4 whole catfish, cleaned with head and tail removed
½ cup prepared yellow mustard
¼ cup cracked black pepper
¼ cup olive oil
¼ cup butter

Steps:

  • Pat the catfish dry, and spread a layer of mustard over the surface. Place the cracked pepper onto a plate, and press the coated catfish into the pepper so it is well covered.
  • Heat the olive oil and butter in a large skillet over medium-high heat. Fry the catfish for 3 to 5 minutes on each side, or until fish flakes with a fork.

1/3 cup yellow cornmeal
1/4 cup pecans
Coarse salt and fresh ground pepper
4 skinless catfish fillets (6 ounces each), rinsed and patted dry
4 tablespoons vegetable oil
Lemon wedges (optional)
Carrot slaw with yogurt dressing
1 pound carrots, peeled
1/2 cup plain low-fat yogurt
2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/4 teaspoon sugar
1/4 cup finely chopped red onion
Coarse salt and fresh ground pepper
1/2 small white cabbage, halved crosswise and thinly sliced (5 cups)
2 tablespoons chopped fresh dill
(serves 6)

Steps:

  • Grind the cornmeal and pecans with 1 teaspoon salt and 1/4 teaspoon pepper in a food processor until the nuts are finely ground. Transfer to a large, shallow container. Dredge the catfish in the cornmeal mixture, patting it on to coat completely.
  • Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Cook 2 fish fillets until golden brown and firm to the touch, 4 to 5 minutes per side. Transfer the fish to a plate; sprinkle with salt, and cover to keep warm.
  • Wipe the skillet with a paper towel. Repeat with the remaining 2 tablespoons oil and fish. Serve with lemon wedges, if desired.
  • Carrot slaw with yogurt dressing
  • In a food processor fitted with the shredding disk (or on the large holes of a box grater), grate the carrots. In a large bowl, whisk together the yogurt, vinegar, mustard, sugar, and onion; season with salt and pepper. Add the carrots, cabbage, and dill to the bowl; toss well. Top the mixture with a plate that fits inside the bowl; weight with a heavy object. Let sit at room temperature for 20 minutes before serving.

1 teaspoon olive oil
1 teaspoon minced garlic
1/2 cup diced red onion
1/2 cup diced red pepper
1 1/2 cups fresh or frozen yellow corn kernels (about 3 ears corn, see note)
1 cup cooked butter beans
1 cup cooked black rice
1 cup cooked fresh spinach, chopped and squeezed dry
3/4 cup chicken stock, reduced by half
Salt and freshly ground black pepper, to taste
1/2 cup stone ground cornmeal
1/2 cup pecans, roasted, ground (see note)
Salt and freshly ground black pepper, to taste
8 (6-ounce) catfish fillets
4 tablespoons peanut oil

Steps:

  • Heat oil. Add garlic, red onion, red pepper and corn. Saute until vegetables are softened. Add beans, rice, spinach to saute pan and cook another 2 minutes. Add stock and salt and pepper. Bring to boil. Reduce heat and simmer 2 minutes. Cool. (See Cook's Note)
  • Mix cornmeal and pecans in bowl. Season catfish, dredge in pecan mix. Heat oil in 10-inch saute pan over high heat. Add catfish fillets and cook quickly, turning after 3 minutes (do this in batches if necessary, keeping cooked catfish warm until all fillets are done). Remove from heat and serve over succotash.
  • To roast nuts, heat dry saute pan over medium high heat. Add nuts and roast, tossing or stirring nuts frequently. Do not walk away from pan as nuts burn in an instant. When nuts are browned, remove pan from heat and turn nuts out onto cool plate so they stop cooking immediately.

CAJUN PECAN CATFISH

2 tablespoons olive oil
2 teaspoons lemon juice
1 teaspoon Cajun seasoning
1/2 teaspoon dried thyme
1/3 cup finely chopped pecans
2 tablespoons grated Parmesan cheese
1 tablespoon dry bread crumbs
1 tablespoon dried parsley flakes
4 catfish fillets (6 ounces each)

Steps:

  • Preheat oven to 425°. In a small bowl, combine oil, lemon juice, Cajun seasoning and thyme. In another bowl, combine pecans, cheese, bread crumbs, parsley and 1 tablespoon of the oil mixture., Place catfish in a greased 15x10x1-in. baking pan. Brush with remaining oil mixture. Spread pecan mixture over fillets. Bake until fish flakes easily with a fork, 10-15 minutes.

