PAN ROASTED BABY CARROTS

Carrots are one of my very favorite foods. If you cook them right the natural sweet, sweetness comes out in them and you just can't stop eating them.

Number Of Ingredients 4

2 Tbsp butter
fresh carrots
1/2 c slice onions
salt & pepper to taste

Steps:

  • 1. Over a medium heat, melt the butter in a skillet or pan. Add carrots and seasoning. Cook stirring often for about 20 min. Add onions, reduce heat to low, cover and cook, stirring often, for another 20 min. or till you can insert a fork through carrot without resistance.

1 Tbsp olive oil
1 lb baby carrots peeled
1 Tbsp pure maple syrup
1/2 tsp kosher or sea salt
1/4 tsp black pepper

Steps:

  • Heat oven to 400 degrees. In a large 12 inch, ovenproof skillet or saute pan, heat the oil over high heat until hot (not smoking but should crackle when adding carrots). Add carrots and cook, stirring frequently until they blister and turn golden brown in spots, 1-2 minutes. Add the maple syrup, salt, peper and toss well to coat the carrots. Remove from heat. Spread carrots evenly in skillet and transfer it to hot oven. Roast until carrots are tender, brown in spots and just a little shriveled, 12-15 minutes. Season to taste with salt and pepper before serving.
