Cabbage and Parsley Slaw with Capers image

This is an easy salad is a perfect way to utilize bright parsley as an ingredient instead of as a garnish. We recommend using flat-leaf (or Italian) parsley for a more intense flavor.

2 tablespoons red-wine vinegar
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1/2 head green cabbage (about 1 pound), shredded
3 tablespoons capers, rinsed, drained, and coarsely chopped
1 cup packed fresh parsley leaves, chopped

Steps:

  • In a bowl, whisk together red-wine vinegar and extra-virgin olive oil; season with coarse salt and ground pepper. Add green cabbage, capers, and parsley leaves; toss to combine. Season with salt and pepper.

1/2 cup mayonnaise
2 tablespoons sour cream
1 teaspoon white vinegar
1/4 teaspoon salt
2 teaspoons sugar
1 (10-ounce) bag finely shredded cabbage
1 cup finely chopped fresh flat-leaf parsley
1/2 cup finely chopped scallion

Steps:

  • In a large bowl, combine mayonnaise, sour cream, vinegar, salt and sugar. Add cabbage, parsley and scallions and toss to combine.
  • Serve immediately. Slaw can be refrigerated for up to 1 day.

1 medium head cabbage, shredded (about 6 cups)
2 cups minced fresh parsley
1 celery rib, chopped
6 bacon strips, cooked and crumbled
1-1/2 cups Miracle Whip
2 tablespoons plus 1 teaspoon Worcestershire sauce
3/4 teaspoon onion powder

Steps:

  • In a large bowl, toss the cabbage, parsley, celery and bacon. In a small bowl, combine Miracle Whip, Worcestershire sauce and onion powder. Pour over cabbage mixture and toss to coat. Cover and refrigerate for at least 2 hours.

3 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon finely grated orange zest
1/2 teaspoon honey
1/2 teaspoon kosher salt or fine sea salt
1/8 teaspoon freshly ground black pepper
Slaw
1/2 fennel bulb, cored and thinly sliced lengthwise
½ tart apple, such as Granny Smith--cored, sliced into ¼- to 1/8-inch-thick
pieces, then stacked and sliced into 1/4- to 1/8-inch-thick matchsticks
1 cup flat-leaf parsley leaves, finely chopped
1 medium red beet--peeled, ends trimmed, sliced into 1/4- to 1/8-inch-thick
pieces then stacked and sliced into 1/4- to 1/8-inch-thick matchsticks

Steps:

  • 1. Make the dressing: In a small bowl, whisk together the oil, lemon juice, orange zest, honey, salt and pepper and set aside. 2. Make the slaw: In a medium bowl, toss together the fennel, apple and parsley leaves. Add two-thirds of the dressing. In a small bowl, combine the beet with the remaining dressing. Add the beet to the fennel-apple mixture and toss once or twice to combine (don't overmix; otherwise the beets will stain the fennel and apple). Serve immediately (or refrigerate up to 8 hours before serving; let the slaw sit out at room temperature for 30 minutes before serving).

2 cups snow peas, blanched, halved
2 cups matchlike carrot sticks
4 green onions, finely chopped
12 small radishes, thinly sliced
1/3 cup KRAFT Asian Toasted Sesame Dressing
zest and juice from 1 lime
2 Tbsp. sesame seed, toasted

Steps:

  • Combine parsley and vegetables in large bowl.
  • Mix remaining ingredients; drizzle over salad.
