'NDUJA & SPRING GARLIC CARBONARA



'Nduja & Spring Garlic Carbonara image

Spicy pork sausage adds some spice to this spring-y pasta classic.

6 egg yolks1 cup grated Pecorino RomanoSalt1 lb (500g) spaghetti3T EVOO4 ozs (250g) 'ndjua1 bulb spring garlic, finely choppedĀ½ cup Italian white winePepper

Steps:

  • Whisk up eggs & cheese. Bring water to a boil. Season it with salt, cook pasta 1 minute less than package directions. Reserve 1 cup of boiling water, whisk into egg yolks. Meanwhile, heat EVOO in a large skillet, melt 'nduja into it, stir in garlic, add wine. Add pasta to 'nduja, toss and remove pan from heat, add tempered eggs & cheese, toss a minute more. Top pasta with black pepper. Pass extra cheese & EVOO at table.

2 pounds chicken tenders
Salt and pepper
1 cup all-purpose flour
3 eggs
A splash milk
2 cups honey nut flavored cereal (recommended: Honey Nut Corn Flakes)
1 cup bread crumbs
1 tablespoon sweet paprika
1 tablespoon poultry seasoning
2 tablespoons grill seasoning (recommended: Montreal Seasoning)
1/4 cup vegetable oil, eyeball it

Steps:

  • Preheat oven to 400 degrees F.
  • Season chicken tenders with salt and pepper. Place flour in a large shallow dish. Coat chicken in flour. Beat eggs and milk in a shallow dish. Combine cereal, bread crumbs, paprika, poultry seasoning, grill seasoning and vegetable oil in food processor. Transfer breading to a shallow dish. Place a nonstick baking sheet near chicken breading station. In batches, take flour coated chicken and coat in eggs then in breading and place on nonstick cookie sheet. When all the chicken has been coated, transfer to oven and bake 15 minutes, until evenly brown and cooked through. Cool and serve, or pack up for a picnic! This chicken may be served hot or cold.

1/2 cup chunky style peanut butter
2 tablespoons honey, a couple of drizzles
1 cup fancy granola with nuts and raisins
2 large bananas
4 ice cream sticks or chop sticks

Steps:

  • Heat the peanut butter in the microwave on high for 20 seconds to loosen it, then stir honey into it. Place the granola into a food processor and lightly process to crush up the granola, nuts, and raisins. Peel and cut each banana in half across the middle. Insert a popsicle or chop stick into the cut end of each half-banana. Spread 1 side of each banana stick with 1/4 of the peanut sauce then coat liberally with spoonfuls of granola, gently pressing it into the peanut butter. Eat the bananas right off the sticks, but serve on a plate to catch the crumbs.

1 1/2 pounds skinless, boneless chicken breasts (3 to 4)
1 cup flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 extra-large eggs
1 cup seasoned bread crumbs
1/2 cup grated Parmesan
Unsalted butter
Good olive oil
Bamboo skewers (6 to 10 inches long) or ice-cream sticks

Steps:

  • Lay the chicken breasts on a cutting board and slice each diagonally into 4 or 5 large strips.
  • Combine the flour, salt, and pepper on a dinner plate. Beat the eggs with 1 tablespoon of water on a second plate. Combine the breadcrumbs and Parmesan on a third plate. Dredge the chicken breasts on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread-crumb mixture, pressing lightly to coat.
  • Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large saute pan and cook the chicken strips on medium-low heat for about 3 minutes on each side, until just cooked through. Don't crowd the pan. Add more butter and oil and cook the rest of the chicken breasts. Serve each strip on a skewer or stick.
  • You can keep the chicken breasts warm for about 15 minutes on a sheet pan in a preheated 200 degree F oven.

24 CLAUSSEN Kosher Dill Pickle Slices
8 KRAFT Deli Fresh Swiss Cheese Slices
2 oz. (1/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 Tbsp. chili sauce
1/4 tsp. ground red pepper (cayenne)
48 RITZ Crackers
12 slices OSCAR MAYER Deli Fresh Shaved Black Forest Ham, cut in half

Steps:

  • HEAT grill to medium heat.
  • DRAIN pickles on paper towels. Meanwhile, cut cheese slices crosswise in half, then lenthwise into thirds. (You will get 6 pieces from each cheese slice.) Mix cream cheese, chili sauce and pepper until well blended.
  • TOP each of 24 crackers with 1 cheese piece, 1/2 tsp. cream cheese mixture, 1 ham piece and 1 pickle; cover with second cheese piece and cracker. Wrap 6 sandwiches in heavy-duty foil. Repeat with remaining sandwiches to make 4 packets. Place in cooler for transporting to tailgating party or other destination.
  • HEAT grill to medium heat. Grill packets 8 to 10 min. or until cheese begins to melt, turning after each minute.
  • Substitute:
  • Prepare using OSCAR MAYER Deli Fresh Shaved Smoked Turkey Breast.
  • Use Your Oven:
  • Heat oven to 350 degrees F. Assemble and wrap stacks as directed. Bake 5 to 7 min. or until cheese is melted.
  • Make Ahead:
  • Prepare foil packets as directed. Refrigerate until ready to grill.
