PEACH MUFFINS WITH STREUSEL TOPPING
Everyone loved these muffins! Found the recipe and added a streusel topping, works perfectly :)

Steps:
- 1. Preheat oven to 400 degrees. Grease muffin cups or use liners.
- 2. In a large bowl, mix flour, baking soda, cinnamon and salt. Separately mix oil, eggs and sugar in medium bowl.
- 3. Stir the oil mixture into the dry mixture just until moistened. Fold in peaches. Spoon into cups.
- 4. Bake 20-25 minutes or until toothpick comes out clean. Cool 5 minutes until moving onto a cooling rack, then cool completely.
- 5. STREUSEL TOPPING: Put 3 TBS flour and 1/4 cup sugar into small bowl. Add 2 TBS butter and lightly mix with fingers until it is crumbly. Sprinkle onto muffins just before baking.
PEACH STREUSEL MUFFINS
These muffins are delicious with fresh summer peaches. If you use frozen peaches, make sure to thaw them and drain any liquid before chopping.

Steps:
- Using and electric mixer, beat the butter at medium speed until creamy.
- Gradually add in 1/3 cup sugar and beat until light and fluffy.
- Add in egg and beat until well blended.
- In a bowl, mix together the 2 1/3 cups flour, baking powder, and salt.
- Alternately add flour mixture and milk to batter; stir after each addition.
- Add in vanilla; stir to combine.
- Gently fold in peaches.
- Grease muffin tin; spoon batter into muffin cups until 2/3 full.
- In a small bowl, add 1/4 cup sugar, 3 tablespoons flour, and cinnamon; stir to combine.
- With a pastry blender, cut in chilled butter until mixture resembles coarse crumbs.
- Sprinkle crumb mixture over muffin batter.
- Bake in a 375° oven for 20 minutes or until golden.
- Turn muffins out of pan and cool on wire rack.

- Preheat oven to 375 Line 12 large muffins cups Streusel: In a bowl, combine flour, brown sugar, sugar, cinnamon, salt, and pecans. Drizzlewith melted butter and toss with fork till evenly moistened (mixture will be chunky). Muffins: In a bowl,Whisk together flour, pecans, powder, soda, lemon zest, cinnamon and salt. In a separate bowl,combine egg and sugar,whisk until pale yellow in color,about 30sec.Whisk in vanilla till thick,about 30sec. Slowly whisk in melted butter, add buttermilk and Whisk till well combined. Fold flour mix into wet ingred. till just combined.(Over mix will make muffins tough) Gently fold peaches into batter. Sprinkle each muffin with streusel Bake till light golden approx. 30 mins
