5 -6 garlic cloves, sliced
3 slices bacon, cooked and crumbled
2 tablespoons olive oil
salt
pepper
3 green onions, thinly sliced
2 tablespoons parmesan cheese, grated

Steps:

  • Cook potatoes, garlic, and bacon in oil over medium heat.
  • Season to taste with salt and pepper and cook, stirring, until potatoes are almost cooked through, then stir in green onions.
  • When potatoes are cooked through, sprinkle with parmesan cheese and serve.

½ yellow onion, sliced

Steps:

  • Fry the bacon in a large deep skillet over medium-high heat until evenly browned and crisp. Remove from the pan, and add the potatoes and onions to the bacon drippings. Season with garlic pepper. Reduce the heat to medium, and cook the potatoes for about 20 minutes, stirring occasionally, until tender and browned. Crumble bacon over the top before serving.

8 medium red potatoes (about 2 inches long; 1 3/4 pounds)
1/2 cup extra-virgin olive oil
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Generously cover potatoes with cold water in a 3-to 4-quart pot and add 1 tablespoon salt. Boil until almost tender, 10 to 15 minutes. Drain potatoes. Transfer to a baking sheet and lightly crush to about 3/4 inch thick with a potato masher, keeping potatoes intact as much as possible.
