Pan Roasted Salmon Steaks with Sherry Vinegar-Honey Glaze and Spicy Tomato Relish and Parsleyed Potatoes image

2 medium ripe tomatoes, coarsely chopped
2 tablespoons red onion, finely diced
1 tablespoon finely chopped parsley
1/2 teaspoon red pepper flakes
1/4 cup red wine vinegar
1/4 cup olive oil
Salt and freshly ground pepper
1 cup aged sherry vinegar
1/4 cup Dijon mustard
1/2 cup honey
2 tablespoons ancho chile powder
Salt and pepper
1 tablespoon olive oil
4 salmon steaks, 6 or 7 ounces each
1 stick unsalted butter
1 pound new red potatoes, boiled and halved
1/2 cup finely chopped parsley
Salt and freshly ground pepper

Steps:

  • For the Spicy Tomato Relish: Combine all ingredients in a medium bowl and let rest at room temperature for 30 minutes. For the Salmon: In a small saucepan over high heat, reduce the vinegar to 1/4 cup. In a mixing bowl, combine the vinegar syrup with the mustard, honey and ancho chile powder and season to taste with salt and pepper. Let rest at room temperature for 30 minutes. Heat the tablespoon of oil in a medium saute pan until almost smoking. Brush the salmon on both sides with the glaze. Place in the pan and cook until lightly golden brown. Place in the oven and continue cooking for 5 to 6 minutes for medium doneness. Remove from the oven brush again with the glaze. For the Potatoes: Melt the butter over medium heat in a large saute pan. Add the potatoes and toss to coat with the butter, let cook 5 minutes. Add the parsley and season with salt and pepper to taste.;

4 ears shucked corn
olive oil flavored cooking spray
3/4 teaspoon kosher salt, divided
3/4 teaspoon fresh ground black pepper, divided
1 pint cherry tomatoes, halved
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
3 tablespoons thinly sliced fresh basil, plus
whole basil sprig (to garnish) (optional)
4 (4 ounce) salmon fillets

Steps:

  • Soak corn in a large bowl of cold water for 20 minutes. Remove and pat dry.
  • Coat corn on all sides with cooking spray, and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill about 15 minutes or until charred on all sides.
  • Remove cobs from grill, and cool slightly. Slice the kernels from the cobs, and transfer to a medium bowl.
  • Add tomatoes, olive oil, vinegar, and sliced basil; season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Let the relish sit at room temperature for 15 minutes before serving.
  • Meanwhile, lightly coat both sides of salmon fillets with cooking spray; season with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Place fillets skin side down, and grill 3-4 minutes or until golden brown. Flip fillets, and grill for 3 more minutes. Fish should feel slightly firm in the center and will register 145° on an instant-read thermometer.
  • Place salmon onto each of 4 plates, and spoon relish over top. Garnish with basil sprigs, if desired.

2 tablespoons orange juice
3 tablespoons lime juice
3 tablespoons honey
3/4 teaspoon ground cumin
3/4 teaspoon chili powder
1/4 teaspoon hot pepper sauce
1/4 teaspoon salt
fresh ground black pepper
lime wedge

Steps:

  • Heat oven to 450 degrees.
  • Place salmon in a foil-lined baking pan.
  • Combine orange and lime juices, honey, cumin, chili powder and hot sauce, stirring well to dissolve the honey.
  • Pour about half of the glaze over the salmon, sprinkle with salt and pepper and bake 12 minutes per inch of thickness.
  • Halfway through the cooking time, pour the remaining glaze on top.
  • When the salmon is cooked through, remove from the oven.
  • Spoon the thickened glaze in the bottom of the pan over the salmon and serve with wedges of lime.

1 lb tuna steak
1/4 cup olive oil, plus
2 tablespoons olive oil
1/4 cup lime juice
1/8 cup balsamic vinegar
2 -3 garlic cloves, minced
1 tablespoon fresh ginger, minced
1/4 cup cilantro, chopped plus
2 tablespoons cilantro, chopped
1/4 cup honey

Steps:

  • In a med bowl, mix 1/4c olive oil, lime juice, vinegar, garlic, ginger, and 1/4c cilantro. Add tuna and turn to coat evenly. Let marinate at least 1/2, but the longer, the better.
  • In a small bowl, mix honey, 2 tbsp olive oil, and 2 tbsp cilantro. Set aside.
  • Remove tuna from marinade, but reserve marinade. Over med to low grill temp, grill tuna for 6-7 minutes per side, basting frequently with marinade. When fish is almost done, brush both sides with honey glaze, remove from grill, and serve.

1 teaspoon lemon juice

Steps:

  • Using vegetable peeler or food processor, shred carrots into long strands.
  • In pot of boiling salted water, cook carrots for 1-2 minutes or until barely tender.
  • Drain and refresh under cold running water and drain again.
  • In skillet, melt butter over medium heat.
  • Stir in honey and lemon juice and mix well.
  • Add carrots.
  • Stir and toss 2-3 minutes or until carrots are heated through and well coated.
