1.5 Pounds Chicken Breasts, (Cut into 1 inch pieces)
4 Tablespoons Butter
1 Large onion, (Diced)
3 Cloves Garlic, (Minced (3 Teaspoons))
2 Teaspoons Italian Seasoning
1/2 Teaspoon Pepper
1 Teaspoon Salt
2 1/2 Cups Chicken Broth
1 Cup long grain white rice
1/2 Cup Heavy Cream
1/2 Cup Freshly Grated Parmesan Cheese
Parsley for serving, (Optional)

Steps:

  • Heat the butter in a large skillet over medium high heat. Add the onion and cook for 2-3 minutes, until beginning to soften.
  • Add the diced chicken to the pan along with the Italian seasoning, pepper, and salt.
  • Cook and stir for 5 minutes until chicken is golden on all sides.
  • Add the garlic and cook for one more minute, stirring constantly.
  • Add the chicken broth and rice to the pan and stir.
  • Bring to a boil, then reduce the heat to medium low.
  • Cover with a lid and simmer for 17-20 minutes, until rice is completely tender.
  • Stir in the heavy cream and parmesan. Serve immediately topped with parsley if desired.

2 cups reduced-sodium chicken broth
2 tablespoons lemon juice
1 cup uncooked long grain rice
1/2 cup chopped onion
1 large egg
2 tablespoons fat-free milk
3/4 cup panko bread crumbs
2/3 cup grated Parmesan cheese, divided
1 teaspoon dried oregano
1 pound boneless skinless chicken breasts
2 tablespoons olive oil
1 cup frozen peas (about 4 ounces), thawed
1/4 teaspoon grated lemon zest
Freshly ground pepper, optional

Steps:

  • In a saucepan, bring broth and lemon juice to a boil. Stir in rice and onion; return to a boil. Reduce heat; simmer, covered, until liquid is almost absorbed and rice is tender, 15-20 minutes., Meanwhile, in a shallow bowl, whisk together egg and milk. In another bowl, toss bread crumbs with 1/3 cup cheese and oregano. Pound chicken breasts with a meat mallet to 1/4-in. thickness. Dip in egg mixture, then in crumb mixture to coat both sides., In a large skillet, heat oil over medium heat. Cook chicken until golden brown and chicken is no longer pink, 2-3 minutes per side., When rice is cooked, gently stir in peas; cook, covered, until heated through, 1-2 minutes. Stir in lemon zest and remaining cheese. Cut chicken into slices; serve with rice. If desired, sprinkle with pepper.

1/2 pound sliced fresh mushrooms
1 tablespoon canola oil
1/2 cup grated Parmesan cheese
1/2 cup mayonnaise
1/2 teaspoon Italian seasoning
2 packages (10 ounces each) frozen brown and wild rice with broccoli and carrots
1/4 teaspoon salt
1/8 teaspoon pepper
6 boneless skinless chicken thighs

Steps:

  • Saute mushrooms in oil in a large skillet until tender. Meanwhile, combine the cheese, mayonnaise and Italian seasoning in small bowl; set aside., Place frozen rice mixture in a greased 13-in. x 9-in. baking dish; sprinkle with salt and pepper. This is my husband's recipe and everyone who has tried it loves it. Absolutely delicious

4 large chicken breast filets
2 beaten eggs
1/3 c parmesan cheese
salt and pepper
dash(es) paprika
ground rosemary
pinch ground red pepper
1 Tbsp vegetable oil
flour
1/4 c white wine
1 can(s) cream of chicken soup

Steps:

  • 1. Flatten chix breast with palm of your hand; salt and pepper and dust with flour.
  • 2. Mix the beaten eggs with the parmesan cheese. Dip the breasts in mixture; drain and brown lightly in oil. Remove from pan and place on lightly greased shallow baking dish. Sprinkle with rosemary and a little red pepper.
  • 3. Mix soup with the wine and pour half over the breasts. Bake uncovered at 350 for 45 minutes. Serve each filet over brown rice, and cover with the sauce made from the soup and wine. Serve immediately and bask in the praises.

1/2 cup chopped onion
1 teaspoon bottled minced garlic
1/2 teaspoon dried thyme
1 (8 ounce) package mushrooms, sliced
3/4 boneless skinless chicken breast, cut into bite-sized pieces
1/2 cup dry white wine
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup uncooked instant rice
1 cup reduced-sodium chicken broth
1/2 cup grated parmesan cheese
1/4 cup chopped fresh parsley

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add the onion, garlic, thyme, and mushrooms:saute 5 minutes or until onion is tender.
  • Add chicken; saute 4 minutes or until the chicken is lightly browned.
  • Add wine, salt, and pepper; cook 3 minutes or until liquid almost evaporates.
  • Stir in rice and broth. Bring to a boil: cover, reduce heat and simmer 5 minutes or until liquid is absorbed.
  • Stir in cheese and parsley.
  • Eat.
