3 pounds mixed small new potatoes, unpeeled
1/4 cup extra-virgin olive oil
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. Toss potatoes with oil, salt, and pepper in a large bowl until well coated. Put into a 9-by-13 metal baking dish. Roast, stirring occasionally, until tender, about 1 hour 15 minutes.

2 tablespoons chopped fresh herbs (such as oregano, sage or rosemary) or 2 teaspoons dried herb leaves
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil
1 (3 1/2 to 4-lb.) whole roasting chicken
1 1/2 to 2 lb. small red potatoes, unpeeled, halved

Steps:

  • Heat oven to 450°F. In small bowl, combine herbs, salt, pepper and oil; mix well.
  • Place chicken, breast side down, in shallow roasting pan. Arrange potatoes around chicken in pan. Drizzle half of oil mixture over potatoes; stir to mix. Bake at 450°F. for 20 minutes.
  • Remove pan from oven. Spoon some of remaining oil mixture over chicken and potatoes; stir potatoes. Turn chicken breast side up. Return to oven; bake an additional 10 minutes.
  • Remove pan from oven. Reduce oven temperature to 325°F. Drizzle remaining oil mixture over chicken and potatoes; stir potatoes. Return to oven; bake an additional 40 to 50 minutes or until chicken is fork-tender and juices run clear, and potatoes are tender.

4 tablespoons butter
2 teaspoons fresh rosemary
salt and pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • In a hot skillet, melt the butter. Stir in rosemary, salt and pepper. Coat potatoes evenly with the melted butter. Arrange the potatoes in a single layer on a baking pan.
  • Bake in a preheated oven until potatoes are golden brown, approximately 20 to 25 minutes. Toss them occasionally to ensure that they brown on all sides.

1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil
1 whole roasting chicken (3 1/2 to 4 lb.)
2 lbs small red potatoes, unpeeled, halved

Steps:

  • Heat oven to 450*.
  • In small bowl, mix herbs, salt, pepper and oil.
  • Place chicken, breast side down, in shallow roasting pan.
  • Arrange potatoes around chicken in pan.
  • Drizzle half of oil mixture over potatoes; stir to mix.
  • Bake 20 minutes.
  • Remove pan from oven. Spoon some of the remaining oil mixture over chicken and potatoes; stir potatoes.
  • Turn breast side up. Return to oven; bake 10 minutes longer.
  • Remove pan from oven.
  • Reduce oven temperature to 325*.
  • Drizzle remaining oil mixture over chicken and potatoes; stir potatoes.
  • Insert ovenproof meat thermometer so tip is in thickest part of inside thigh and does not touch bone.
  • Return to oven; bake 40 to 50 minutes longer or until thermometer reads 180* and legs move easily when lifted or twisted and potatoes are tender.

8 -10 slices bacon, crisp cooked,crumbled

  • Cook in water to cover in a saucepan just until tender.
  • Place half the potatoes in a 2 quart baking dish.

1 lb new potatoes, sliced in half
dash(es) paprika
dash(es) mrs. dash table blend
satl & pepper to taste
3 Tbsp olive oil

Steps:

  • 1. Preheat oven 375 degrees.
  • 2. Put 1 Tbsp. Olive oil on jelly roll pan. Smooth it out evenly over the pan.
  • 3. Place potatoes in pan. Sprinkle with spices generously then salt and pepper to taste.
  • 4. Drizzle over remaining olive oil and toss until all the potatoes are thoroughly coated.
  • 5. Bake 30 to 40 minutes.
