, about 6 to 8 minutes. Serve over Coconut Rice or plain steamed rice.
  • In a medium saucepan, combine coconut milk, chicken broth, lime juice, and instant rice. Bring to a boil over medium-high heat. Remove from heat and cover for 7 to 9 minutes. Fluff rice with fork and stir in toasted coconut. Serve.

1 tablespoon soy sauce
1 1/2 teaspoon curry powder
3/4 teaspoon ground coriander seeds
2 teaspoons cornstarch
1 whole skinless boneless chicken breast (about 3/4 pound)
3/4 cup salted dry-roasted peanuts, ground fine in a food processor
1 teaspoon fresh lime juice
1/8 teaspoon dried hot red pepper flakes, or to taste
ten 8-inch bamboo skewers, soaked in water 30 minutes
1 teaspoon minced fresh coriander sprigs

Steps:

  • In a small bowl stir together coconut milk, soy sauce, curry powder, and ground coriander until combined well. Transfer 1/2 cup coconut mixture to a medium bowl and stir in cornstarch, reserving remaining coconut mixture, covered and chilled.
  • Cut chicken lengthwise into ten 1/2-inch-thick strips and add to cornstarch mixture, stirring to coat. Marinate chicken, covered and chilled, at least 1 hour and up to 24.
  • Prepare grill.
  • In a small saucepan stir together reserved coconut mixture, peanuts, lime juice, and red pepper flakes and simmer, stirring occasionally, 10 minutes, or until thickened. Transfer dipping sauce to a small bowl and cool.
  • Thread 1 piece chicken onto each skewer and grill on a oiled rack set 5 to 6 inches over glowing coals until cooked through, about 3 minutes on each side.
  • Sprinkle dipping sauce with fresh coriander and serve at room temperature with chicken satés.

4 cloves garlic, minced
30 leaves Thai basil, thinly sliced
1 medium onion, diced
1 pound skinless, boneless chicken breasts, thinly sliced

1 cup sliced bamboo shoots, drained
3 teaspoons red curry paste
1 (14 ounce) can coconut milk, divided

Steps:

  • Heat 1 tablespoon sesame oil in a large frying pan over medium heat. Add garlic and 1/3 of the basil. Saute until garlic is fragrant, about 30 seconds. Add onion and cook until transparent, 5 to 7 minutes.
  • Add chicken to the pan with remaining sesame oil and season with chile powder. Add mushrooms and bamboo shoots. Cook until the chicken is only slightly pink in the center and the mushrooms have started to lose their moisture, 4 to 5 minutes. Add curry paste and mix well.
  • Pour in 1/2 of the coconut milk. Stir until vegetables and chicken are evenly coated. Add peanut butter and curry powder and mix thoroughly. Cook over medium heat until the sauce thickens, stirring often to keep the sauce from burning to the bottom of the pan, 10 to 15 minutes.
  • Reduce heat to low and add remaining coconut milk and brown sugar. Continue to simmer over low heat until desired consistency is reached, 10 to 15 minutes more, tasting and adding more peanut butter if needed.

6 boneless skinless chicken breast halves, about 5 ounces each
Salt and freshly ground black pepper
1 to 2 tablespoons fresh lime juice
2 teaspoons curry powder
2 teaspoons turmeric powder

Olive oil, as needed to loosen
1 (14-ounce) can coconut milk
3 tablespoons peanut butter
1 lime, juiced
2 tablespoons brown sugar

Steps:

  • For the chicken: Heat a stove-top grill pan or griddle with cooking spray to medium-high heat. Season both sides of chicken with salt and black pepper and set aside. In a small bowl, combine lime juice, curry powder, turmeric, cumin and olive oil, as needed to loosen mixture. Mix well with a spoon and brush mixture all over both sides of chicken. Place chicken on hot pan and cook 3 to 5 minutes per side, or until cooked through. Remove from heat and place on plate.
  • For the dipping sauce: While the chicken is cooking, in a small saucepan, combine coconut milk, peanut butter, lime juice, and sugar. Set pan over medium heat and bring to a simmer, about 5 minutes. Remove from heat.
  • Serve 4 of the chicken breast halves with all of the peanut sauce. Reserve remaining chicken for Pastilla, if desired.

2 chicken quarters (can use breasts)
2 tablespoons olive oil
1/2 medium onion
2 garlic cloves
2 tablespoons flour
3 cups chicken broth or 3 cups stock
1 tablespoon curry powder

Steps:

  • Remove skin from chicken. Brown chicken in olive oil in a large skillet on medium heat, then remove & set aside. Add onion & garlic to skillet adding curry powder & red pepper flakes & lightly saute' until onion begins to soften. Add flour & stir constantly for 3 - 4 minutes to make a light roux. Lower heat to medium low (about 2 on the dial), then add chicken broth, stirring thoroughly to remove lumps (can use a wisk). Add chicken back to skillet, & cover. Cook for appx. 30 minutes, stirring occassionally & flipping chicken, until chicken is nearly done. Add peanut butter. Mix together & cook for another 10 minutes on low - med. low, stirring occasionally, until chicken is cooked through (no red juices when pierced). Serve over Egg Noodles.
  • Notes:.
  • Can debone chicken after it's cooked & add back to sauce before serving.
  • If the sauce gets too thick during cooking, add a little more chicken stock or broth.

