2 cups chopped papaya (from 1 small peeled, seeded papaya)
1/2 cup ice
1 cup plain whole-milk yogurt
3 tablespoons sugar, or to taste
Pinch of ground cardamom
Pinch of coarse salt

Steps:

  • Combine papaya, ice, yogurt, sugar, cardamom, and salt in a blender; blend until smooth, 1 minute. Serve immediately.

This lassi is a variation on the tremendously popular North Indian mango lassi, using papaya and citrus for a bright and refreshing drink. I have changed the original recipe using soy or coconut milk yogurt instead of dairy. Use whichever yogurt you like. Adapted from Serious Eats.

2 cups ripe papayas, peeled, seeded, and cut into 1-inch cubes
1/2 cup soy yogurt (or vanilla coconut yogurt, or use dairy yogurt if you like)
2 tablespoons lime juice
3 tablespoons orange juice
1 tablespoon honey
1 pinch salt
1 cup ice cube

Steps:

  • Mix papaya, yogurt, lime juice, orange juice, honey, and salt in blender until smooth.
  • Add ice to blender and blend until smooth. Lassi should be thick.
  • Pour into 2 glasses and enjoy.

A twist on the mango lassi that uses fresh papaya and it's flavored with a bit of cardamom.

2 small ripe papayas
2 cups plain yogurt
4 to 5 green cardamom, crushed to a powder (discard outer pod)
4 ice cubes
suger (or powdered jiggery), as desired for sweetening

Steps:

  • 1. Peel the papayas and remove seeds. Cut papaya into 1-inch cubes.
  • 2. Add papaya chunks, crushed cardamom and sugar to a blender, and blend for 10 seconds. Add the yogurt and ice cubes, and blend again until smooth.
  • 3. Divide among 3 glasses, add a straw to each glass, and serve immediately.
