Time 4h30m

Yield 6

Number Of Ingredients 16

2 (750 milliliter) bottles dry red wine
1 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper to taste
5 pounds beef oxtail, cut into pieces
¼ cup butter, divided
5 shallots, chopped
5 cloves garlic, chopped
1 onion, chopped
2 carrots, chopped
2 celery ribs, chopped
2 sprigs fresh thyme
1 bay leaf
2 sprigs flat-leaf parsley
5 cups beef broth

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Simmer the red wine in a large saucepan over medium-high heat until reduced by half. Meanwhile, combine the flour, garlic powder, onion powder, salt, and pepper in a large bowl. Dredge the oxtail in the seasoned flour, and shake off excess; set aside. Heat 1 tablespoon of butter in a roasting pan over medium-high heat. Brown the oxtail on all sides, about 10 minutes.
  • Remove the oxtails from the pan and set aside. Turn the heat to medium-low and melt another 1 tablespoon of butter in the pan. Stir in the shallots, garlic, onion, carrots, and celery. Cook and stir until the vegetables have softened, about 10 minutes. Stir in the thyme, bay leaf, parsley, beef broth, and reduced red wine. Place the browned oxtail on top of the vegetables in a single layer, then bring to a boil.
  • Cover with a tight fitting lid or aluminum foil, then bake in preheated oven until the oxtail is very tender and nearly falling off the bone, 3 to 3 1/2 hours.
  • Once the oxtail is tender, remove the meat to a serving dish, cover, and keep warm. Strain the remaining braising liquid through a mesh strainer into a saucepan. Simmer over medium-high heat until the sauce has reduced to 2 cups. Whisk in the remaining 2 tablespoons butter and pour over the oxtail to serve.

An easy Red-Wine-Braised Oxtails recipe

Categories     Beef     Garlic     Herb     Vegetable     Bake     Braise     Valentine's Day     Winter     Gourmet

Yield Serves 6

Number Of Ingredients 14

Two 750-ml. bottles dry red wine (preferably Burgundy)
12 large oxtail pieces (about 6 pounds total)
1/2 stick (1/4 cup) unsalted butter
5 shallots
5 garlic cloves
2 medium carrots
2 medium leeks (white parts only)
1 medium onion
2 celery ribs
3 fresh thyme sprigs
3 bay leaves
1 bunch parsley stems
about 4 cups beef broth
Accompaniment: celery root puree or mashed potatoes

Steps:

  • Preheat oven to 325°F.
  • In a 4- to 6-quart heavy saucepan boil wine until reduced by about half (about 3 1/4 cups). Trim oxtails and pat dry. Season oxtails with salt and pepper. In a deep heavy ovenproof kettle just large enough to hold oxtails in one layer heat 1 tablespoon butter over moderately high heat until foam subsides and brown half of oxtails on all sides, transferring to a bowl. Brown remaining oxtails in 1 tablespoon butter in same manner and transfer to bowl. Coarsely chop shallots, garlic, carrots, leeks, onion, and celery. Add vegetables to kettle and cook in 1 tablespoon butter over moderately low heat, stirring, until softened.
  • Arrange oxtails over vegetables and add reduced wine, herbs, and enough broth to just cover oxtails. Bring liquid to a boil and braise oxtails, covered, in middle of oven 3 to 3 1/2 hours, or until meat is very tender but not falling off the bone. Transfer oxtails with a slotted spoon to a bowl and keep warm. Pour braising liquid through a fine sieve into a large saucepan and discard solids. Boil liquid until thick, shiny, and reduced to about 1 3/4 cups and whisk in remaining tablespoon butter.
  • Serve oxtails and sauce with celery root puree or mashed potatoes.

CARIBBEAN-STYLE OXTAILS

Provided by Food Network

Categories     main-dish

Time 2h20m

Yield 4 to 6 servings

Number Of Ingredients 17

2 tablespoons olive oil
3 pounds oxtails
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 cup small diced onion
1/2 cup small diced carrot
1/2 cup small diced celery
1/4 cup small diced leeks
1 tablespoon minced garlic
1 tablespoon minced green onion, white part only
2 teaspoons minced ginger
2 tablespoons tomato paste
2 1/2 tablespoons all-purpose flour
1 (12-ounce) bottle beer (recommended: Guinness)
1 1/2 cups veal stock or low-sodium canned beef broth
1/2 teaspoon ground allspice
1 tablespoon chopped fresh parsley leaves

