BROWN SUGAR CHEWIES (ADAPTED)
A very tasty, and (obviously) chewy cookie bar, with a ginger twist on the original recipe by Paula Deen.

Steps:
- Preheat oven to 350. Spray 8-inch square pan with cooking spray.
- Melt butter over low heat in small saucepan. Once melted, remove from heat. Add brown sugar and stir until smooth. Add beaten egg and incorporate well. Sift the flour and baking powder together and stir into the brown sugar mixture. Add the vanilla, walnuts and ginger and mix well.
- Pour batter into pan and bake for 20-22 minutes (do not overbake! The bars should yield to a light touch).
- Cool and cut into pieces.

- Preheat the oven to 350?F. Lightly grease a 13 by 9-inch baking pan.
- In a large bowl, mix together the brown sugar, flour, butter, eggs, coconut, vanilla, pecans, and chocolate chips until well combined.
- Spread the batter evenly in the prepared pan and bake for 30 to 35
- minutes, until a toothpick inserted through the middle comes out clean.
- Cool the cake completely in the pan before cutting it into squares.

- Spray an 8-inch square pan with vegetable oil cooking spray.
- In a small saucepan, melt the butter.
- Turn off the heat, add the brown sugar and stir until smooth.
- Stir in the egg.
- Stir together the flour and baking powder and stir into the brown sugar mixture.
- Stir in the vanilla and pecans.
- Pour the batter into the prepared pan and bake for 20 minutes.
- When cool, dust the top with a sifting of confectioners' sugar.