1 lb boneless chicken thighs
2 carrots, sliced
2 celery ribs, sliced
1/2 cup shallot, chopped

3 cups chicken stock
1/2 cup smooth peanut butter
1 cup coconut milk
2 tablespoons cornstarch
1 1/2 cups medium grain rice, cooked according to package directions
2 teaspoons saffron
1/2 lb snow peas, trimmed
1/4 cup peanuts, ground

Steps:

  • In a large stockpot or Dutch oven, heat 2 tablespoons of the oil and cook all sides of the chicken pieces until lightly browned. Remove chicken from pot and season with salt and pepper.
  • Add 1 tablespoon of oil. Add carrots and celery and cook until softened.
  • Add shallots, ginger and garlic and cook until shallots soften.
  • Add curry powder, stir for 15 seconds and pour in the stock.
  • Return chicken to the pot. Add water to barely cover the chicken. Heat to a boil and then reduce heat and simmer uncovered until chicken is fully cooked (no pink). Internal chicken should be approximately 170°F.
  • Prepare rice according to package instructions. Half way through rice preparation, add the saffron.
  • Stir in peanut butter. Whisk coconut milk and cornstarch in a separate bowl. Add to pot and bring to a simmer.
  • In a sauté pan, heat the remaining tablespoon of oil. Add snow peas and toss for one minute. Add 2 tablespoons of water and cook until crispy.
  • To serve, place chicken on top of rice and spoon with sauce. Place snow peas on top and garnish with the peanuts.

1 tablespoon fresh garlic, chopped

1/4 cup rice vinegar (not "seasoned" vinegar, which has sugar)
2 tablespoons soy sauce
2 tablespoons Splenda or sugar
1 teaspoon red Thai Curry Paste
3 tablespoons homemade chicken stock or canned chicken broth

2 tablespoons peanut oil
1 cup unsweetened lite coconut milk
4 tablespoons cilantro, finely chopped, plus more for garnish

Steps:

  • Trim chicken breasts so they are about the same size and remove any visible fat or ragged edges. Put each chicken breast inside plastic bag or between plastic wrap and use a meat mallet to pound to even 1/2 inch thickness. Finely mince the ginger and garlic. In food processor or immersion blender canister combine ginger, garlic, peanut butter, rice vinegar, soy sauce, Splenda or sugar, curry paste, and chicken stock. Taste to see if you want to add more red curry paste. Heat the oil in heavy, large frying pan. Season chicken with black pepper, then add chicken to pan and sauté over medium heat about until chicken breasts are nicely browned and cooked through, about 4 minutes on first side, and 2 to 3 minutes more on second side. It's important not to overcook the chicken; it should feel barely firm to the touch when you take it out of the pan. Remove chicken to plate and cover with foil. Reduce heat to low and add 1 cup coconut milk. (You can freeze the other 3/4 cup coconut milk for another time.) Scrape off browned bits from the bottom of the pan, then stir in peanut/curry/ginger paste mixture and heat through, about 2 to 3 minutes. Add any juices that have accumulated on the pate and cook another minute or two. Turn off heat and mix in chopped cilantro. SPICY THAI PEANUT CHICKEN CURRY

Steps:

  • For Chicken Marinade: Whisk together soy sauce, oil, ginger, garlic and black pepper in a medium shallow baking dish. Add the chicken breast and turn to coat. Cover and marinate in the refrigerator for at least 4 hours. Heat a large grill pan over high heat until smoking. Remove chicken from marinade and season with salt to taste. Grill for 4 to 5 minutes on each side until just cooked through. Let rest 5 minutes, slice each breast on the bias into 6 slices.
  • For the Red Curry Peanut Sauce: Heat peanut oil in a medium saucepan over high heat. Add the curry paste and saute for 3 to 4 minutes. Add the soy sauce, coconut milk and lime juice and bring to a simmer. Whisk in the peanut butter and cook for 5 minutes. Season with salt and pepper to taste.
  • For the Peanut Relish: Combine all ingredients in a small bowl and season with salt and pepper.
  • To Assemble: Preheat oven to 375 degrees F. Lay tortillas out on a flat surface. Divide both of the cheeses among the tortillas. Top the cheese with 3 slices of the chicken, some of the red onion and cilantro. Fold the tortillas over to form a half moon and brush the tops with peanut oil. Place on a lightly oiled baking sheet and bake for 5 to 7 minutes, until the cheese melts. Serve 2 on a plate, drizzle with the red curry-peanut sauce and sprinkle with peanut relish and cilantro.

