Steps:

  • INSTRUCTIONS.
  • Beat butter with fork in small bowl until light and fluffy. Stir in garlic, lemon juice, parsley, and 1/8 teaspoon salt until combined. Set aside.
  • Heat 1 tablespoon oil in 12-inch skillet over high heat until smoking. Meanwhile, toss shrimp, salt, pepper, and sugar in medium bowl. Add half of shrimp to pan in single layer and cook until spotty brown and edges turn pink, about 1 minute. Remove pan from heat; using tongs, flip each shrimp and let stand until all but very center is opaque, about 30 seconds. Transfer shrimp to large plate. Repeat with remaining tablespoon oil and shrimp; after second batch has stood off heat, return first batch to skillet along with flavored butter and toss to combine. Cover skillet and let stand until shrimp are cooked through, 1 to 2 minutes. Serve with lemon wedges, if desired.

8 (6 to 8-inch) bamboo skewers
16 jumbo deveined, peeled shrimp
16 sea scallops
Salt and pepper
1 teaspoon sweet paprika, 1/3 palmful
1/2 teaspoon crushed red pepper flakes, eyeball it
1 lemon zested and juiced
2 tablespoons chopped flat leaf parsley, a handful
1 tablespoon extra virgin olive oil, 1 turn of the pan

Steps:

  • Preheat a large nonstick skillet over medium high to high heat.
  • On bamboo skewers, thread 4 shrimp on 4 skewers, 4 scallops on each of 4 skewers. Season both shrimp and scallop skewers with salt and pepper on both sides. Combine paprika, crushed pepper, lemon zest and parsley in a small dish. Sprinkle combined herbs and spices over shrimp and rub. Add a 1/2 a turn of the pan of extra virgin olive oil, (1 1/2 teaspoons), to the hot skillet and sear the shrimps 3 minutes on each side or until curled and pink. Squeeze the juice of 1/2 lemon over the pan and remove to a warm platter. Return pan to the heat and add remaining oil. Cook scallops 3 to 4 minutes on each side or until caramel in color. Squeeze the juice of 1/2 lemon over the pan and transfer skewers to serving platter along side shrimp.

2 bulbs fennel, with stalks removed

1/4 cup virgin olive oil
3 Florida oranges
2 Florida grapefruits
2 pounds fresh Florida gulf shrimp
1/4 cup canola oil

Green Mango Jam, recipe follows
3 Green Florida mangoes, unripe
1/2 cup white vinegar
1/3 cup sugar
1 1/2 teaspoons salt
1-inch piece fresh gingerroot, peeled
1 fresh jalapeno chili
5 garlic cloves
1 teaspoon ground cumin
1 teaspoon ground coriander seeds
1/2 teaspoon ground turmeric
3-inch piece cinnamon stick
2 star anise
2 tablespoons corn oil

Steps:

  • Crispy Pan Seared Florida Snapper: With a sharp knife make small slices in the skin of the fish, making a crosshatching pattern. Pat completely dry with paper towels. Keep refrigerated until time to cook. Preheat a large saute pan on medium-high heat. Lightly dust the skin side of the fish with cornstarch and season lightly with sea salt and fresh ground pepper. Add enough oil to the hot pan to coat the bottom. Carefully lay the fish in the pan skin side down. Cook for several minutes, on both sides until skin is crispy and fish is just done. Cooking time will vary. Keep fish skin side up and transfer to a platter.
  • Florida Passion Fruit Cream: Place passion fruit, mirin and ginger in heavy medium sized saucepan. Boil until reduced to about 1/4 cup, about 6 minutes. Add wine and boil until reduced to about 1/4 cup, about 6 minutes. Add cream and coconut milk, bring to boil, then reduce heat to medium. Simmer sauce until slightly thickened, stirring occasionally, about 12 minutes. Stir in curry paste. Season sauce, to taste, with sea salt and fresh ground pepper. Strain through a fine mesh sieve or strainer lined with cheesecloth.
  • Florida Citrus and Shaved Fennel Salad: Whisk together vinegar, mustard, salt, and pepper in a large bowl. Add oil in a slow stream, whisking, until emulsified. Cut peel, including all white pith, from oranges and grapefruit with a paring knife. Working over a bowl, cut into segments. Squeeze juice from membranes into a small bowl, then whisk 3 tablespoons juice into vinaigrette. Drain citrus segments, then add to vinaigrette. Quarter fennel bulbs lengthwise, then cut into paper-thin slices, about 1/16-inch thick, with a slicer or mandolin. Add to fruit along with fennel and toss gently to combine.
  • Sauteed Florida Gulf Shrimp: Preheat a large skillet over medium-high heat. Peel and devein shrimp, leaving tails intact. Pat dry with a paper towel. Add oil to hot pan, and carefully add shrimp and season with salt and pepper. Saute until pink and just done. Place cooked shrimp on plate and serve with Florida Green Mango Jam.;
  • Florida Spicy Green Mango Jam: Peel mangoes and cut into 1/2-inch cubes. In a small bowl, toss mangoes with vinegar, sugar, and salt. To make seasoning paste: cut gingerroot into 4 pieces. For a milder chutney, while wearing rubber gloves, remove seeds and veins from jalapeno. Add to a food processor with motor running gingerroot, jalapeno, garlic, cumin, coriander, and turmeric, 1 at a time, and puree to a paste. Heat a 4-quart heavy pot over moderately low heat until hot. Cook seasoning paste, cinnamon stick, and star anise in oil, stirring frequently, for 10 minutes, or until very fragrant. Stir in mango mixture and simmer, covered, over low heat, stirring occasionally, until mangoes are tender, about 30 minutes. Remove cinnamon stick and star anise and cool chutney completely.

