My Apple Fritters image

Here is my own version of apple fritters with cinnamon and nutmeg inside. I had a recipe for them and hadn't made them in years, however this morning decided to play around and tweak things. vegetable oil, enough to fill frying pan 1/2 full (or use deep fryer)
FRITTERS
1 1/2 c flour
2 tsp baking powder
1 tsp salt
2 tsp sugar
2 tsp cinnamon
1-1/2 tsp nutmeg
2/3 c milk
1 tsp vanilla
2 large eggs, beaten
1 Tbsp butter, melted
3 c apples, peeled and chopped
TOPPING
cinnamon sugar
thin glaze, confectioners sugar and milk
powdered sugar

Steps:

  • 1. Preheat oil in frying pan to 350 degrees (or use a deep fryer).
  • 2. Mix dry ingredients in large bowl and put aside.
  • 3. In a separate bowl, mix together milk, vanilla, eggs and butter. Pour into flour mixture and stir until combined.
  • 4. Add apples and mix until well coated. It may seem like a lot of apples per batter but this is the way it should look.
  • 5. Drop batter by tablespoon into pan (I flattened mine down slightly immediately once in the pan). Don't crowd fritters. I fried about 5 at a time.
  • 6. Cook until deep golden brown on bottom and batter looks slightly bubbly and dry (not wet) on top. Flip and cook until golden brown.
  • 7. Remove from oil with slotted spoon and drain on paper towels.
  • 8. While warm, add your topping. I used cinnamon sugar but you can easily add a glaze or sprinkle with powdered sugar. My girls rolled them in cinnamon sugar until they were coated (as you can see from the picture), but for mine, I just sprinkled some on top.