EASY CHICKEN SATAY PEANUT CURRY

2 (15 ounce) cans coconut milk
2 tablespoons red curry paste
1/4 cup creamy peanut butter
4 teaspoons sugar
4 teaspoons fish sauce (or soy sauce if you prefer)
4 chicken breasts (tofu also works well)
1 tablespoon minced garlic
1 onion, chopped
cornstarch
salt

Steps:

  • In a medium sauce pan heat coconut milk, curry paste, peanut butter, sugar, and fish sauce until they come to a very small boil.
  • Set aside and cool adding cornstarch to thicken.
  • While the sauce is cooling, stir fry 1 chopped onion and 1 T minced garlic.
  • Cut up chicken into small pieces and stir fry with the onion and garlic until chicken is cooked through.
  • Combine the garlic, onion and chicken with the sauce and heat.

1 tablespoon of red pepper flakes (or use optional Thai chillis)
1 tablespoon of Thai curry paste (or curry powder)

  • Combine sauce ingredients in a bowl In a wok, heat peanut oil Brown chicken breasts, remove from heat Saute shallots, red peppers, optional chili peppers Return chicken to bowl, add sauce mixture Increase heat until sauce starts to bubble and thicken Reduce heat to simmer, cook covered about 15-20 minutes If using basil, add near the end Season with salt and pepper as desired (the soya sauce already contains sodium)

3 cups uncooked brown rice, steamed separately

Steps:

  • Combine orange juice, coconut, peanut butter, curry powder water and cayenne in blender or food processor. Blend until fairly smooth consistency is achieved (usually about 15-30 seconds).
  • Lightly spray bottom of 9x13 pan with cooking spray and arrange chicken pieces and bell pepper slices.
  • Pour sauce blend over all.
  • Bake at 375 degrees for 40-50 minute Be sure chicken is cooked thoroughly as ovens may vary.
  • Serve over steamed rice.
  • Special note: the sauce blend can be used with other dishes as well!

I decided to not follow any specific recipe from any particular country or culture, but instead I made a simple composite of every peanut curry I've ever come across. I didn't use coconut milk, as I feel that's a little too sweet and rich for the peanut butter. I loved how this came out, and I can't imagine it being any richer.

1 tablespoon kosher salt, plus more to taste
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon paprika
½ teaspoon cayenne pepper
2 ½ pounds skinless, boneless chicken thighs, cut into 2-inch pieces
2 tablespoons vegetable oil
1 large yellow onion, chopped
6 cloves garlic, minced
1 tablespoon finely grated fresh ginger
3 ½ cups chicken broth, or to taste
¾ cup unsweetened natural peanut butter
½ cup ketchup
1 tablespoon packed brown sugar
1 pound zucchini, cut into chunks
1 red bell pepper, cut into chunks
1 green poblano pepper, diced
2 cups hot cooked rice
1 lime, for garnish
½ cup roasted peanuts, plus more for garnish
3 tablespoons chopped fresh cilantro, for garnish

Steps:

  • Mix salt, coriander, cumin, turmeric, paprika, and cayenne pepper together in a small bowl.
  • Place chicken pieces in a separate bowl and add 1/2 of the spice blend. Mix together thoroughly to coat each surface with spice blend.
  • Heat oil over high heat in a heavy pot. Brown half of the chicken pieces on all sides. Transfer to a bowl. Repeat with the rest of the chicken.
  • Reduce heat to medium and add onion to pot. Saute until onions start to turn translucent and golden, 1 or 2 minutes. Add garlic and ginger; cook about 1 minute. Stir in remaining spice blend; cook and stir one minute. Pour in chicken broth. Add browned chicken along with accumulated juices. Stir in peanut butter and ketchup; add brown sugar. Bring to a simmer and reduce heat to maintain a gentle, steady simmer. Simmer, stirring occasionally, about 30 minutes.
  • Transfer zucchini, red bell pepper, poblano pepper, and peanuts to the pot. Stir to mix. Continue simmering until chicken and vegetables are fork tender, 30 to 40 minutes. Remove from heat.
  • Serve over rice with a squeeze of lime and a sprinkle of peanuts and chopped cilantro.

This is a really fast easy curry recipe without the spiciness of traditional curry dishes.. This is one of my 11 year sons favorite recipes. He likes to help make this dish with me as well.

