- 1. To make the burger patty: In a bowl, place the ground chuck, mix in the egg, chives, parsley, garlic, steak seasoning, oregano, chile flakes, sea salt and pepper. Mix together 30 seconds, don't over mix, cover and refrigerate while preparing the toppings.
- 2. To prepare toppings: cook bacon until golden and crispy (softer if preferred)drain. Heat the broiler: line a baking sheet with parchment paper. Brush both sides of the pineapple with butter and lightly sprinkle with brown sugar. Place in oven, broil until caramelized, about 5-7 minutes.
- 3. Next shape the beef mixture into 4 patties. Heat canola oil in a pan on medium high. Sear patties for 2 minutes each side until they develop a nice crust. Reduce heat to medium-low and cook for an additional 3 minutes per side. Top each patty with a slice of mozzarella cheese and melt.
- 4. To make the chipotle sauce, blend the mayonnaise, chipotle peppers, salt and pepper. Slather the sauce on a bun, top with burger patty, bacon, pineapple, lettuce, tomato, pickles..ENJOY!!
PARSLEY'S PINEAPPLE BURGERS
In the summer grilling season, I like to experiment with different burgers so it's not the "same old" burgers each time. This recipe is one of my favorites.

- In a large bowl, mix together (with clean hands) ground sirloin, soy sauce, pineapple and garlic. Add beaten eggs---mix well. Add bread crumbs----mix well. Shape into patties approximately 1/4 lb each. Grill as usual. Serve on buns with favorite condiments.

Steps:
- Divide meat into 4 equal patties.
- Drain pineapple.
- Put 1-1/2 slices on each of two patties.
- Put remaining patties on top of pineapple-meat patties and seal edges (You now have two meat patties with pineapples inside).
- Broil patties to desired doneness.
- SAUCE: Put ketchup, brown sugar,and mustard into saucepan, heat over low heat until bubbly,stirring so sugar does not stick.
- Remove burgers when done, and pour sauce over burgers.
- Serve with dinner roll, or rice.
HAWAIIAN HAMBURGERS WITH GRILLED PINEAPPLE
Plan ahead the shaped uncooked burger patties need to marinate for a minimum of 6 hours to blend the flavors before grilling. If possible use fresh pineapple rings for this about 1/2-inch thick or a little larger. If you prefer a little kick then add in a small amount of cayenne pepper --- You can also use half ground pork and beef --- you will LOVE these burgers!

- In a large bowl whisk/mix the first six ingredients together until well blended.
- Add in the ground beef with garlic, green onions, black pepper and salt; mix to combine.
- Shape the ground beef into 7-8 patties (about 1-inch thick).
- Place the shaped patties on a baking sheet; cover with plastic wrap and refrigerate for about 6 hours.
- Grill the burgers over medium-high heat, brushing with soy sauce while grilling.
- Grill for about 6 minutes per side.
- The last 4 minutes or grilling place the pineapple slices on the grill; lightly brown on both sides (about 2 minutes per side).
- Place a lettuce leaf on each crusty bun.
- Top with a grilled burger and then a slice of grilled pineapple.
- Delicious!
PINEAPPLE BACON BURGERS
Seasoned hamburger and a slice of pineapple are slapped together, and wrapped in bacon. It's that easy, and adds a wonderful flavor to a regular burger! This recipe was one of my grandmother's favorites. We would make these special for her when she would come up to see us.

- Prepare grill for indirect cooking.
- In a large bowl, mix together hamburger meat and barbecue sauce. Season with salt and pepper.
- Shape mixture into 4 large patties. Place a slice of pineapple on top of each. Crisscross 2 bacon strips around each burger, and secure with toothpicks.
- Brush oil on grate. Place burgers on grill over medium low heat. Cook, covered, until the burger is cooked through. Turn often to avoid burning the bacon.
