CHEESY LAYERED GROUND BEEF AND PASTA CASSEROLE
This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

Steps:
- Set oven to 350 degrees.
- Grease a large lasagna dish.
- Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
- In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
- Spread 1/2 meat sauce on bottom of pan.
- Spread 1/2 noodles on top of sauce.
- Top noodles with 1 cup mozza cheese.
- Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
- Spread over mozzeralla cheese.
- Top with remaining tomato sauce, noodles,and remaining mozza cheese.
- Sprinkle with remaining 1/2 cup Parmesan cheese.
- Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
- Return to oven to bake for another 10-15 mins, or until bubbly.

This has been sitting in my recipe file for decades and I don't think I've made it since before my husband passed. It's an easy dish to make and fills you up and tastes good too. Good if you're on a budget. 07-16-14

Steps:
- 1. Cook macaroni according to package directions; drain.
- 2. Place butter in a large skillet. Add onion and celery and cook slightly (5 minutes--do not brown) over medium-low heat. Add ground beef and fry until browned. Season with salt and pepper to taste. Stir in tomato sauce and simmer, covered, until heated through.
- 3. Pour the hot meat sauce over the macaroni and serve immediately.
KITTENCAL'S GROUND BEEF-MUSHROOM PASTA CASSEROLE
I have listed the water as optional if you are using a thick rich prepared pasta sauce then add it in, adjust the chili flakes to suit heat level, for ease --- for ease I have canned mushrooms listed you may of coarse use fresh sauteed if desired.

Steps:
- In a medium pot cook the ground beef with onion until no longer pink; drain all fat.
- Add in garlic and chili flakes; cook stirring for 2 minutes.
- Add in 4-1/2 cups prepared pasta sauce and 1 teaspoon salt; bring to a simmer over medium heat.
- Reduce the heat to low and simmer uncovered for about 45 minutes stirring occasionally (if you find that the sauce is too thick add in water and continue cooking for another 20 minutes).
- Season with more salt if desired and black pepper about halfway through cooking.
- Meanwhile in a large pot cook the pasta in boiling water until about halfway cooked, leave fairly firm do not cook until soft as the pasta will cook more in the oven) drain and place into a large bowl.
- Add in the meat sauce, two cans drained mushrooms and 2 cups mozzarella cheese; mix until well combined.
- Spread into prepared baking dish.
- Sprinkle the parmesan cheese over the top.
- Cover with foil and bake for about 35-40 minutes.
- Sprinkle with 1 cup (or more) mozzarella cheese and return to oven uncovered for another 3-4 minutes.

SKILLET GROUND BEEF & PASTA CASSEROLE
This recipe was created one day when I was tired and didn't want to go to the store to get items for supper. I had to use what was in the pantry and in the refrigerator. My family loved it and it was very quick and easy to make.

Steps:
- 1. Brown ground beef, onion and garlic in skillet until no pink is visible. Drain any fat. Add spaghetti sauce, let simmer approxiamtely 25-30 minutes.
- 2. Cook pasta according to package instructions. Drain and return to same pot. Add small to medium amount of mozzarella to pasta and stir to incorporate. Add to ground beef mixture.
- 3. Divide individule portions into bowls. Sprinkle small to medium amount of cheddar cheese on top. Let stand a few seconds for cheese to melt. If not completely melted, stick in the microwave 10-15 seconds until melted.
GROUND BEEF AND PASTA CASSEROLE WITH A TWIST
This is a my own combination of recipe #35752 and #10107. Nice cinnamon taste and a definite change from your usual ground beed and pasta dish.

- In a skillet cook beef, onion, garlic until beef no longer pink.
- stir in the tomatoe sauce and seasoning.
- Simmer for 15 minutes stirring occasionally.
- Meanwhile, cook the pasta in salted water. Drain.
- For the sauce:.
- In a saucepan, melt butter, stir in flour and cinnamon until smooth.
- Gradually add milk and stir until thickened, add seasoning.
- To assemble:.
- Mix together the cooked pasta, the egg, the sauce and the parmesan cheese.
- Spread half of the pasta mixture at the bottom of a baking dish.
- Top with beef mixture.
- Cover with the remaining pasta mixture.
- (Alernatively you can spread the whole pasta mixture at the bottom and top with beef mixture).
- Sprinkle with extra parmesan cheese.
- Bake in a 350 oven for 35-45 minutes, or until golden brown.
