I saw this recipe about a year ago and just now got around to making it. Can't BELIEVE I waited this long but you can bet we will be having it again soon and often!

2 cups water
1/2 teaspoon salt
1 cup wild rice
1 (6 ounce) jar marinated artichoke hearts, drained and halved, reserving marinade
1 (6 ounce) can English peas (green)
1/3 cup green bell pepper, coarsely chopped (of you can use yellow, red or orange for more color and milder flavor)
3 green onions, chopped (both the white and green parts)
1/4 cup almonds, toasted (slivered)
1 1/3 cups canola oil
1/2 cup white vinegar
1/4 cup parmesan cheese, grated
1 tablespoon sugar
1 teaspoon salt
1 teaspoon celery seed
1/2 teaspoon white pepper
1/2 teaspoon dry mustard
1/4 teaspoon paprika
1 garlic clove, minced

Steps:

  • In a 1-quart pot with a lid, bring 2 cups water and the salt to a boil.
  • Add the rice and stir well.
  • Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour.
  • Drain excess liquid from the rice.
  • Meanwhile, combine all the dressing ingredients in a jar with a tight-fitting lid and shake well. Refrigerate until ready to use.
  • In a large bowl, combine the rice, artichoke hearts, peas, green pepper, green onions, tomatoes, reserved marinade, and half of the dressing.
  • Toss well.
  • Cover and chill or eat at room temperature.
  • Just before serving, toss again and taste.
  • Add some of the remaining dressing, if desired.
  • Sprinkle with the almonds and serve.

A great salad or side dish and can be made ahead of time. Just take out of the refrigerator and serve. I got this recipe from my mother, who got it from a family friend, who got it from ??? Cook time includes refrigerator time (estimated).

1 cup wild rice (uncooked)
2 cups shredded carrots
3 green onions, chopped
1/4 cup olive oil
1/4 cup red wine vinegar
1/2 teaspoon salt
1 cup raisins, dried sweetened cranberries,cherries,blueberries or 1 cup fruit
1 cup pecans or 1 cup walnuts
1/2 tablespoon honey

Steps:

  • Cook rice according to directions except do not add butter, oil or seasonings.
  • Drain well and refrigerate until completely cooled.
  • Add carrots and onions, mixing well.
  • Mix oil and vinegar and then add salt.
  • Pour dressing over rice, mixing thoroughly.
  • Add fruit and nuts.
  • Add honey and mix well.
  • Note: If dried fruit is plumped in warm water, drain before adding to rice.

8 ounces asparagus
1 clove garlic, minced and mashed to a paste with 1/2 teaspoon kosher salt
2 tablespoons minced shallot
1 tablespoon Dijon mustard
Grated zest and juice of 1 large lemon
1/2 teaspoon kosher salt and freshly ground pepper
1/2 cup extra-virgin olive oil
1 cup wild rice, cooked, drained, and room temperature
3 tablespoons pine nuts, toasted
1/4 cup finely diced carrots
1/4 cup finely diced celery
2 tablespoons minced fresh dill
1/4 cup minced fresh mint
1 head Boston or large Bibb lettuce, washed and trimmed (optional)

Steps:

  • Peel and trim the asparagus stalks. Cut about an inch of the tips from the spears and then thinly slice the remaining stalk. Bring a small pot of salted water to a boil. Drop the asparagus into the water and cook until just crisp-tender, about 1 minute. Drain and refresh under cold running water. Set aside.
  • In a medium bowl, whisk together the garlic, shallot, mustard, lemon zest and juice, salt and pepper to taste. Gradually whisk in the oil to make a creamy dressing.
  • In a large bowl, combine the rice, nuts, carrots, celery, asparagus, dill, and mint. Toss with about 1/3 cup dressing. Serve as is or toss the lettuce with some of the dressing. To serve place the lettuce on a serving platter or individual plates and spoon the salad into the center of the leaves. Pass any remaining dressing at the table.

1-1/2 cups uncooked long grain brown rice
3-1/2 cups water
2 tablespoons white vinegar
2 tablespoons balsamic vinegar
1 garlic clove, minced
3/4 teaspoon pepper
1/2 teaspoon salt
1/2 cup olive oil
1/4 cup chopped fresh basil
6 ounces fresh baby spinach (about 8 cups), coarsely chopped
16 ounces cherry tomatoes, halved
6 green onions, thinly sliced
2 cups (8 ounces) crumbled feta cheese

Steps:

  • In a saucepan, combine rice and water; bring to a boil. Reduce heat; simmer, covered, until rice is tender and liquid is absorbed, 35-40 minutes., Meanwhile, place vinegars, garlic, pepper and salt in bowl and whisk together. While whisking, gradually add oil in a steady stream. Stir in basil., Place spinach in a large bowl; add cooked rice. Stir in tomatoes, green onions and dressing; toss until spinach is wilted. Gently stir in feta. Loosely cover and refrigerate 2 hours or until cold.

1 (6-ounce) package long-grain and wild rice
2 tablespoons lemon infused olive oil
1/2 orange, zested and juiced
2 green onions, white and green parts
1/2 cup grape tomatoes
Kosher salt and freshly ground black pepper

Steps:

  • Prepare the rice according to package directions without the package of seasoning. Set aside to cool to room temperature.
  • In a large bowl combine the onions and tomatoes. Whisk together the oil, orange zest and juice and salt and pepper, to taste, in a small bowl. Pour the oil mixture over onions and tomatoes and add the cooled rice. Toss to combine, then cover the bowl and refrigerate until ready to serve. Can be served cold or at room temperature.

I found this in one of my Paula Deen cookbooks. It's so easy and so fast, and can definitely be made after a long day at work.

1 (6 ounce) package long grain and wild rice blend
4 cups cooked chicken, chopped
2 (10 3/4 ounce) cans cream of chicken soup
1 cup mayonnaise
2 teaspoons curry powder (or to taste)
1 (8 ounce) package cornbread stuffing mix (Pepperidge Farm brand preferred)
1/4 cup butter

Steps:

  • Preheat oven to 350°F.
  • Cook rice according to package directions and spoon into greased 2 quart casserole dish.
  • Layer chopped chicken over top of rice.
  • Mix soup, mayonnaise and curry powder and pour over chicken.
  • Top with dry stuffing mix and dot evenly with butter.
  • Bake for 30 minutes, or until bubbly.