1 lb cod, fillets (cut into 4 fillets)
1/2 lb uncooked shrimp
2 tsp herbes de provence
1 tsp old bay seasoning
1 medium lemon juice, fresh
1/2 c white wine, dry
1/2 c chicken broth, low salt
3 Tbsp olive oil, extra virgin
pepper to taste

Steps:

  • 1. Lightly brush fish fillets with 1/3 olive oil.
  • 2. Sprinkle herbs, old bay and pepper on both sides of fish.
  • 3. In a heated skillet, add remining olive oil. Lightly brown fish and shrimp. This should take about 2-3 minutes. Turn. Add lemon juice, wine and chicken broth. Cook for an additional 2-3 minutes or until done.
  • 4. Remove fish to a warm plate. Reduce sauce and pour over fish.

2 cups chicken stock, plus extra to loosen, if needed
Salt and pepper
1 cup quick-cooking grits
1/4 cup heavy cream
1/2 cup havarti cheese, grated
1 tablespoon chopped fresh parsley
Grapeseed oil
2 bunches mustard greens, cleaned, thick stems discarded
Pinch red chile flakes
1/4 cup chicken stock
1 1/2 tablespoons unsalted butter, divided
2 (21/25) count shrimp, peeled, deveined, and rinsed
Salt and pepper
2 tablespoons white wine
2 to 3 tablespoons Romesco Sauce, recipe follows
1/4 cup blanched, slivered almonds
1 slice rustic white bread, diced into 1/2-inch cubes
1 teaspoon white balsamic vinegar
4 Roma tomatoes, cored and quartered
1/4 cup jarred roasted red peppers
1 clove garlic, minced
1 teaspoon paprika
2 tablespoons olive oil

Steps:

  • For the grits: Place a saucepan over high heat with the chicken stock, salt, and pepper. Bring to a boil, reduce the heat to medium-low, add the grits, and stir with a whisk. Once the grits come to a simmer, add the cream, again reduce the heat to low, and continue to cook until the grits just start to thicken, about 8 minutes. Add the cheese to the grits, taste for seasoning, turn the heat off, and allow the cheese to melt into the grits. Stir in the chopped parsley. Taste and season with salt, if needed. Cover and keep warm.
  • For the greens: In a medium pan over medium heat, heat the oil and saute the mustard greens until starting to wilt, about 1 minute. Stir in the chile flakes and cook 1 minute. Add the stock and bring to a simmer. Cook until the greens are just tender, 5 to 7 minutes.
  • For the shrimp: Heat a saute pan over medium heat and add 1 tablespoon butter, allowing the butter to melt.
  • Season the shrimp with salt and pepper and then add to the pan. Stir the shrimp while cooking. Cook until bright red, 3 to 4 minutes.
  • Once the shrimp are cooked, add the wine to deglaze the pan, allowing the wine to simmer for 1 minute until reduced.
  • Turn the heat off and add 2 to 3 tablespoons Romesco sauce, stirring in to coat the shrimp. Add the remaining 1/2 tablespoon butter to finish.
  • To plate, spoon the grits onto a plate, top with mustard greens, and top with shrimp.
  • Grind the almonds in a food processor until finely ground but not pureed. Add the bread, vinegar, tomatoes, peppers, garlic, and paprika to the processor and grind together briefly until evenly pureed. With the motor running, add the olive oil slowly until the sauce is thickened. Taste and season with salt.