2 Tbsp canola oil
1 1/2 lb chicken breasts, cut into small pieces
8 oz frozen cut green beans
PEANUT CURRY SAUCE
1 1/2 c coconut milk
1/2 c low sodium chicken broth
1 Tbsp red curry paste
1/3 c chunky peanut butter
2 Tbsp brown sugar
2 Tbsp frsh squeezed lime juice

Steps:

  • 1. Heat oil in a large frying pan over medium heat. Add cut up chicken pieces, saute until cooked through (abut 5 mins.) Add green beans and continue cooking for 3 more minutes.
  • 2. While the chicken cooks, start the peanut curry sauce.
  • 3. In a medium mixing bowl, whisk together all the sauce ingredients. Pour over the chicken & green beans; stir to combine. Turn the heat to high and bring to a boil. Stir occasionally. Reduce heat and simmer until sauce is thickened (about 6-8 mins.)
  • 4. Serve chicken over rice.

2 tablespoons oil
2 lbs chicken thighs, boneless, skinless, cubed
1 medium onion, thinly sliced
26 -28 ounces coconut milk (2 cans)
1/2 cup creamy peanut butter
2 tablespoons mild curry paste
2 tablespoons brown sugar
2 teaspoons fish sauce
2 cups frozen peas
2 tablespoons cornstarch
1/4 cup water
chopped peanuts (to garnish) (optional)
cooked rice (optional)

Steps:

  • In a large (about 6 quart) pot brown the chicken in 2 tbsp oil, add the onion when chicken is almost cooked to help soften them.
  • If you are using whole fat coconut milk, be sure to shake the can! Add the 2 cans of coconut milk to the pot with the creamy peanut butter, mild curry paste, brown sugar and fish sauce. Stir until combined.
  • Once hot, add the frozen peas.Continue cook until bubbly.
  • If the sauce is not thick enough, mix the corn starch with the water and add to the pot while the sauce is bubbling to activate the corn starch as a thickener.
  • Serve over cooked rice and garnish with peanuts if desired.

This is a spicy dish, but the heat can be adjusted by reducing the curry and sambal oelek. It is quick and easy and it is so good. Time to cook rice is not included in prep time or cook time. Also...I often use lite coconut milk, it reduces the fat content and is still wonderful, just a little less rich.

2 tablespoons peanut oil
3 tablespoons red curry paste
3 teaspoons sambal oelek (chili paste)
1 1/2 lbs chicken breasts, cut into small chunks
2 cups coconut milk
3 tablespoons fish sauce
3 tablespoons brown sugar
3 tablespoons creamy peanut butter
steamed cooked jasmine rice
crushed peanuts
lime

Steps:

  • In a medium saute pan saute peanut oil, red curry and sambal over med. heat for a few minutes.
  • Add the chicken and cook through.
  • Add coconut milk, fish sauce, brown sugar and peanut butter.
  • Simmer about 10 minutes.
  • Serve over steamed Jasmine rice.
  • Top with fresh lime juice and crushed peanuts.
  • Tip: If you are worried about the heat, just add half of the curry and sambal in the first step. Try it after everything has been added and if it's not spicy enough you can then add more curry. If then you want it more spicy you can add more sambal, the sambal is more spicy than the curry.

1 large mango, peeled and cut into 2-inch squares, about 1/4 inch thick
1 1/2 pounds skinless, boneless chicken thighs, cut into 1-inch pieces
Salt and freshly ground pepper
Vegetable oil, for brushing
Lime wedges, for serving
1 1/2 cups Red Curry-Peanut Sauce:
1 tablespoon peanut oil
1 shallot, minced
1 garlic clove, minced
1 tablespoon Thai red curry paste
1 tablespoon light brown sugar
6 tablespoons unsweetened peanut butter
3/4 cup unsweetened coconut milk
2 1/2 tablespoons fresh lime juice
1 tablespoon Asian fish sauce

Steps:

  • Red Curry Peanut Sauce: In a medium saucepan, heat the peanut oil. Add the shallot and garlic and cook over moderate heat, stirring, until softened, about 2 minutes. Add the curry paste and whisk for 1 minute. Add the brown sugar and cook until melted. Whisk in the peanut butter, then slowly whisk in the coconut milk. Simmer for 2 minutes. Remove from the heat and whisk in the lime juice and fish sauce. Serve warm or at room temperature. Light a grill. In a bowl, toss the mango with the chicken and 3 tablespoons of the peanut sauce and season lightly with salt and pepper. Loosely thread the mango and chicken onto 8 skewers, alternating the pieces. Brush the skewers with oil and grill over high heat, turning occasionally, until the chicken is lightly charred in spots and nearly cooked through, 8 to 10 minutes. Brush 2 tablespoons of the peanut sauce on the skewers and grill, turning, until lightly browned, about 2 minutes. If the sauce becomes too thick to brush, thin it slightly with water. Serve the chicken-and-mango skewers with lime wedges and pass the remaining peanut sauce at the table.
