3 cups (360g) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (226g) unsalted butter, softened
1 cup (200g) granulated sugar
2 large eggs
1 & 1/4 cups (283g) sour cream
1 tablespoon vanilla extract
1 cup (120g) all-purpose flour
1 cup (200g) firmly packed light brown sugar
1/2 cup (49g) regular oats or (40g) quick oats
1/2 teaspoon ground cinnamon
1/2 cup (113g) unsalted butter, softened
4 cups (approximate) sliced peaches (about 6 medium peaches)
1/4 cup (50g) granulated sugar
2 tablespoons lemon juice
1 tablespoon cornstarch

Steps:

  • Combine the peaches, sugar, lemon juice and cornstarch in a medium bowl. Set aside.
  • Combine the flour, brown sugar, oats, and cinnamon.
  • Add the butter, and mix with a pastry blender, a fork, or your fingers until combined. Set aside.
  • Preheat oven to 350°F. Grease a 9"x 13"x 2" baking pan.
  • Whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • Using an electric mixer on medium speed, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Mix in the sour cream and vanilla.
  • Reduce mixer speed to low. Gradually add the flour mixture, mixing just until combined.
  • Transfer about half of the batter to the prepared pan, spreading evenly.
  • Spoon the peach mixture over the batter, leaving any excess liquid in the bowl.
  • Drop the remaining batter over the peaches. Sprinkle the reserved topping over the top.
  • Bake 60 to 70 minutes, or until a pick inserted into the center comes out clean.

1 cup white sugar
½ cup butter, softened
1 cup sour cream
1 teaspoon vanilla extract
2 eggs, lightly beaten
2 cups all-purpose flour
1 ½ teaspoons baking powder

4 cups peeled, pitted and sliced peaches
¼ cup all-purpose flour
¼ cup white sugar
¼ cup chopped pecans
1 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, cream together 1 cup sugar and 1/2 cup butter. Beat in sour cream, vanilla, and eggs. Mix in flour, baking powder, baking soda, and salt. Spread 1/2 the batter into the baking pan. Layer with peaches, and top with remaining batter.
  • In a small bowl, mix 1/4 cup flour, 1/4 cup sugar, pecans, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs. Sprinkle evenly over the batter.
  • Bake 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

A family friendly sweet peach coffee cake with a sour cream base and a crunchy oatmeal crumb topping. It can be prepared with fresh peaches, canned peaches or peach pie filling.

2 c all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/2 c butter softened
1 c sugar
2 eggs
1 c sour cream
1 tsp vanilla
3 peaches peeled pitted and sliced
CRUMB TOPPING
1/3 c flour
1/3 c brown sugar
1/3 c old fashioned oats
1/2 tsp cinnamon
3 Tbsp butter softened

Steps:

  • 1. Preheat oven to 325 degrees. Spray spring-form or 9 x 9 pan with nonstick baking spray. In medium bowl whisk together 2 cups flour, baking powder, baking soda and salt.
  • 2. Using mixer cream butter and sugar until light and fluffy. Turn mixer to low and beat in eggs one at a time just until incorporated. Stir in sour cream and vanilla. Stir in flour mixture in three intervals.
  • 3. Spread half of the batter in the prepared pan. It will be thick (see notes). Top with peaches. Top with rest of the batter.
  • 4. In medium bowl combine 1/3 cup flour, brown sugar, rolled oats and cinnamon. Using pastry knife cut in butter until mixture is crumbly. Sprinkle over cake.
  • 5. Bake for 55-60 minutes or until toothpick inserted in center comes out clean. Allow cake to cool slightly before removing spring form sides.

This from-scratch coffee cake is quick to put together, and it easily serves a crowd. While it's delicious with peach or apricot pie filling, I like to make it with cherry or strawberry filling during the holidays.

1 3/4 c sugar, divided
1 c plus 2 tbs.softened butter, divided
3 large eggs
3 1/4 c all purpose flour, divided
2 tsp baking powder
1 tsp vanilla extract
1 (21oz) can(s) peach pie filling
1/4 c chopped pecans
1/4 tsp nutmeg

Steps:

  • 1. Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking pan with cooking spray, set aside. In a large bowl, with an electric beater on medium speed, beat 1-1/2 cups sugar and 1 cup butter until creamy. Beat in eggs one at a time, mixing well after each addition. Add 3 cups flour, the baking powder, and vanilla; beat well. Spread half of the batter in prepared baking pan. Spoon pie filling evenly over cake batter, leaving a 1/2-inch border around edge. Drop remaining batter by tablespoonfuls over pie filling. Using a wet knife, carefully spread batter over pie filling, covering filling completely. I have served this wonderful buttery peach coffeecake on so many different occasions, and always get so many compliments. It's not your average everyday coffeecake...it's filled with a heavenly-tasting cream cheese-peach filling, topped off with a brown sugar/cinnamon topping...to die for!

2 1/3 cups flour
1 1/3 cups sugar
3/4 teaspoon salt
3/4 cup Crisco shortening
2 teaspoons baking powder
2 eggs
2 teaspoons vanilla (or use 1 teaspoon almond extract)
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/3 cup lemon juice
1/2 teaspoon cinnamon (can use 1 teaspoon)
2 3/4 cups peaches (sliced-fresh OR canned)
3/4 cup chopped nuts
1/3 cup lightly-packed brown sugar
1 teaspoon cinnamon

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch pan.
  • In a bowl, combine flour, sugar and salt.
  • Cut in the Crisco shortening with a pastry knife until crumbly; reserve 1 cup of the mixture for the topping.
  • Add in baking powder, eggs and vanilla to the remaining crumb mixture.
  • Beat on medium speed of an electric mixer for 2 minutes, or until smooth.
  • Spread evenly into prepared pan.
  • Bake for 20-25 minutes.
  • For the filling and topping: beat the cream cheese on medium speed until smooth and creamy.
  • Gradually add in the sweetened condensed milk, lemon juice and cinnamon; beat until smooth.
  • Fold in peaches; spread evenly over cake.
  • To the reserved crumb mixture, add in nuts, brown sugar and cinnamon; mix well, and sprinkle over filling.
  • Bake for 30-35 minutes longer, or until set.
  • Serve warm.
