ALMOND MACAROONS -- THE PASSOVER COOKIES
There they are, every single Passover, those Macaroons. You can't escape them! I, personally, am not a fan of the coconut macaroon, which is the more popular kind of Passover cookie you find in the supermarket. But an almond macaroon? That's almost worth the whole holiday!

Steps:
- Combine all the ingredients, except for the egg whites.
- Stir in the egg whites.
- The dough will be like thick, wet sand.
- Roll into one inch balls.
- Place on a greased (or foil lined, or parchment paper lined) cookie sheet and flatten slightly.
- Press an almond sliver into each cookie.
- Bake at 350°F.
- for 15-20 minutes, until dry and lightly brown.
PASSOVER ALMOND CHOCOLATE CHIP COOKIES
These quick and easy cookies are chewy and yummy. Though kosher for Passover, they contain no matzo meal, so they're also suitable for someone who's allergic to wheat. It's my modification of a recipe from The Gourmet Jewish Cook by Judy Zeidler.

Steps:
- Preheat oven to 400.
- Beat eggs and egg whites briefly.
- Mix in all the other ingredients, adding the chocolate chips last.
- Roll into 1 inch balls and place on a greased cookie sheet.
- Bake for 10-15 min until cookie bottoms are brown, but not burnt.
- Let cool briefly, but remove while still warm.

PASSOVER ALMOND THUMBPRINT COOKIES
These delicate little almond cookies, from "Gourmet" (April 2006), are really delicious. They don't taste like Passover cookies and are good enough to eat year-round. The contrast between the crisp cookie and gooey-sweet jam is pretty addictive; you may want to double the recipe. You can substitute a whole almond for the jam, if you prefer. If you like marzipan, you'll love these! And they are quick to whip up. Dough requires 1/2 hour to chill.

- Pulse almonds, sugar, matzo cake meal, and salt in a food processor until finely ground. (Be careful not to grind to a paste.) Transfer to a bowl and stir in butter, egg, and extracts until combined well. Chill dough, covered, until firm, about 30 minutes.
- While dough chills, put oven rack in middle position and preheat oven to 350°F.
- Drop level tablespoons of dough 1 inch apart onto 2 ungreased baking sheets. Roll dough into balls, then chill until slightly firm, about 10 minutes. Make a 1/2-inch-wide (1/3-inch-deep) indentation in center of each ball using your thumb, index finger, or the rounded end of a wooden spoon. Fill each indentation with 1/4 teaspoon jam and bake, 1 sheet at a time, until tops are pale golden and undersides are golden, 14 to 18 minutes. Transfer cookies to a rack and cool completely.

ALMOND MANDEL BREAD COOKIES (WITH PASSOVER VERSION)
Recipe for traditional almond mandel bread cookies with a no flour Passover recipe option.

- Pre-heat the oven to 350 degrees.Using a stand or hand mixer, cream together the eggs and sugar until lightened in color. Beat in the butter and almond extract.In a separate bowl, sift together the salt, baking powder and all purpose flour (or the combination of potato starch and cake meal).Fold the dry ingredients into the wet, stir in the sliced almonds, and turn out onto a baking sheet lined with parchment paper.
- Note that the dough will be very sticky and you'll need additional flour (or cake meal) to shape it into a loaf, approximately 3" high.Bake for 45 minutes and slice, with a serrated knife, while still warm.
PASSOVER "PB & J" FLOURLESS ALMOND BUTTER COOKIES
Delicious! Almond butter is my Pesach discovery this year. We don't use matzah meal (gebrocks), so are always searching for quick, easy & delicious cookie recipes. This one mixes up in seconds and tastes almost like peanut-butter "thumbprint" cookies - with just a dab of raspberry jam / jelly or whatever you have on hand.

- Mix all ingredients together in a large bowl until well-blended.
- Use a teaspoon to scoop out a smallish amount.
- Roll into balls and place on parchment-covered baking sheet.
- Carefully press each ball down with a fingertip - balls are fragile, try to keep them from splitting open or you'll lose your jam.
- Balls should resemble a bird's nest.
- With another, clean spoon (we always keep our jams pareve and nut-free - you never know who might be stopping by!), scoop 1/4 to 1/2 a teaspoon of jam or jelly and slide it into the "nest".
- Repeat until all "nests" are full.
- Bake at 350 degrees for 10-12 minutes.
- Allow to cool & solidify before peeling from parchment.
- Finish cooling on wire rack before serving.

- Preheat the oven to 325°F Lightly grease (or line with parchment) two baking sheets.
- Blend the almond paste, sugar, and salt until the mixture becomes uniformly crumbly; this is best done in a stand mixer.
- Add the egg whites gradually, while mixing, to make a smooth paste.
- Stir in the flavorings.
- Scoop the dough by heaping tablespoons onto the prepared pans.
- Sprinkle the cookies heavily with confectioners' sugar, then use three fingers to press an indentation into the center of each cookie.
- Bake the cookies for 20 to 25 minutes, until they're brown around the edges. Remove them from the oven, and let them cool right on the pan.
