Nonstick cooking spray, for coating baking dish
One 8-ounce whole wheat baguette, cut into twenty-four 1/4-inch slices
One 12-ounce can evaporated fat-free milk
1 cup reduced-fat (2-percent) milk
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon ground cinnamon
Pinch kosher salt
4 large eggs
1/3 cup chopped pecans
1/4 cup plus 2 tablespoons pure maple syrup
1/8 teaspoon ground cinnamon

Steps:

  • For the French toast: Coat a 9- by 13-inch baking dish with cooking spray. Arrange the bread slices on the diagonal in 3 rows in the dish, slightly overlapping the slices. Whisk together the evaporated milk, milk, vanilla and almond extracts, cinnamon, salt and eggs until well combined. Pour the egg mixture over the bread slices, taking care to evenly coat the bread. Cover with aluminum foil and refrigerate for at least 8 hours, or overnight. Preheat the oven to 350 degrees F. Remove the foil from the baking dish and spoon any remaining egg mixture over the top of the bread pieces to assure they are evenly moistened.
  • For the topping: Sprinkle the pecans evenly over the bread. Sprinkle with 2 tablespoons of the maple syrup and the cinnamon. Bake until golden, about 40 minutes. Drizzle with the remaining 1/4 cup maple syrup and serve.

8 large eggs
2 cups milk
2 teaspoons vanilla extract
12 slices French bread
½ teaspoon ground cinnamon
1 ⅓ cups brown sugar
¾ cup unsalted butter, softened
3 tablespoons corn syrup
1 cup walnuts, chopped

Steps:

  • Mix eggs, milk, vanilla, and cinnamon together.
  • Place bread slices in a greased 9x13-inch pan. Pour egg mixture over top. Cover and refrigerate, 8 hours to overnight.
  • Remove from the refrigerator 30 minutes before baking. Preheat the oven to 350 degrees F (175 degrees C).
  • Cream together brown sugar, butter, and corn syrup; it will be very thick. Spread over the bread, then sprinkle with walnuts.
  • Bake in the preheated oven until golden brown, about 1 hour.

12 cups cubed (1 inch) soft French bread (about 13 oz)
8 eggs
3 cups half-and-half
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 teaspoons vanilla
1 cup sugar
1 tablespoon cornstarch
1/4 cup orange juice
1 bag (12 oz) frozen unsweetened mixed berries
3 cups fresh strawberries, cut into quarters

Steps:

  • Spray bottom and sides of 13x9-inch (3-quart) glass baking dish with cooking spray. Place bread cubes in dish. In large bowl, beat eggs, half-and-half, 1/4 cup sugar, the cinnamon, salt and vanilla with wire whisk until smooth; pour over bread cubes. Cover tightly; refrigerate at least 4 hours but no longer than 24 hours.
  • Heat oven to 400°F. Uncover dish; bake 25 to 35 minutes or until golden brown and knife inserted in center comes out clean.
  • Meanwhile, in 2-quart saucepan, stir together 1 cup sugar and the cornstarch. Stir in orange juice until smooth. Stir in mixed berries. Heat to boiling over medium heat, stirring constantly. Cook about 6 minutes, stirring constantly, until topping is slightly thickened. Remove from heat.
  • Just before serving, stir strawberries into topping. Serve warm over French toast bake.

1 large loaf of French bread, cut into slices or cubes (I used a multigrain French loaf)
½ cup Nordica Fat Free Cottage Cheese
7 large eggs
2¼ cups skim milk
⅓ cup granulated sugar
about 1 large or 2 small overripe bananas, sliced, divided (depending on size of your dish)
1 teaspoon pure vanilla extract
½ teaspoon ground cinnamon
Streusel Topping
5 tablespoons unsalted butter
¼ cup all-purpose flour
¼ cup light brown sugar, packed
2 tablespoons granulated sugar
2 teaspoons cinnamon
Optional toppings
powdered sugar for dusting
your favorite caramel sauce or syrup
pecan halves
coconut chips
extra banana slices (I cooked mine for 1 minute with some caramel sauce first)

Steps:

  • Spray a 9x13" baking dish with non-stick spray. Layer half of the bread cubes in prepared baking dish. Top with a layer of sliced bananas. Layer evenly with the rest of the bread. Blend the cottage cheese in a blender, food processor, or using a hand mixer. When there is a smooth consistency, blend in the eggs and milk. Mix in the sugar, cinnamon and vanilla extract. Pour the liquid mixture evenly over the top of the bread. Make the streusel topping - To a medium bowl, add the butter, flour, sugars, cinnamon, and using two forks or your clean hands, cut/crumble butter into dry ingredients until small pebbles and crumbly bits form. Sometimes it takes awhile depending how cold the butter is. Using your fingers or a spoon, evenly sprinkle the streusel over the bread. Cover baking dish tightly with plastic wrap or foil and store in the fridge overnight or for several hours. When you are ready to bake, remove dish from oven and uncover. Preheat oven at 350 degrees and bake for 43-52 minutes or until streusel is set and appears to have dried out some. Watch oven time carefully as it may vary. You can try a small bite and if it seems too wet, moist, or under-done for your liking, bake longer. Baking times will range greatly based on type of bread used, baking dish used, climate, and oven variance. Mine was done at 47 minutes. Remove from oven and serve warm with your favorite caramel sauce/syrup or a dusting of confectioner's sugar, chopped pecans, coconut chips or extra banana slices (I cooked the extra banana slices in a pan with some caramel sauce for about 1 minute for extra flavor). NOTES French toast is best fresh, but leftovers will keep airtight in the fridge for up to 2 days and can be reheated gently in the micro before serving.

I was looking around for a good and easy morning casserole. I did some fiddling with a couple recipes a found and came up with this gem!

1/2 c melted butter
1 c brown sugar
1 loaf of texas toast
4 eggs
1 1/2 c milk
1 tsp vanilla extract
1 tsp cinnamon, ground
1/2 tsp cardamon, ground
powder sugar for sprinkling

Steps:

  • 1. Melt Butter in microwave. Add brown sugar to butter and stir tell well mixed.
  • 2. Pour butter mixture into bottom of a 9 x13 baking dish sprayed with non stick spray. Make sure to spread it around to cover whole pan.
  • 3. Beat eggs, milk, Vanilla, Cardamon, and Cinnamon together.
  • 4. Lay single layer of Texas toast in pan. Spoon 1/2 of the egg mixture on top of toast. Then add 2nd layer of Texas Toast on top and spoon the remaining egg mixture on top.
  • 5. Cover and chill in fridge overnight.
  • 6. Preheat oven to 350 degrees. Cover dish and then bake for 30 minutes. Remove cover and then bake for another 15 minutes.
  • 7. Sprinkle with powder sugar (Optional) and serve with warm Maple syrup