1 cup dry white wine
1/4 cup fresh lemon juice
1 tablespoon Worcestershire sauce
2 large garlic cloves, minced
1/2 cup whipping cream
3 tablespoons chilled unsalted butter, cut into pieces
Fish
1/2 cup (about) all purpose flour
1 cup whole milk
1 large egg
4 6- to 8-ounce catfish fillets
1 cup finely chopped pecans
1 tablespoon vegetable oil

Steps:

  • For sauce:
  • Combine wine, fresh lemon juice, Worcestershire sauce and garlic in small nonaluminum saucepan. Boil until liquid is reduced to 1/2 cup, about 8 minutes. Add cream. Boil until sauce thickens slightly, about 5 minutes. Reduce heat to low. Whisk in butter 1 tablespoon at a time. Season sauce to taste with salt and pepper. Strain sauce into small bowl. Return sauce to pan.
  • Meanwhile, prepare fish:
  • Preheat oven to 400°F. Place flour on large plate. Whisk milk and egg in shallow bowl to blend. Sprinkle catfish fillets with salt and pepper. Lightly coat catfish fillets in flour. Dip into milk mixture. Coat 1 side of fish with pecans. Lightly coat second side with flour.
  • Heat 1/2 tablespoon oil in large skillet over medium-high heat. Add 2 fish fillets to skillet, nut side down, and cook until nuts begin to brown, about 2 minutes. Turn fish over; cook 1 minute. Using metal spatula, transfer fish, nut side up, to rimmed baking sheet. Repeat with remaining fish and 1/2 tablespoon oil. Bake until opaque in center, about 10 minutes.
  • Transfer catfish fillets to plates. Serve catfish with sauce.

1 tablespoon olive oil
2 1/2 pounds catfish fillets, or any white-fleshed fish fillets, about 5 ounces each
Salt and freshly ground black pepper
1 1/2 cups chopped roasted red peppers
2 cloves garlic, minced
1 tablespoon fresh lime juice
1 teaspoon minced fresh ginger
1 teaspoon ground cumin
2 tablespoons chopped fresh cilantro leaves
1/4 cup sunflower seeds, toasted

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Season both sides of fish with salt and freshly ground black pepper.
  • Add fish fillets to skillet and cook 2 minutes per side flipping with a spatula or tongs, until golden brown and fork-tender. Remove from pan.
  • In a blender, combine roasted red peppers, garlic, lime juice, ginger, and cumin and puree until smooth. Transfer mixture to a small saucepan and bring to a simmer, about 5 minutes. Remove from heat and stir in cilantro.
  • Serve half of the fish with all of the sauce spooned over top. Sprinkle the top with toasted sunflower seeds. Reserve remaining fish for heros, if desired.

PAN-SEARED CATFISH WITH TOASTED PECANS AND CARROT EMULSION

When he attended the 1997 Workshop, Florida chef Pascal Oudin coated California salmon with a pecan crust, seared it, and paired it with a carrot emulsion. Brian has adapted the recipe to catfish, to give the dish some Floridian style, and replaced the crust with a toasted pecan garnish to make less work for home cooks. Serve with sautéed spinach or other wilted greens. On another occasion, prepare the silky carrot emulsion for grilled halibut or sea bass.

Number Of Ingredients 13

1/2 cup plus 1 tablespoon extra-virgin olive oil
1/3 cup minced shallots
2 teaspoons finely minced fresh ginger
1 teaspoon curry powder
3/4 cup dry sherry
2 cups fresh carrot juice
Kosher salt
2 tablespoons unsalted butter
1 teaspoon finely minced fresh ginger
1/2 cup coarsely chopped toasted pecans
6 (5-ounce) catfish fillets, about 1 inch thick
Freshly ground white pepper
4 tablespoons extra-virgin olive oil

Steps:

  • For the carrot emulsion: In a medium saucepan, heat 1 tablespoon of the olive oil over moderate heat. Add the shallots, ginger, and curry powder. Sauté until the shallots are softened but not colored, about 5 minutes. Add the sherry, bring to a simmer, and reduce until almost dry. Add the carrot juice and simmer briskly until reduced to 3/4 cup, about 15 minutes. Strain through a fine sieve, pressing on the solids with a wooden spoon to extract all their flavor. Slowly whisk in the remaining 1/2 cup olive oil. Season with salt. Keep warm.
  • Melt the butter in a small skillet. Add the ginger and sauté for about 1 minute to release its fragrance. Add the pecans and toss to coat. Season with salt and keep warm.
  • Season the fish all over with salt and pepper. Set 2 nonstick skillets over medium-high heat and add 2 tablespoons olive oil to each. When the oil is almost smoking, put the fish in the skillets, flesh side down. Sear until browned, about 3 minutes, then turn and cook on the second side until it has browned and the catfish just flakes when probed with a fork, about 5 minutes longer, lowering the heat as needed to prevent burning.
  • To serve, spoon about 2 tablespoons of sauce onto each of 6 warm dinner plates. Top with a catfish fillet. Spoon some of the buttered pecans over the fish. Serve immediately.
  • Enjoy with Cakebread Cellars Napa Valley Chardonnay or another full-bodied white wine.
