These grilled teriyaki chicken skewers are delicious appetizers that can be made either on an outdoor or indoor electric grill.

1 pound Chicken Thighs, cut into 1-inch pieces
2 tablespoons Teriyaki Marinade/Sauce
1 tablespoon Honey
1 teaspoon Grated Fresh Ginger
1 tablespoon Cornstarch
1/8 teaspoon Black Pepper
¼ teaspoon Salt
2 tablespoons Teriyaki Sauce/Marinade
1 teaspoon Low Sodium Soy Sauce
1 tablespoon Honey
¼ cup Water (or more, if needed)
1 teaspoon Cornstarch
2 teaspoons Water
Sesame Seed

Steps:

  • Cut the thighs into 1-inch (2.5 centimetre) pieces. Place them into a mixing bowl. Add the rest of the ingredients and stir well (I love using kitchen tongs to mix this).
  • Thread the pieces onto skewers (fill about 4 inches/12 centimetres of each skewer), making sure to leave little gaps between the meat for more even cooking.
  • Cook on a grill until ready (see note 1).
  • Meanwhile: In a sauce pan, combine teriyaki sauce, honey, soy sauce and water and simmer on low for about 2 minutes. Slowly pour in cornstarch slurry (1 teaspoon of cornstarch mixed with 2 teaspoons of water), while mixing constantly until it has thickened. Once it comes to a boil, turn off.
  • Brush each skewer with some of the sauce and sprinkle (optional) with sesame seeds.
  • Enjoy!

If 'teri' means 'shine,' and 'yaki' refers to grilling, then these chicken skewers are the poster children for teriyaki. Marinated in soy sauce, sake, and mirin, the chicken is grilled to sweet, smoky perfection and dipped in a refreshing, herby miso 'ranch' sauce that'll send your summer cookout guests into a frenzy. The only bottles not invited to this party are bottled teriyaki sauces! Garnish with sesame seeds if desired.

12 bamboo skewers
2 pounds skinless, boneless chicken thighs
½ cup soy sauce
½ cup sake
⅓ cup mirin (Japanese sweet wine)
2 teaspoons finely grated ginger
2 tablespoons minced green onions
¼ cup brown sugar
1 tablespoon vegetable oil
¾ cup mayonnaise
¼ cup sour cream
⅓ cup buttermilk
1 tablespoon white miso paste, or to taste
1 tablespoon minced green onion
1 clove garlic, crushed
1 tablespoon finely chopped fresh tarragon
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh chives
freshly ground black pepper to taste
1 pinch cayenne pepper

Steps:

  • Soak bamboo skewers in water.
  • Cut chicken thighs in half lengthwise along the creases and halve the thicker portions to get 3 or 4 pieces each. Place chicken in a bowl. Pour in soy sauce, sake, mirin, ginger, green onions, brown sugar, and oil. Toss by hand until well combined and brown sugar is dissolved. Cover top in plastic wrap and marinate in the refrigerator for 2 to 6 hours.
  • Combine mayonnaise, sour cream, buttermilk, and miso in a bowl. Add green onion, garlic, tarragon, dill, and chives. Season with black pepper and cayenne. Whisk dressing until thoroughly combined.
  • Thread chicken pieces onto skewers. Strain marinade into a saucepan and bring to a boil to make the glaze.
  • Preheat a grill for medium-high heat. Grill skewers, basting with some of the reserved marinade, until meat firms up and springs back to the touch, 4 to 5 minutes per side.
  • Serve skewers next to the miso ranch dressing and brush with reserved glaze.

1 lb boneless, skinless chicken thighs, cut into 1-inch cubes
1 cup soy sauce
¾ cup brown sugar
1 tablespoon sesame seed
¼ cup green onion, chopped
1 pineapple, diced into 1-inch cubes
4 skewers bamboo skewer, soaked in water for 20 minutes

Steps:

  • Preheat grill to medium heat.
  • Combine the chicken, soy sauce, brown sugar, sesame seeds, and green onions, stirring until evenly coated.
  • Chill and marinate for at least 2 hours.
  • Slide a piece of chicken down the skewer, alternating with the pineapple, until there is a 1-inch gap on the top of the skewer.
  • Repeat with the remaining chicken, pineapple, and skewers.
  • Grease the surface of the grill by rubbing the grates with tongs and an oiled paper towel.

With their tasty glaze, these chicken teriyaki skewers make a fab first course or party nibble. You can get ahead by preparing the sauce, threading the chicken onto the skewers and toasting the sesame seeds a couple of hours in advance. Equipment: you will need 6 metal skewers.

50ml/2fl oz soy sauce
50ml/2fl oz mirin
2 tbsp rice vinegar
1 tbsp light brown sugar
1 garlic clove, grated
2.5cm/1in piece fresh root ginger, peeled and grated
1 tsp cornflour
3 skinless, boneless chicken thighs
1 tbsp sesame seeds, to garnish
vegetable oil, for cooking

Steps:

  • Heat the soy sauce, mirin, rice vinegar, brown sugar, garlic, ginger and cornflour in a small saucepan and bring to the boil. Turn down the heat and simmer gently for 8-10 minutes, stirring occasionally, until thickened and glossy.
  • Cut each chicken thigh into three or four strips. Thread the chicken strips onto the skewers.
  • Toast the sesame seeds in a small frying pan.
  • To cook the skewers, heat a large frying pan over a medium heat. Add a drizzle of oil and once hot, add the chicken skewers. Brush with the sauce and cook for 3-4 minutes on each side, brushing regularly with the sauce and turning frequently until the chicken is cooked through and coated in all the sauce. Serve hot, sprinkled with the toasted sesame seeds.

¼ cup pineapple juice

¼ cup hot honey (such as Mike's Hot Honey®)

½ teaspoon salt
½ teaspoon ground ginger

1 pound skinless, boneless chicken thighs, cut into strips

Steps:

  • Combine soy sauce, 1/4 cup plus 3 tablespoons pineapple juice, 1/4 cup plus 3 tablespoons hot honey, garlic, brown sugar, salt, and ginger in a saucepan; stir until well combined. Cook over medium heat until sauce is just starting to boil, about 5 minutes. Reduce heat to low and whisk in cornstarch until well incorporated. Cook, stirring constantly, until mixture starts to thicken, 1 to 2 minutes. Remove teriyaki sauce from heat.
  • Thread chicken into skewers. Season both sides with salt and pepper. Brush chicken on both sides with teriyaki sauce, reserving remaining sauce, and refrigerate at least 2 hours or overnight for best results.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Place chicken skewers on the prepared baking sheet.
  • Bake in the preheated oven for 10 to 13 minutes. Remove from oven.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Brush skewers with more sauce. Broil each side for 2 to 3 minutes. Serve with extra teriyaki sauce on the side.

1/3 cup brown sugar, packed
2 teaspoons apricot jam
1 1/3 teaspoons ground ginger
2 garlic cloves, pressed
2 chicken breasts, boneless skinless cut into 1-inch lengths
8 green onions, cut into 1-inch lengths
6 -8 skewers, soaked in water

Steps:

  • Whisk together soy sauce, brown sugar, jam, ginger, and garlic in a shallow bowl. Add chicken to sauce; toss to coat.
  • Cover and refridgerate for one to 8 hours, stirring occasionally.
  • Alternate chicken and onions on skewers, reserving marinade.