2 lb extra large raw shrimp, peeled and deveined
2 large shallots, finely chopped
5 clove garlic, finely chopped
2 Tbsp olive oil
1 tsp garlic salt (can be adjusted according to taste)
1 tsp sugar
1/2 tsp crushed red chili flakes
1/2 tsp pepper, finely ground
2 Tbsp oyster sauce (in the asian aisle at grocery store)
1 lb fresh broccoli (chopped) or green beans

Steps:

  • 1. Mix all ingredients by hand in a large mixing bowl. Set aside.
  • 2. Add 1 tsp of olive oil to a wok or heavy non-stick pan. Heat over high heat until oil is very hot.
  • 3. Add shrimp and stir quickly otherwise shallots and garlic will burn. Cook until shrimp are pink in color and firm to the touch. Approximately 3-4 minutes depending on how large your shrimp are. Remove from heat and set aside.
  • 4. Add 1 tsp of olive oil to remnants in pan. Add fresh broccoli pieces or green beans and stir fry until bright green in color and remove from heat. Serve with jasmine rice or couscous.

Ingredients:
1 lemon sliced
1 pound of shrimp
3 clove of garlic
Red pepper flakes to taste
1 tbsp Olive oil
4 Tbsp unsalted butter, divided
1/2 cup chopped shallots
1 box of mushrooms
2 cup arborio rice
1/2 cup dry white wine
About 5 cups chicken stock
1/2 pound asparagus
1/2 cup freshly grated Parmesan cheese
Salt and pepper

Steps:

  • In a 3 or 4 quart saucepan, heat 1 tablespoon butter on medium heat. Add the shallots and cook for a minute or two, until translucent. Add the rice and cook for 2 minutes more, stirring until nicely coated. While the shallots are cooking, bring the stock to a simmer in a saucepan. Add the wine. Slowly stir, allowing the rice to absorb the wine. Once the wine is almost completely absorbed, add 1/2 cup of hot stock to the rice. Continue to stir until the liquid is almost completely absorbed, adding more stock in 1/2 cup increments. Stir often to prevent the rice from sticking to the bottom of the pan. Continue cooking and stirring rice, adding a little bit of broth at a time, cooking and stirring until it is absorbed, until the rice is tender, but still firm to the bite, about 20-25 minutes. With the last ladle of stock, add the asparagus. Turn off the heat. (Note the stock amount given is approximate. You may need a little more or less. If you end up needing more stock and you find yourself without, just use water). Gently stir in the Parmesan cheese and the remaining 1 tablespoon butter. Add salt and pepper to taste. As the risotto is finishing up. Heat a pan over medium heat with 1/2 tablespoon butter and 1 tablespoon olive oil. Salt and pepper the shrimp then add the garlic and the red pepper flakes if you'd like. Sear the shrimp on each side (about two minutes or until they start to curl, forming a letter C). Plate the risotto with 3 pieces of shrimp on top and serve immediately. Serve with a slice of lemon to be squeezed over top for a nice touch of acidity.

  • Bring enough water to a boil to cook pasta.
  • In large bowl, combine cream cheese, goat cheese, feta cheese, chopped shrimp, and chopped bacon. Foam into small balls.
  • Roll in bread crumbs.
  • In a small bowl, whisk eggs together.
  • Dip breaded balls into eggs and then back into the bread crumbs.
  • Using a large skillet, heat the basil-garlic oil and then place breaded balls into skillet and cook on medium to low heat turning often until golden all around.

1/4 teaspoon table salt
1/4 teaspoon ground black pepper
1/8 teaspoon granulated sugar

Steps:

  • Heat 1 tablespoon oil in 12-inch skillet over high heat until smoking. Meanwhile, toss shrimp, salt, pepper, and sugar in medium bowl.
  • Add half of shrimp to pan in single layer and cook until spotty brown and edges turn pink, about 1 minute. Remove pan from heat; using tongs, flip each shrimp and let stand until all but very center is opaque, about 30 seconds. Transfer shrimp to large plate. Repeat with remaining tablespoon oil and shrimp; after second batch has stood off heat, return first batch to skillet and toss to combine. Cover skillet and let stand until shrimp are cooked through, 1 to 2 minutes. Serve immediately.