Steps:

  • Add the olive oil to the One Pot (or any pressure cooker, or a Dutch oven) and heat over medium heat until hot. Season the oxtails with the salt and pepper. Add half of the oxtails to the One Pot and cook until well browned on both sides, about 3 to 4 minutes per side. Set the seared oxtails on a platter once browned and repeat with the remaining oxtails.
  • Once all the oxtails are browned, add the onions, carrots and celery to the pan. Saute the vegetables until softened, about 3 to 4 minutes. Add the leeks, garlic, green onions and ginger to the pan and saute for 1 minute, stirring often. Add the tomato paste and stir well to incorporate. Sprinkle the flour over the vegetables and stir to combine. Cook, stirring, for 3 minutes. Add the beer to the One Pot and increase the heat to medium-high. Bring the beer to a boil and cook for 5 minutes.
  • Add the stock and allspice, stir, and return the oxtails to the pan. Return the pan to a boil and place the lid over the pan. Once a steady stream of steam is emitted from the pan, lower the heat to a simmer, and cook the oxtails until tender, about 1 hour in a pressure cooker or 2 hours in a Dutch oven. Remove the lid, and stir the chopped parsley into the pan. Serve immediately.

WINE BRAISED OXTAILS

Wine Braised Oxtails image

This is the most velvety, scrumptious stew-like dish! My family BEGS me to make this. It's time consuming, but so worth it! I probably only make it a couple times a year (usually in the colder months) and it's always a hit.

Time 7h

Yield 6 serving(s)

Number Of Ingredients 13

2 (750 ml) bottles red wine (I use Merlot)
6 lbs oxtails, large pieces
1/4 cup olive oil, approximately (use more or less depending on how many batches you brown the oxtails)
5 shallots, coarsely chopped
5 garlic cloves, coarsely chopped
2 medium carrots, coarsely chopped
2 medium leeks (white parts only, coarsely chopped)
1 medium onion, coarsely chopped
2 celery ribs, coarsely chopped
3 fresh thyme sprigs
3 bay leaves
1 bunch parsley stems
4 cups beef broth (I use homemade, but you can used the low-sodium canned variety if you like)

Steps:

  • In a 4- to 6-quart heavy saucepan boil wine until reduced by about half (about 3 1/4 cups).
  • Trim oxtails and pat dry. Season oxtails with salt and pepper. In a large pot, just large enough to hold oxtails in one layer, heat 1 tablespoon olive oil over moderately high heat and brown half of oxtails on all sides, transferring to a bowl. Brown remaining oxtails in 1 tablespoon olive oil in same manner and transfer to bowl.
  • Add coarsely chopped shallots, garlic, carrots, leeks, onion, and celery to the pot just used to brown the oxtails and cook in 1 tablespoon olive oil over moderately low heat, stirring, until softened.
  • Arrange oxtails over vegetables and add reduced wine, herbs, and enough broth to just cover oxtails.
  • Bring liquid to a boil. Turn to a low heat and braise oxtails, covered, on the stove for 3 hours (you can also do this in the oven), or until meat is very tender.
  • Transfer oxtails with a slotted spoon to a bowl. Pour braising liquid through a fine sieve into a large container and discard solids. Refrigerate overnight.
  • Next day, skim the fat off the liquid. Combine the oxtails with the liquid in a large pot and simmer for another 2 to 3 hours.
  • Serve with mashed potatoes.

BRAISED OXTAILS "ANTON"

Braised Oxtails

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 3h55m

Yield 4 servings

Number Of Ingredients 19

1/4 cup canola oil
1 large red onion, sliced
3 cloves garlic, lightly crushed with the side of a knife blade
1/2 cup all-purpose flour, or enough as needed to coat oxtails
Salt and black pepper
4 pounds oxtails, cut into 2-inch cross sections
1 (750 mL) bottle red wine
1/2 cup demi-glace
2 tablespoons tomato paste
1 bay leaf
1 large sprig fresh flat-leaf parsley
1 large sprig thyme
4 tablespoons butter
1 tablespoon lime zest
1 large clove garlic, finely minced
1 tablespoon flat-leaf parsley leaves, finely minced
1 loaf French bread
2 tablespoons olive oil
1 tablespoon garlic powder

Steps:

