Steps:
- Heat oven to 425 degrees F.
- Cut the potatoes into nice thick "handcut fry slices," put in a large bowl and cover with cold water. You can do this in advance if you want - for up to 24 hours. It helps to remove the excess starch.
- Drain the potatoes and pat dry on paper towel.
- Arrange in a single layer on a baking sheet. Drizzle with oil, sprinkle with salt, pepper, and paprika.
- Bake until tender and golden crispy outside, about 40 minutes. When out of the oven, hit them with some dashes of steak spice.
OVEN ROASTED SWEET POTATO FRIES
I confess, I never liked sweet potatoes, but....OMG.....I absolutely love sweet potato fries!!! Sweet and Salty and Spicy all in one bite!! The combination of the spices give a rich deep taste that's delicious. These are crispy around the edges on the outside and tender on the inside, I just love these. They are so easy to make at home and are much healthier than frying. All it takes is just 2 large sweet potatoes and you have a large batch of delicious sweet potato fries that you won't be able to stop eating;). Enjoy!

- Preheat the oven to 450 degrees.
- 1. Cut the potatoes into 1/4″ thin strips, or to your desired thickness and length. Mix all other ingredients together in a large bowl and toss with the potatoes until they are evenly coated.
- 2. Transfer the potatoes to a large baking sheet covered with parchment paper. Spread the potatoes in a single layer. Try not to overcrowd or have multiple layers of fries - you want them to be roasted, not steamed.
- 3. Place in the oven and cook for 25-30 minutes, turning the fries once or twice during that time to cook evenly. May take more or less time, depending on the size and thickness you cut the fries.
- Remove once the edges slightly begin to brown and fries begin to crisp. Sprinkle course salt on top when they are hot out of the oven.

RACHEL'S OVEN FRIES / ROASTED POTATO WEDGES
Potatoes made tasty and simple. This is good for 2 people to share, so use the recipe multiplier for more servings. Makes a healthier substitute for french fries, and a great side dish for a hearty meal in place of mashed or baked potatoes. I like this particular herb mix, but feel free to use pretty much any kind of seasoning in a 1/2 tsp-1 tsp amount. Montreal Chicken Rub is the perfect seasoning for this! And, this is vegan.

- Cut the potatoes into wedges shaped like large french fries, about 6-8 from each potato.
- Place the wedges into a large tossing/mixing bowl. Pour in the lemon juice and olive oil and toss well to fully coat the potato wedges.
- Put the spice mix (mine, a premade one, or your choice) on the potatoes and toss well to coat, shake any additional spices on if need be.
- Place the potatoes laying flat in a baking dish and bake at 350 for 15 minutes.
- Turn them so the other sides can cook, bake for another 30 minutes.
- Let cool, blot off any excess oil, and enjoy.
ROASTED PORTOBELLO BURGERS WITH ROSEMARY GARLIC OVEN FRIES
Steps:
- Preheat the oven to 450°F.
- Cut the potatoes into wedges and drop them onto a cookie sheet. Drizzle the potatoes with about 3 tablespoons of EVOO and toss to coat them thoroughly in the oil. Season the potatoes with the rosemary, salt, and pepper. Roast them for 25 minutes in all. Halfway through the roasting add the garlic, stir to distribute, and flip the potatoes, then continue to roast. The potatoes should be brown and tender.
- While the potatoes roast, place the portobello mushroom caps on a cookie sheet. Season them with salt and pepper and arrange the mushrooms gill side up. Drizzle the gill side with a little EVOO and the balsamic vinegar. Transfer them to the oven and roast for 12 minutes, or until they are cooked through. Don't turn off the oven.
- While the mushrooms are roasting, coarsely chop the arugula and roasted red peppers and combine them in a bowl. Season them with a little salt and pepper.
- Top 4 of the cooked mushroom caps with a mound of the arugula and roasted pepper mixture, a slice of prosciutto, and a slice of mozzarella. Return the mushrooms to the oven to melt the cheese, about 2 to 3 minutes. Once the cheese has melted, remove the mushrooms from the oven and top each one with a second roasted mushroom cap to make a sandwich. Serve the roasted portobello burgers with the rosemary garlic oven fries. It's easiest to eat these burgers with a fork and knife.

- In a large bowl, toss together the halved potatoes, olive oil, butter, garlic salt and freshly cracked black pepper.
- Tear 4 large sheets of Reynolds Wrap® Aluminum Foil, each about 16 inches long. Divide the potato mixture evenly between the sheets of foil. Bring up foil sides. - 1. Preheat oven to 450 degrees.
- 2. Cut potatoes into 1/4″ thin strips, or to desired thickness. NOTE: you can peel or not peel the potatoes. Soak potatoes in ice water for 30 minutes. Drain and blot dry with paper towels.

ROASTED SWEET POTATO OVEN FRIES
I don't know what I like best about these sweet wedges - the way the sweet potato skins crisp and caramelize, the creamy texture of the sweet flesh, or the subtle flavors of the spices and infused oil.

- Place the chopped lemon grass and ginger in a mortar and pestle and add a generous pinch of kosher salt. Pound and grind until you have obtained a coarse paste. Add 1 tablespoon of the olive oil and work the ingredients together with the pestle. Scrape into a small saucepan and add the remaining olive oil. Stir together and bring to a very gentle sizzle over medium-low heat. Sizzle, shaking or swirling the pan often, for 2 minutes and turn off the heat. Allow the mixture to steep for 30 minutes. Strain into a large bowl, pressing the ginger and lemon grass against the strainer to extract all of the oil. You should have 3 tablespoons of oil. Add a little more olive oil if necessary.
- Meanwhile preheat the oven to 400 degrees. Line a baking sheet with parchment and brush the parchment with olive oil. Cut the sweet potatoes in half lengthwise. If they are very long, cut the halves in half crosswise as well. Cut each half into 4 long wedges - smaller sweet potatoes will yield 8 wedges, larger will yield 16.
- Place the sweet potato wedges in the bowl with the oil. Add the ground cumin and coriander, and salt to taste, and toss together until the wedges are thoroughly coated with oil. Place on the baking sheet in a single layer (use 2 baking sheets if necessary). Place in the oven and set the timer for 10 minutes. Turn the wedges over and roast for another 10 minutes. Turn the wedges again and roast for another 5 to 10 minutes, depending on the thickness of the wedges and how fast they are caramelizing. The wedges should be tender when pierced and there should be some caramelized bits, especially at the thin tips. Remove from the heat and allow to cool slightly before eating.

- Thursday, August 15, 2013 Oven Baked Parmesan French Fries Notes: you could cook without the rack but you will need a well oiled pan and will need to flip half way through. I just wouldn't do the Parmesan fries without the rack... Other potato types could be used but as with most French Fry recipes, russets are probably the best choice. Preheat oven to 425 convection. Convection is better here since we are cooking on a rack and not flipping. You can do 425 conventional if you need to. Peal potatoes. Cut into 1/4 inch fries. My cheap mandolin again earns it's keep. Place in cold water and soak for 10 minutes or so. Then rinse 2-3 times. Grate 1/2 cup of fresh parmesan. Prep a baking tray with foil and a rack. Spray with PAM. Pore onto dish towel and pat dry. Dry the bowl. Place fries into dried bowl. Add 1 T olive oil and 1 t kosher salt. Mix well. Add the Parmesan and mix well. Spread on the rack without overlapping. Bake until golden brown.
