1 ounce vodka
1 ounce peach liqueur
1 ounce Prosecco
1/2 ounce lemon juice
1/2 ounce peach nectar
2 dashes Fee Brothers peach bitters (optional)
Garnish:
Peach wedge

Steps:

  • In a cocktail shaker, combine the vodka, peach liqueur, Prosecco, lemon juice, peach nectar, and bitters, if using. Fill the shaker with ice and shake vigorously until completely mixed, about 20 seconds. Strain into a chilled champagne coupe and garnish with a peach wedge.

3/4 cup sugar
1/2 cup hot water
1/4 cup orange juice
1 16-ounce bag frozen sliced peaches, thawed, juices reserved
1 cup chilled Prosecco or other sparkling white wine

Steps:

  • Stir first 3 ingredients in medium bowl until sugar dissolves. Blend peaches and reserved peach juices in processor until peaches are finely chopped. With machine running, gradually pour in sugar syrup; process until smooth. Add Prosecco and blend well. Transfer mixture to container. Cover and freeze until firm, at least 3 hours. (Can be made 2 days ahead. Keep frozen.)

2 ripe peaches (about 1 1/2 pounds total), pitted and coarsely chopped
1 1/2 tablespoons fresh lemon juice
1 1/2 tablespoons sugar, or to taste
1 (750-ml) chilled bottle Prosecco or other sparkling wine
About 1 1/2 cups seltzer or club soda, chilled
Garnish: mint sprigs

Steps:

  • Purée peaches with lemon juice and 1 1/2 tablespoons sugar in a blender until smooth. Blend in more sugar if desired. Strain through a fine-mesh sieve into a pitcher, pressing on and then discarding solids. Stir in Prosecco.
  • Pour into 8 (10-ounces) glasses filled halfway with ice. Top off with seltzer.

Small Batch White Peach Prosecco Jam image

Combine late summer white peaches with sparkling wine for a Bellini-type jam.

Number Of Ingredients 4

2 ½ cups peeled, chopped white peaches
2 Tablespoons lemon juice
1⅓ cups granulated sugar
½ cup Prosecco or other sparkling white wine

Steps:

  • Add all ingredients to a large saucepot or Dutch oven.
  • Slowly bring the mixture to a boil over medium heat stirring until the sugar is dissolved.
  • Turn the heat up a little and cook rapidly, stirring often to prevent sticking, until the jam reaches the gelling point, about 25 minutes.
  • Spoon hot jam into prepared jars, leaving ¼ inch headspace.
  • Wipe the lip of each jar with a damp paper towel, top the jars with a lid and lid ring.
  • Process in a water bath canner for 15 minutes. Remove and let cool completely.

10 ripe peaches, peeled and sliced (preferably white)
1/2 cup powdered sugar
2 oranges, juice of
2 lemons, juice of
2 cups prosecco wine
30 mint leaves, torn into pieces
1 pint blueberries

Steps:

  • In large bowl, mix peaches with sugar.
  • Mix juices with the prosecco; pour over peaches.
  • Add half the mint leaves and let marinate in refrigerator 20 minutes.
  • Stir in blueberries.
  • Garnish with the remaining mint.

2 teaspoons frozen white grape-peach juice concentrate
1 ounce fruit brandy (orange, peach or raspberry)
1 ounce fresh orange juice (Cara Cara preferred)
6 raspberries
8 to 10 ounces prosecco, chilled

Steps:

  • Divide the juice concentrate, brandy and orange juice between 2 Champagne flutes; stir. Add 3 raspberries to each glass and top off with prosecco. Serve immediately.