  • Heat canola oil over medium-high in a large saute pot. Add onion and garlic and saute until the onions begin to turn translucent. While they are cooking, season the flour with salt and pepper and coat the oxtails, allowing any excess flour to fall away. Sear the oxtails on both sides in the pot with the onions and garlic, then remove them to a utility platter. De-glaze the pan with the red wine. Whisk in demi-glace and tomato paste and add bay leaf, parsley and thyme. Lower heat and return oxtails to pot. Cover and let simmer until meat is tender (it should easily fall away from bone), about 3 hours. Remove oxtails to a platter, cover, and let rest in a warm place. Strain braising liquid into another pot to make it into a sauce. Spoon off any excess fat that may be on the surface. Increase heat, allowing the braising liquid to reduce by one-half to two thirds.
  • Combine the Gremolata ingredients and set aside.
  • While the sauce is reducing, prepare the toasted French bread. Preheat the oven to 350 degrees F. Brush the olive oil on the bread and sprinkle with garlic powder. Lightly toast in the oven.
  • Remove the reduced sauce from the heat and whisk in the butter. Spoon sauce over oxtails and top with a small amount of gremolata. Serve with toasted French garlic bread.

BRAISED OXTAILS

Braised Oxtails image

Don't let the sound of "ox tails" turn you off. This dish will surpise you. Ox tails have a lot of flavor and surprisingly a lot of meat.I came up with this recipe on my own, so my measurement are not exact( I kinda just add a little of this and a little of that). Feel free to alter this to your own taste. THis is one of my families favorites. Its kinda like pot roast except it has more flavor. This is good served on a bed of rice or along side of some mashed potatoes that has the gravy on top of it.

BRAISED OXTAILS WITH RIGATONI (CODA DI BUE BRASATA)

Braised Oxtails With Rigatoni (Coda Di Bue Brasata) image

Adapted from a recipe by Lidia Bastianich on her TV series "Lidia's Italian-American Table".

Provided by DrGaellon

Categories     Stew

Time 6h30m

Yield 6 serving(s)

Number Of Ingredients 17

3 lbs oxtails (all larger pieces if possible)
kosher salt
fresh ground black pepper
6 tablespoons olive oil
1 cup dry white wine
2 medium yellow onions, chopped (about 2 cups)
2 medium carrots, peeled and shredded (about 1 cup)
1 cup chopped celery, including leaves
3 garlic cloves, peeled and chopped
1/3 cup chopped fresh Italian parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 bay leaf
1 (28 ounce) can crushed tomatoes, San Marzano if possible
1 lb rigatoni pasta
1 cup grated parmigiano-reggiano cheese

Steps:

  • In a bowl, cover the oxtails with cold water. Let stand 30 minutes. Drain, pat dry, and season both sides with salt and pepper.
  • In a large skillet, heat olive oil over medium heat. Add oxtails, being careful not to overcrowd the pan, working in batches if necessary. Cook until both sides are nicely browned; transfer to a slow cooker as they finish.
  • Add the wine to the skillet to deglaze, scraping up any browned bits at the bottom of the pan, then transfer to the slow cooker. Add the vegetables, garlic, herbs and tomatoes with their juices. Season with salt and pepper. Cook on low 6 hours or high 3 hours.
  • Cool to room temperature. Remove the oxtails to a plate. Skim as much fat as possible from the surface. Puree the vegetables with a blender or immersion blender, or use a potato masher for a chunkier sauce.
  • Remove the meat from the bones and shred coarsely, then return to the sauce. (This step can be skipped and the oxtails served intact, if preferred).
  • Prepare the rigatoni according to package directions. Reserve 1 cup of the pasta cooking water before draining. While pasta cooks, reheat the sauce.
  • When the pasta is cooked and drained, return it to the pasta cooking pot with half the sauce. Bring to a boil, gently tossing to coat the pasta with sauce. Add a few spoonfuls of the cooking water if needed to get the right consistency. Add the cheese, adjust salt and pepper and serve with the extra sauce ladled on top.

LOWCOUNTRY OXTAILS WITH HAM HOCKS

Lowcountry Oxtails With Ham Hocks image

Make and share this Lowcountry Oxtails With Ham Hocks recipe from Food.com.

