2 cups cauliflower florets
1/4 lb elbow macaroni
1/4-2 cup minced onion
1 tablespoon butter, plus
2 teaspoons butter
1 tablespoon all-purpose flour
1 cup milk
1/2 cup cream
1 pinch nutmeg
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1/2 teaspoon mustard powder
1/8 teaspoon cayenne pepper
6 ounces coarsely grated sharp cheddar cheese
1/3 cup grated parmesan cheese
1 pinch nutmeg
3/4 cup diced ham, good quality
1/2 cup dry breadcrumbs

Steps:

  • Blanch cauliflower for 5 minutes.
  • Refresh under cold water; drain well.
  • Cook pasta until al dente.
  • Refresh under cold water; drain well.
  • Cook onion in 1 tblsp butter over moderately-low heat until softened; stir in flour and cook 2 minutes.
  • Whisk in milk, cream, Worcestershire Sauce, ketchup, mustard powder, cayenne pepper and nutmeg and bring just to a boil, stirring, and simmer for 3 minutes.
  • Preheat oven to 350F and place rack in center of oven.
  • Add 1 cup of Cheddar and all of the Parmesan, stirring, until completely melted.
  • Stir in macaroni, cauliflower and ham and season.
  • Mound into prepared baking dish and top with remaining Cheddar.
  • Toss breadcrumbs with remaining 2 tsps butter (melted) and sprinkle over cheese.
  • Bake for 25 minutes, or until topping is golden.

This Thanksgiving casserole recipe is a twist on regular mac and cheese - pasta shells and cauliflower with ham in a cheesy sauce. It makes a hearty dinner.

7 cups small cauliflowerets (about 1 1/2 lb)
3/4 teaspoon salt
2 1/3 cups uncooked small pasta shells (about 8 oz)
1/4 cup Gold Medal™ all-purpose flour
3 cups 1% low-fat milk
2 cloves garlic, finely chopped
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
1/2 cup grated Parmesan cheese
2 teaspoons Dijon mustard
1/4 teaspoon pepper
3/4 cup diced cooked extra-lean ham
2 slices (1 oz each) whole wheat bread, torn into quarters
2 teaspoons butter, melted

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat 8 cups (2 quarts) water to boiling. Add cauliflower and 1/2 teaspoon of the salt; cook 4 minutes or until tender. Remove cauliflower with slotted spoon to large bowl. Heat cooking liquid to boiling. Add pasta; cook 6 minutes. Drain; add pasta to cauliflower.
  • In 2-quart saucepan, stir flour and milk with whisk. Add garlic; cook over medium-high heat about 8 minutes, stirring frequently, until thickened. Remove from heat; stir in cheeses, mustard, pepper and remaining 1/4 teaspoon salt. Pour cheese sauce over cauliflower mixture. Stir in ham. Spoon mixture into baking dish.
  • Place bread in food processor. Cover; process until coarse crumbs form. In small bowl, mix bread crumbs and butter; sprinkle over casserole. Bake uncovered 20 minutes or until lightly browned.

My creamy, cheesy cauliflower ham pasta casserole is a family favorite meal that uses up leftover holiday ham in a dish that everyone loves! This easy casserole features tender cauliflower, al dente bow tie pasta, salty ham, a tasty Dijon cheese sauce, and crispy Panko breadcrumbs- talk about comfort food!

12 oz cauliflower florets ((about 3 ½ cups - a head of cauliflower should yield 3-4 cups))
1 lb farfalle bowtie pasta ((uncooked))
3 cups whole milk
1 `cup chicken broth
¼ cup all-purpose flour
1 tsp garlic ((minced))
¼ tsp each, salt & pepper
2 Tbsp Dijon mustard
½ cup Parmesan cheese ((grated))
2 ½ cups cheddar cheese ((grated - reserve 1/2 cup for topping))
1 cup ham ((cooked, diced))
¼ cup Panko breadcrumbs

Steps:

  • Preheat your oven to 400°F (205°C) and coat a 9x13 baking dish or 2.5 quart casserole dish lightly with oil or non-stick spray.
  • In a large saucepan or stockpot bring 8 cups of salted water to a boil, then add the cauliflower florets. Cook at a low boil for 4-5 minutes, or until fork tender. Use a slotted spoon to transfer the cooked cauliflower to the prepared baking dish.
  • Return the water to a boil and add the bowtie pasta. Cook until al dente (usually 1-2 minutes shy of the package instructions). Drain the pasta and rinse under cool water before mixing with the cauliflower in your baking dish.
  • In a saucepan whisk together the milk, broth, and all-purpose flour. Then add the garlic, salt & pepper, and Dijon mustard and whisk until smooth.
  • Thicken the milk mixture over medium-high heat, stirring frequently, for about 6-8 minutes. *Reduce heat as needed to prevent boiling over.
  • Once thickened, remove from heat. Add the Parmesan and cheddar cheese and stir until melted. Pour the mixture over the cooked cauliflower and pasta.
  • Add diced ham to the baking dish and stir, then top with the remaining ½ cup of cheddar and sprinkle with Panko breadcrumbs.
  • Bake, uncovered, for 15-20 minutes until the sauce is bubbling around the edges and the topping is lightly browned. Remove from the oven and serve.

1 medium head cauliflower, cut into bite-sized florets
5 cloves garlic, peeled and smashed
2 tablespoons olive oil, or more to taste
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (16 ounce) package penne pasta
1 cup grated Parmesan cheese
¼ cup seasoned bread crumbs
1 teaspoon ground cayenne pepper
2 tablespoons salted butter
¼ cup lemon juice

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss cauliflower with garlic cloves, olive oil, salt, and pepper in a large bowl. Spread out in an even layer on a baking sheet.
  • Roast in the preheated oven, tossing at least twice, until cauliflower is tender, about 30 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Mix Parmesan cheese, bread crumbs, and cayenne pepper together in a bowl; set aside.

1 head cauliflower
2 tablespoons butter
1/4 cup finely chopped red onion
1/2 lb cooked ham, cut in 1/4-inch cubes
1/2 cup fire- roasted sweet peppers, chopped
1 (16 ounce) jar ragu double cheddar cheese sauce
4 ounces shredded sharp cheddar cheese
1/2 teaspoon ground chipotle chile pepper
salt & freshly ground black pepper, to taste

Steps:

  • Cut cauliflower into 1/2-inch pieces; steam or microwave until just tender. Drain in a colander and set aside.
  • Saute onion and cubed ham in butter in a large saucepan over medium-high heat until onions are translucent.
  • Stir in cheese sauce, fire-roasted peppers, and chipotle pepper and reduce heat to medium-low.
  • Cook, stirring occasionally, until sauce is heated through.
  • Add about half of the shredded cheddar and stir until melted. Repeat with the remaining cheddar.
  • Add salt and freshly-ground black pepper to taste.
  • Add cooked cauliflower to sauce and stir gently to distribute sauce evenly.
  • Pour into a buttered casserole dish and bake at 350°F for about 20 minutes or until bubbly.
