CAJUN PASTALAYA
My own Cajun pastalaya recipe I put together after trying 3 or 4 different local Southern Louisiana recipes. The prep/cook times may be off, as I have never timed myself. Hope y'all enjoy! Serve with crusty bread.

Steps:
- Melt butter in a large pot over medium heat. Add sausage and cook for 2 minutes. Add celery, onion, bell pepper, and garlic; cook until soft, 5 to 7 minutes. Add chicken and cook until no longer pink inside and juices run clear, 5 to 7 minutes more. Add tomatoes, paprika, Creole seasoning, and cayenne pepper; bring to a simmer and cook for 10 minutes.
- Add broth to the pot and return to a simmer. Add penne and simmer for 8 minutes. Add shrimp. Continue to simmer, stirring constantly, until pasta is tender but firm to the bite and shrimp are cooked through, about 7 minutes more.
- Stir in cream. Stir in thyme, oregano, and basil. Cook until just heated through, 3 to 5 minutes more. Serve topped with green onions and Parmesan cheese.

REAL CAJUN PASTALAYA
This is one of our favorite "go to" meals here in our south Louisiana home. It's a modern twist on traditional jambalaya where we use pasta instead of rice. This is a basic recipe that is very versatile, so the combinations are many. I prefer penne pasta, but you can use any pasta from spaghetti, fettuccine, rotini, elbow; regular, flavored (spinach/ tomato pasta, for example) wheat... really, ANY pasta. The protein can be varied as well; I use rotisserie chicken because I like the flavor it gives it. You may use 1/2 pound boneless, skinless chicken breasts. NOTE: when using chicken breasts, brown them in a skillet whole and cube them after. Other proteins can be added, I usually use more than one. Our local favorites: crawfish, shrimp, and alligator work well. For sausage I use Andouille, but you can use any smoked sausage, tasso, or whatever is local for you... I've done it with kielbasa too. You can even throw some BACON in if you'd like. This dish is the epitome of "versatile." I don't think I've cooked it the same twice. Hope you enjoy it as much as we do.

- In a heavy pot that is NOT nonstick (I use Magnalite) brown sausage.
- After sausage is browned, remove from pot and add onions and bell pepper. Cook on medium-high heat in fat rendered from sausage (add butter or olive oil if needed) until wilted; about 5 minutes.
- Add garlic and cook a few more minutes.
- Add sausage back to pot along with chicken or which ever protein you choose, except if using shrimp).
- Add all remaining ingredients except green onions and bring to a boil, stirring occasionally to make sure it doesn't stick to bottom. Reduce heat, cover, simmer for about 25 minutes, until pasta is tender and most of the liquid has been absorbed. If using shrimp, add it at this point.
- Remove from heat, stir in green onions. Serve hot. French bread is delicious with it and you can sop up the sauce.

- Brown cubed pork until tender. Add sausage and cook for about 20 minutes. Add creole vegetables and cook until all vegetables are wilted. Add chicken broth, water, soups and season well. Add a little kitchen bouquet for color Bring to a boil for about 5 -10 minutes. Lower heat. Add pasta and cook for 20-25 minutes until pasta is tender.
KELLY'S PASTALAYA
This recipe is like jambalaya, but instead of rice you use pasta. I got the basic recipe from a friend and made it my own after adding a few more ingredients. It takes a little bit of time to make but it is worth it!

- If you have a cast iron jambalaya pot use it, if not you can use a magnalite or a very large oval pot to cook the Pastalaya. Start by browning the pork first. Brown it until it makes like a crust on the bottom. Set it aside in a large bowl. Next, brown the sausage. After you brown the sausage set it aside also in the same bowl as the pork. Then, add the chopped onions in the pot that you just browned all the meats inches Add just a little of chicken broth to release the flavor from the bottom of the pot that the meat made. This will turn the onions like a caramel color. Add cream of mushroom soup and beef gravy to onions. Stir till well blended. Add meats. Let this mixture come to a slight boil. Next, add chicken broth. You will not use both cans of broth. Add enough until it is about 2 inches from rim of pot. Let mixture come to a boil. Add the stick of butter. Add Tony's seasoning to taste. To know that you have seasoned it well, when you taste it, it will pick your throat. It may taste like a lot of seasoning, but you will need it to make it have a good taste. After this mixture comes to a rolling boil, add pasta. Break the pasta in half. Stir with a pasta utensil. Let it come to a boil again then, lower the fire and cover it, stirring it occasionally. Keep checking the pasta by tasting it to see if it is cooked. It should be tender just like when you cook spaghetti. This makes a lot. It will feed at least 10-15 people. ENJOY!

CROCK-POT JAMBALAYA-PASTALAYA
I have yet to try this recipe but it looks pretty good. I got it off of a website called realcajunrecipes.com. It calls for noodles but you can obviously use rice instead if you like. Posted for ZWT5

- In a crock-pot add all together except, bell pepper and shrimp.
- Cook on high for 4 hours.
- Add shrimp and bell pepper and cook an additional 30 minutes.
- Serve over rice or combine with enough rice to the desired consistency. Instead of rice, prepare pasta and serve over it for Pastalaya.

PASTALAYA
A staple here in south Louisiana. Wonderful one pot meal that is delicious as well as must have for social gatherings here in South Louisiana. This can also be changed up to add your favorite meat besides chicken, like cubed pork or shrimp or even a combo of chicken & pork which is very common.

