SMOKED SALMON PARTY ROLL-UPS
Very colorful and delicious appetizer that looks as great as it tastes. Kind of sushi looking. Chill time includes 2 hours.

Steps:
- Mix cream cheese and feta. Spread evenly on the tortillas.
- Top evenly with spinach leaves and salmon.
- Roll up tortillas tightly; wrap individually in plastic wrap. Refrigerate at least 2 hours.
- To serve, remove plastic wrap,. Cut each roll up crosswise into 12 pieces. Arrange on serving dish.
- Note: You could also substitute ham for the salmon. And if you cannot find the green tortillas, you can use regular. It's just prettier with the green/spinach tortillas.

HAM AND CHEESE PARTY ROLL UPS
I have had this recipe since the 1970's....I do not know where I got it from,but it is one of my requested party foods .I often take them to church or serve them at party's.They can be made and frozen ahead of time .I use a sharp Cheddar Cheese most of the time ,but have made them with different types of cheese..

In a small bowl ,combine Cheddar Cheese ,Cream Cheese,and Margarine,untill well blended.Take a ham slice and spread cheesee mixture thinly on the ham slice.Roll up from short side.Chill for several hours or over night or wrap and freeze if you are making them ahead.To serve, slice roll's in to 4 pieces and secure with a tooth pick .Or you may slice them in to 1/2 inch slices and serve on crackers.If frozen let stand at room temperture for 20 minutes before serving...Be sure to use a sharp knife when slicing .Slice only after chilled

Cold cuts and cream cheese are a staple in our refrigerator, so when I'm not in the mood for bread, I like to make these "naked" sandwiches, which also make great appetizers. The possible combinations are endless, but these "gentlemen" are my favorites. You can also make these with a tortilla as the outside layer. Amounts are approximate (play around with it) and listed per roll-up.

Steps:
- For each roll-up, spread the cream cheese as evenly as possible across the slice of meat (but don't be anal about it if it glops up a bit--room temperature cream cheese is ideal).
- Then spread or sprinkle the other filling on top.
- Roll it up.
- Make as many as you want.
- Eat or serve as is or cut on the horizontal into pinwheels (not recommended for the salami unless you've got a tortilla on the outside).
- Optional: garnish with toothpicks securing a cranberry for each American, a dried apricot for each Englishman, and an olive for each Italian.
- Feel free to add additional seasonings: some like the American with a little mayo in it, some like the Englishman with a touch of dijon mustard, and some like the Italian with garlic powder (or an herbed cream cheese)-- horseradish might go in there somewhere!

IMPOSSIBLE™ BURGER PARTY ROLL-UPS
Allrecipes has made me an Impossible™ Burger fan. The fam too! These roll-ups are a tasty treat for game day or movie night. Start with a 1/2 package of onion soup mix and add more to taste. I like the flavor of the full packet, but I've been told I like my food salty. It may be too much for some. Serve with your favorite burger condiments.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 10-inch pie dish with cooking spray.
- Heat oil in a pan over medium heat; add meatless ground beef. Break up and cook through until browned and crumbly. Shake onion soup pouch, mixing up contents well. Using a spoon, scoop up half of the soup mix and incorporate into the pan. Add more to taste; discard remaining mix or reserve for another use. Stir in water.
- Remove from heat and fold in Cheddar cheese. The cheese should not be entirely melted, just evenly distributed through the mixture.
- Divide meatless mixture into 8 equal portions. Unroll crescent roll dough on a work surface, working on one at a time. Press dough with your fingers to flatten and slightly enlarge the space, making sure the widest area is facing you. Mound one portion of meatless beef mixture on the wide area and gently roll up to the tip. Tuck the edges of the roll up around the side of the bundle. Place in the pie plate. Repeat.
- Bake in the preheated oven until golden brown, about 15 minutes.
