Pan seared tomatoes with basil and melted mozzarella sings on many nodes like a warm caprese salad. Tomatoes when pan seared release natural sweetness and wonderful tangy flavor. Addition of a pinch of sugar balances out the tomatoes acidity. Tomatoes and basil were always perfect together and melted cheese on top makes this a perfect savory side dish. Serve it with grilled chicken or lamb or with toasted rustic artesian bread.

2 Tomatoes, Roma or Large beefsteak tomato
2 tbsp Basil, fresh chopped
1/2 Cup Mozzarella Cheese, grated
Salt and Black Pepper, to taste
1/2-1 tsp Sugar, or more per taste

Steps:

  • Cut beefsteak tomatoes to 1 inch thick slices. If using Roma tomatoes, just cut in half.
  • Heat oil in a pan, sprinkle 1-2 pinch sugar on one cut side of tomato and place in pan. Sprinkle salt and pepper on the other side. Let it sear in pan till bottom is caramelized.
  • Turn the tomato upside down and sprinkle salt, pepper and cheese on the caramelized side.
  • Cover the pan with lid and cook till cheese starts to melt. Garnish with fresh chopped basil and serve hot.

1 small shallot, minced
2 pints grape tomatoes (4 cups)
2 tablespoons chopped fresh parsley
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over medium-low heat. Cook shallot, stirring often, until softened, about 5 minutes.
  • Add tomatoes and 1/2 cup water. Bring to a simmer; cook, covered, 5 minutes. Uncover, and raise heat to medium-high; cook, tossing often, until tomatoes have softened and water has evaporated, about 3 minutes.
  • Stir in parsley. Season with salt and pepper; toss to combine.

2 garlic cloves, minced
1 tablespoon minced fresh basil

Steps:

  • Heat 1 Tb. olive oil in a 12-inch skillet over medium-high flame until it just starts to smoke. Add tomatoes, and season with salt and pepper. Saute, shaking pan frequently, until tomatoes soften and skins just begin to wrinkle, about 2 minutes. Stir in the garlic and continue to shake the pan until garlic is fragrant. Off heat, stir in the basil and remaining 1 Tb. olive oil, then serve.

2 tablespoons olive oil
2 pints (4 cups) grape tomatoes
1 large shallot, finely chopped
2 tablespoons dry white wine
1 tablespoon chopped fresh thyme leaves
1 teaspoon coarse (kosher or sea) salt
1/2 teaspoon freshly ground pepper
1 tablespoon butter
1 container (8 oz) fresh mozzarella cheese in whey, drained, cubed
Fresh thyme sprigs and additional freshly ground pepper, if desired

Steps:

  • In 12-inch skillet, heat oil over medium-high heat. Cook tomatoes and shallot in oil 4 minutes, stirring frequently, until tomatoes begin to burst and skins are blistered. Gently press half of tomatoes with back of spoon to release juices.
  • Stir in wine, chopped thyme, salt and 1/2 teaspoon pepper, scraping bottom of pan to loosen browned bits. Add butter; simmer 5 minutes.
  • In serving dish, toss mozzarella with warm tomatoes. Garnish with thyme sprigs and additional pepper.

4 1/2 cups reduced-sodium fat-free chicken broth
2 tablespoons extra virgin olive oil, divided
2 cups chopped leeks
1 1/2 cups arborio rice or 1 1/2 cups other medium grain rice
1/3 cup dry white wine
1/4 cup half-and-half
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup halved grape tomatoes
1/4 cup chopped fresh basil
5 ounces fresh mozzarella cheese, finely diced

Steps:

  • Place vinegar in a small, heavy saucepan; bring to a boil over medium heat.
  • Cook until slightly syrupy and reduced to 1 tablespoon (about 4 minutes). Set aside.
  • Bring broth to a simmer in a medium saucepan (do not boil). Keep warm.

2 pints grape tomatoes
6 garlic cloves, smashed
1/4-1/2 teaspoon crushed red pepper flakes
2/3 cup olive oil
1 tablespoon olive oil
kosher salt
fresh ground black pepper, to taste
1 sprig fresh rosemary
1 sprig fresh oregano

Steps:

  • Preheat oven to 400*F.
  • In a roasting pan, toss the tomatoes with the garlic, red pepper flakes, and 1 tablespoons of the olive oil; season with salt and pepper.
  • Roast the tomatoes for about 20 minutes, until they burst and their skins begin to shrivel, stirring once halfway through.
  • Pour the remaining 2/3 cup olive oil into a medium bowl; crush the rosemary and oregano between your fingers and submerge in the oil.
  • Add the tomatoes and their juices, stir gently, and let stand for 30 minutes before using.