- 1. Melt butter in large Dutch oven pot, add seasoning vegetables & saute until just turning tender. Add sausage & brown for a few minutes. Stirring so vegetables dont burn.
- 2. Add chicken, rotel, soup, & broth. Bring to a boil. As soon as it comes to a boil, break spaghetti noodles in half add noodles to the mix. Bring this to another boil. At this point, add salt & pepper to taste. The salt taste should be a little heavy at this point because the noodles will soak up a good bit.
- 3. Cover the pot & turn the heat to low/simmer. Cook until noodles are done & the liquid has been absorbed. This should be about 20 minutes or so. Serve with hot crusty garlic bread.
SPAGHETTI JAMBALAYA / PASTALAYA
One of my favorite meals, is Jambalaya. This is a twist to the original recipe, but very enjoyable. As always, cajun cooking is a slower process, not to be rushed. Part of the fun is cooking outside, with friends, talking and laughing waiting on the meal.

- 1. Cut pork and smoked sausage into bite size pieces. Season pork with Tony Chacheries Creole Seasoning.
- 2. Add enough cooking Oil to bottom of large heavy pot to brown meat. When oil is hot add Chopped Pork. Stir pork occasionally as it browns.
- 3. When pork is browned, drain off some of oil. Add chopped Smoked Sausage, brown.
- 4. Chop both onions, celery, and bell peppers add to meat stir. Decrease heat to medium. Cover with heavy pot lid, stir occasionally will cooking. Continue to cook until onions turn clear and liquids cook out of onions and peppers. This is a slower process but well worth the wait for the flavor that is produced.
- 5. Add garlic, garlic salt stir.
- 6. Add enough chicken broth or beef broth to cover meat about 1 1/2 inches, bring to a boil. Reduce heat to allow water to be absorbed some and form a broth.
- 7. Add Spaghetti noodles stir, cover and let noodles absorb all of the liquid. Stir occasionally.
- 8. We always served this recipe with White beans and corn bread.
- 9. To make original Jambalaya, substitute uncooked White Rice for the Spaghetti noodles.
CAJUN PASTALAYA

- Heat fat in a large covered pot or skillet and add the chicken, and brown well on both sides. Remove and set aside. Slice the sausage in half lengthwise, then chop, adding to the skillet and cook until browned. Stir in the onion and green pepper and cook for about 5 minutes, or until tender. Add the garlic and cook another minute.
- Stir in the diced tomatoes and water; bring up to a boil. Meanwhile, cut the chicken breast into cubes and return to the pot, adding in the dry pasta, thyme, basil, parsley, and Cajun seasoning, return to boil; reduce to medium low, cover and cook for 25 minutes or until pasta is tender and most of liquid has been absorbed. Stir in the butter and green onion. Taste, add salt and pepper, adjust seasonings as needed and serve with hot French bread to soak up the juices.
- Variation: Mix and match the protein by using chopped cooked pork or cooked crawfish tails. Can also use peeled and deveined raw shrimp, adding in the last 5 minutes of cooking time.
- Note: I use the medium sized shell pasta, but you can substitute any medium sized short cut pasta such as rotini, elbow macaroni, penne, or ziti. For even more kick, substitute a can of drained Rotel diced tomatoes for one of the canned tomatoes, increasing water if needed.
LA CAJUNE PASTALAYA RECIPE - (4.2/5)

- 1. Throw your pork in a large pot or Dutch oven with enough oil to wet the pan, and brown over medium to high heat. In this case, I used some diced ham because that's what was available. It came out a bit saltier than I think would be ideal, so I'd suggest using some picnic shoulder or Boston Butt. 2. When the meat is about halfway done, add the diced sausage and finish browning until cooked, and then remove from the pot and set aside. 3. Add the diced onions, deglazing the pan slightly with some beer or white wine to help get up any stuck bits of the meat. Cook the onions until golden brown. 4. Add the bell pepper, celery and garlic and cook until completely wilted over medium heat. 5. Add the meat back to the pot along with all remaining ingredients except the pasta. Add enough water to cover the mixture, increase heat, bring to a medium boil and boil for 30 minutes. 6. It's during this time that you'll want to add your seasonings and make the recipe your own. In my case, I used a teaspoon or so of liquid crab boil, a couple of teaspoons of Cajun Power Garlic Sauce, a few dashes of Worcestshire and a few pinches of cayenne pepper. The main things to remember here, is that you will lose some salt and pepper through the boil and when you add the pasta, so you actually want to over-season your liquid slightly above your taste. 7. Break your pasta into thirds or quarters and add to the pot. Make sure you have enough liquid to cover the mixture by about a quarter inch or so. You can always remove water as needed. 8. Boil until the water reduces to your desired level (again, you can always just remove some if things are a bit too soupy), then remove from heat and allow to sit for at least 15-20 minutes for the mixture to thicken. This will serve about 10-12 people.
ONE-POT PASTALAYA (SERVES 6) RECIPE - (4.3/5)

- Coat a very large skillet (about 14 inches in diameter) with a lid with the olive oil. On medium heat, warm the oil and add the sliced sausage. After the sausage begins to render some of its fat, raise the heat and add the chicken. Sauté until the sausage and chicken just begin to brown a bit. Stir the onion, celery, bell pepper, garlic, paprika, thyme, basil, oregano, and cayenne (if using) into the sausage and chicken and sauté over medium heat until the vegetables soften. Crush the tomatoes and add them, along with their juices, to the pan. Simmer for about 10 minutes, partially covered. Add one cup of the water, bring up to a low boil, and stir in the pasta. The pasta should take about 12 minutes to cook, so at the 7-minute mark, add the shrimp and continue to simmer until the pasta is al dente and the shrimp is just cooked through. If you need to loosen the dish up a bit, add that extra 1/2 cup of water during the last few minutes. Serve in bowls, and garnish with the green onion.