Provided by mightyro_cooking4u

Categories     Meat

Time 2h10m

Yield 4 serving(s)

Number Of Ingredients 6

2 ham hocks, split in half
8 -10 oxtails, pieces
1 large green bell pepper, chopped
1 large onion, chopped
1 stalk celery, chopped
salt and pepper

Steps:

  • Put the ham hocks and oxtail pieces in medium pot, two-thirds full with water, and boil about 15 minutes. Drain and rinse the meat under running water. Return the oxtail and ham hocks to the pot and refill with water as before. Add the bell pepper, onion, and celery. Add salt and pepper to taste. Boil until all the meat is tender (2 hours or more). You may need to add more water to the meat before it is done, but don't add more than 1 to 3 additional cups, because you want the gravy to be rich. Serve with rice or potatoes, and be ready for some lip-lickin' grub.
  • NOTE: After draining and rinsing the meat, I would use beef broth or stock instead of the water in the second boiling.
  • ANOTHER NOTE: I like to brown the oxtails before cooking.

BRAISED OXTAILS WITH CARROTS

Braised Oxtails With Carrots image

Entered for safe-keeping for ZWT5. From The New Doubleday Cookbook. I haven't made this version yet, but I used to adore making Oxtail Ragout from a McCall's cookbook from the 70s. Oxtails cooked this way have an ungamey rich taste, and the dissolving cartilage ensures a nice, thick sauce. Oxtail Soup is very popular in Creole Cuisine; its roots are French. Braising is such a wonderful way to bring out flavor and tenderize lesser cuts of meat. To make it more "Creole", have a bottle of hot sauce at the table.

  • Return meat to kettle, add water (or beer or wine mix), tomato sauce, celery seeds, bay leaf, parsley, Worcestershire sauce, salt, and pepper. Cover, and simmer over low heat 3 hours until meat is tender. Cool and skim off fat.
  • (Note: Recipe can be prepared to this point a day or so ahead of time. Cool, cover, and refrigerate or freeze for future use. Bring oxtail to room temperature before proceeding, or if frozen thaw gently over low heat, stirring frequently.)
  • Add carrots, cover, and simmer 20 minutes until tender. Blend flour and water, then mix in flour-water paste and heat, stirring, until thickened. Serve over buttered noodles or rice.

SPANISH-STYLE OXTAILS BRAISED WITH CHORIZO RECIPE - (4.5/5)

Spanish-Style Oxtails Braised with Chorizo Recipe - (4.5/5) image

Provided by á-25087

Number Of Ingredients 15

6 lb (2- to 3-inch-pieces) meaty oxtails
1 1/2 teaspoons salt
1 teaspoon black pepper
1 1/2 tablespoons extra-virgin olive oil
1/4 lb mild Spanish chorizo
1 large onion, coarsely chopped
4 medium carrots, coarsely chopped
4 garlic cloves, chopped
1 Turkish or 1/2 California bay leaf
1/2 teaspoon sweet or hot Spanish smoked paprika
1 cup dry white wine
1 (28- to 32-oz) can whole tomatoes in purée, coarsely chopped (including purée) in a food processor
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped fresh cilantro
1 tablespoon Sherry vinegar or red-wine vinegar

Steps:

  • Preheat oven to 350°F. Pat oxtails dry and sprinkle with salt and pepper. Heat oil in pot over moderately high heat until hot but not smoking, then brown oxtails in batches without crowding, turning occasionally, about 5 minutes per batch. Transfer as browned to a bowl. Pour off all but 1 tablespoon fat from pot. Remove and discard casing from chorizo, then finely chop sausage in food processor. Cook chorizo, onion, carrots, garlic, and bay leaf in fat in pot over moderate heat, stirring occasionally, until onion is softened, 6 to 7 minutes. Add paprika and cook, stirring, 1 minute. Add wine and bring to a boil, stirring and scraping up any brown bits. Add oxtails with any juices accumulated in bowl and chopped tomatoes (liquid should come about halfway up sides of meat) and bring to a boil. Cover pot and braise oxtails in lower third of oven, turning once or twice, until very tender, 3 to 3 1/2 hours. Skim fat from sauce, then stir in parsley, cilantro, vinegar, and salt and pepper to taste. Oxtails improve in flavor if braised 2 days ahead (add parsley, cilantro, and vinegar just before serving). Cool, uncovered, then chill, surface covered with parchment paper or wax paper and pot covered with lid. Remove any solidified fat before reheating.

OXTAILS, ROMAN STYLE

Oxtails, Roman Style image

This from The Frugal Gourmet Cooks Three Ancient Cuisines by Jeff Smith. Very rich sauce, great with pasta and be sure to have the ever handy crusty bread available. If it is too rich for you try adding a can of chopped tomatoes to thin it out. We have always used oxtails in stews, etc and find this recipe to be right up our alley.
