Steps:
- Reserve 12 ham slices for later use. Finely chop remaining ham; mix with mayo and 2 Tbsp. cream cheese spread until blended.
- Cut 1-1/2-inch-wide slices off 2 opposite sides of each tortilla; discard or reserve trimmed ends for another use. (See tip.)
- Spread remaining cream cheese spread onto tortillas. Starting at one rounded side of each tortilla, place 6 olives, with pimento ends together, in vertical row on tortilla.
- Place 2 ham slices on center of each topped tortilla, overlapping edges of slices as necessary to completely cover center of tortilla. Spread chopped ham mixture onto ham slices; cover with spinach. Roll up tightly, starting at olive-topped sides. Wrap individually with plastic wrap.
- Refrigerate 1 hour.
- Cut each roll-up into 6 pieces before serving.
