2 cups red wine
6 cloves garlic
2 tablespoons dried oregano
2 tablespoons dried basil
1 pound butter, at room temperature
1 tablespoon Worcestershire sauce
2 tablespoons chopped fresh parsley leaves
1 (16-ounce) New York strip steak
Salt and pepper

Steps:

  • Preheat a grill or a grill pan to medium-high heat.
  • Combine red wine, garlic, oregano, and basil in a medium saucepan. Reduce over high heat until wine is just about evaporated. Add reduced wine mixture to butter. Add Worcestershire sauce and parsley and mix until well combined. Refrigerate butter mixture for 5 minutes to harden slightly. After butter mixture has hardened slightly, spread mixture over waxed paper and roll into a log. Chill. After butter sets in log, cut into 1-inch thick medallions to top steak.
  • Meanwhile, season steak with salt and pepper. Grill to your desired degree of doneness. Remove from the heat and let rest for 5 minutes. Top steak with a medallion of seasoned butter and serve.

4 (1-inch thick) rib-eye steaks
1/2 teaspoon meat tenderizer
1/2 teaspoon accent
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon lemon pepper
Vegetable oil

Steps:

  • Sprinkle a little of all spices on both sides of each steak. Rub in well. Drizzle some oil on top of each steak and rub into the steak. Repeat with the other side.
  • After applying spices, stack steaks in shallow pan and cover. Place in refrigerator. Allow to marinate for a minimum of 4 hours. In some cases, you may want to marinate overnight. Let steaks set at room temperature for 30 minutes before cooking.
  • Cooking the Steaks:
  • Let your charcoal burn down on your favorite cooker for about 1 hour until the coals are good and white. Get the cooker to 350 degrees F for optimum cooking temperature.
  • Place steaks on grill, close lid and let them cook for 6 to 8 minutes before turning. You are hoping to get good grill marks on the steaks at this time. After turning, cook to desired doneness. This is usually another 5 to 7 minutes.
  • After cooking to desired doneness, remove steaks from grill and place in aluminum pan and cover and seal the pan with foil. Place this in a warmer or on a warm part of the grill for 5 to 10 minutes. This seals in the juices and increases the tenderness.

6 bacon strips, diced
1 cup sliced fresh mushrooms
3 thin onion slices
1 egg, lightly beaten
1 tablespoon Worcestershire sauce
1/2 teaspoon seasoned salt
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon prepared horseradish
1 pound ground beef
3 slices process American cheese
3 hamburger buns, split

Steps:

  • In a large skillet, cook bacon until crisp. Remove with a slotted spoon to paper towels. In the drippings, saute mushrooms and onion until tender. Transfer to a large bowl with a slotted spoon; add bacon. , In another bowl, combine the egg, Worcestershire sauce, seasoned salt, salt, pepper and horseradish; sprinkle beef over mixture and mix well. Shape into six 1/4-in.-thick patties. , Divide bacon mixture among three patties. Top with a cheese slice; fold in corners of cheese. Top with remaining patties; seal edges. , Grill, uncovered, over medium-hot heat for 5-6 minutes a side or until a thermometer reads 160° and meat juices run clear. Serve on buns.

2 (24-ounce) certified Angus porterhouse steaks
2 tablespoons seasoning salt, recipe follows
2 tablespoons sweet butter, melted
2 sprigs watercress
3 tablespoons kosher salt
1 teaspoon white pepper
1 teaspoon sweet paprika
3/4 teaspoon granulated garlic
1/2 teaspoon dried thyme

Steps:

  • Preheat a charcoal grill.
  • Let steak sit at room temperature for 15 minutes. Season both sides of the steak generously with the seasoning salt. Cook steak on the grill to desired temperature. Remove from the grill and brush with sweet butter. Garnish with watercress.
  • Combine all ingredients.

1 lb ground beef
1 tablespoon chili powder
1/4 cup onion, chopped
6 ounces tomato paste
1 1/4 cups water
1/4 cup parmesan cheese, grated
1/2 teaspoon italian seasoning
1 loaf French bread
8 ounces mozzarella cheese, sliced

Steps:

  • Brown ground beef in skillet; pour off drippings. Add next 6 ingredients, mix well. Bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes.
  • Cut french bread lengthwise. Place half of mozzarella cheese on bottom; fill with beef mixture. Cover with remaining cheese slices and top slice of bread.
  • Wrap in foil and bake at 400 degrees for 8 to 10 minutes; cut into sandwiches.

Chicken Fried Steak is an old favorite of our family... and the gravy on this recipe really throws it over the top! It was so tasty that I cannot wait to make it again.

4 beef cube steaks
1 c flour, divided
1 egg
1 onion, chopped
1 c beef stock, unsalted
1 c heavy cream
2 Tbsp fresh parsley, minced
olive oil, extra virgin
1/4 c milk
sea salt, to taste
freshly cracked black pepper, to taste
1 tsp paprika
1/2 tsp granulated garlic

Steps:

  • 1. Pound steaks to about 1/4 inch thickness. Rub both sides with salt, pepper, paprika and garlic powder.
  • 2. Heat oil in a large skillet, oil should be about 1/4 inch high.
  • 3. Beat egg and milk together in a bowl.
  • 4. In another bowl, season the flour with salt, pepper, paprika and garlic powder.
  • 5. When the oil is hot, dredge the steaks in the flour, then in the egg mixture, then back again in the flour.
  • 6. Place them immediately in the skillet. Fry on both sides until golden brown; remove and set aside.
  • 7. Remove most of the oil from the skillet, leaving behind the bits of meat. I leave approx. 3 TBSP of oil. Reheat the oil and add the onion; cook until golden brown then add about 3 tablespoons of flour, whisking it in.
  • 8. Gradually whisk in the beef stock scraping the bottom well, add a little water if it is still too thick. Bring to boil then add cream and parsley and cook another minute.
  • 9. Serve with mashed potatoes, corn bread or biscuits.