2 tablespoons sliced green onions
2 pounds whole Moi (threadfin), cleaned and scored (can substitute snapper or seabass)
2 tablespoons Hawaiian red salt (can substitute kosher salt)
1 tablespoon freshly ground white pepper
3 tablespoons olive oil
2 ounces olive oil
1 medium Maui onion, small diced
2 ripe tomatoes, small diced
1 cup whole freshwater shrimp (can substitute any type of shrimp or squids)
2 tablespoons minced garlic
1 cup sliced fiddlehead ferns
1 tablespoon minced ginger
1/2 cup fish stock, vegetable stock, or clam juice
1/4 cup unsalted butter
2 lemons, juiced
3 green onions, sliced fine
Salt
Freshly ground black pepper
Braised Arugula, recipe follows
2 tablespoons olive oil
1/2 pound baby arugula, cleaned
1 tablespoon minced garlic
Salt
Freshly ground pepper

Steps:

  • For the fish: Gently rub the green onions over the Moi, then season with salt and pepper. In a large, hot saute pan, add the olive oil and gently place the fish in the pan. Sear over medium heat for 10 to 15 minutes, turning over 2 to 3 times, until crisp and golden brown.
  • For the Lomilomi: In a hot saucepan, add the olive oil and heat. When the olive oil is hot, add the onions and tomatoes and lightly sweat until the onions are soft and translucent. Next, add in shrimp, garlic, ferns, and ginger and continue to saute. Deglaze with the stock and reduce by half. Reduce the heat and whisk in the butter until melted. Finish with the lemon juice and green onions. Season, to taste, with salt and pepper.
  • Place the arugula in the center of a plate. Place the fish on top of the arugula and top off with the sauce.
  • In a large, hot saute pan, add the olive oil and arugula. Toss lightly and add in the garlic and saute for 1 minute. Season, to taste, with salt and pepper.

8 bamboo skewers
16 large deveined peeled shrimp
16 sea scallops
salt and pepper
1 teaspoon sweet paprika
1/2 teaspoon crushed red pepper flakes
1 lemon, juice and zest of
2 tablespoons chopped flat leaf parsley

  • On bamboo skewers, thread 4 shrimp on 4 skewers, 4 scallops on 4 skewers.
  • Season both skewers with salt and pepper on both sides.
  • Combine paprika, crushed pepper, lemon zest and parsley in small dish.

2 tablespoons fresh lime juice
2 large egg yolks
1/2 cup plus 3 tablespoons canola oil
1 tablespoon plus 1 teaspoon Thai red curry paste
Kosher salt and freshly ground black pepper
1 pound (21 to 25) tail-on shrimp, peeled and deveined
2 scallions, thinly sliced

Steps:

  • Whisk the lime juice and egg yolks in a large bowl. Slowly whisk in 1/2 cup of the oil, a few drops at a time, whisking constantly until all the oil is incorporated and the mixture is emulsified. Whisk in the curry paste. Sprinkle with salt and pepper.
  • Heat the remaining 3 tablespoons oil in a large saute pan over medium-high heat. Sprinkle the shrimp liberally with salt and pepper. In two batches, add the shrimp to the pan in a single layer and cook until lightly browned and the edges turn pink, 1 to 2 minutes. Flip and cook until the shrimp are cooked through, 1 to 2 minutes more.

2 T olive oil
1 lb large shrimp
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup shallots
6 garlic cloves, minced
1 cp uncooked carnaroli or arborio rice
1/2 cup dry white wine
1/2 cup grated parmesan
2 T butter
3 C baby arugula
1/2 cup thinly sliced fresh basil

Steps:

  • 1. Bring stock to simmer and keep over low heat. 2. Heat 1T oil in large nonstick skillet over medium-high heat. Sprinkle shrimp with 1/4 tsp salt and 1/8 tsp pepper. Add shrimp to pan, cook 1 minute. Remove pan from heat. 3. Heat remaining T oil in large saucepan over medium heat. Add shallots, garlic to pan, cook 5 minutes, stirring frequently. Add rice, cook 1 minute. Stir in wine; cook 1 minute or until liquid is nearly absorbed, stirring constantly. Add 1 cup stock; cook 4 minutes or until liquid is nearly absorbed, stirring constantly. Stir remaining stock, 1/2 cup at a time, stirring frequently (about 25 minutes total). Stir in shrimp; cook 1 minute or until done. Stir in cheese, butter, remaining salt and pepper. Remove from heat; stir in arugula and basil.
