Heirloom tomatoes, peaches, and fresh mozzarella are layered and topped with a simple balsamic vinaigrette in this peach Caprese salad.

2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon flaked salt, divided
2 large heirloom tomatoes, thinly sliced
2 ripe peaches - halved, pitted, and sliced into half moons
6 leaves fresh basil
1 (8 ounce) ball fresh mozzarella, thinly sliced

Steps:

  • Whisk olive oil, balsamic vinegar, and 1 pinch flaked salt together in a bowl until dressing is smooth.
  • Alternate tomato slices, peach slices, basil leaves, and mozzarella slices in layers on a platter. Drizzle dressing over salad and sprinkle remaining flaked salt on top.

12 cups red leaf lettuce, torn into bite-sized pieces
1 medium peach
2 tablespoons walnuts, chopped
1/3 cup basil, slightly packed
2 leaves of fresh mint, cut into fine strips
1 -2 ounce fresh goat cheese (optional)
1 1/2 tablespoons raspberry vinegar (or other fruity vinegar)
1 teaspoon sugar (or more, to taste)
1 pinch salt
1 teaspoon Dijon mustard
2 tablespoons walnut oil (or olive oil)
1 pinch pepper

Steps:

  • If you have time, toast walnuts over medium heat until fragant or use as they are.
  • Wash lettuce and spin dry. Put in a large salad bowl.
  • Wash and dry peach. Cut in 1/4 inch wedges from pit and add to lettuce.
  • Tear basil into 1/2 inch pieces, sprinkle over peach.
  • If using cheese for additional color and flavor, crumble over salad.
  • Top salad with walnuts and mint leaves.
  • For dressing whisk together all ingredients except oil until well blended. Add oil, mix well and taste for a nice slightly sour balance, there will be sweetness from the peach.
  • Pour dressing over salad and mix at the table.

3 ripe peaches (peeled, if desired)
1 cup fresh basil leaf, torn
8 ounces fresh mozzarella cheese, cut into 1 inch chunks
2 teaspoons extra virgin olive oil
1/4 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Cut each peach into 6 to 8 wedges, then cut each wedge in half crosswise.
  • In a large bowl, combine the peaches, basil, and mozzarella.
  • Drizzle with the oil, sprinkle with salt and pepper, and toss.
  • (You can cover and refrigerate the salad for up to several hours.) Serve cold or at room temperature.

2 cups torn leaf lettuce
1 medium peach, cut into wedges
1 large heirloom tomato, cut into wedges
1/2 cup loosely packed basil leaves
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/4 teaspoon flaky sea salt
1/8 teaspoon coarsely ground pepper

Steps:

  • Tear mozzarella into large pieces. On 2 large plates, arrange lettuce, peach wedges, tomato wedges, mozzarella and basil. Drizzle with olive oil and vinegar; sprinkle with salt and pepper.
