Steps:
- Heat broiler over high, with rack in the second position about 6 inches from the flame. Line a half-sheet pan with Reynolds non-stick foil.
- In a medium bowl combine the turkey with celery, mayonnaise, cranberries and red onion, and stir until combined.
- Arrange the toasted bread on a baking sheet and divide the turkey salad evenly among slices, then top each with 1 ounce of cheese.
- Broil about 6 inches from the flame until the cheese is golden and bubbling, about 2 to 3 minutes, keeping a close eye on it to avoid burning.

OVEN LOADED TURKEY MELTS
This is a delicious recipe to use up any leftover turkey from the holidays! You can also make this using deli-sliced turkey. I have use provolone cheese in place of the mozza cheese. You can prepare these melts hours in advance, cover with plastic wrap and refrigerate until ready to bake.

Steps:
- In a bowl stir together the avacado with mayonnaise and garlic until well combined; season lightly with salt and pepper to taste.
- Divide and spread the mixture onto one side of the 4 bread slices.
- Top evenly with turkey slices, 1-2 tomato slices, 1-2 onion slices/rings, 2-3 bacon slices and lastly the mozza cheese slices (1 or 2 slices).
- Top with remaining bread slices.
- Carefully spread soft butter onto the outside of each sandwich.
- Place the buttered sandwiches on a baking sheet, then place a second baking sheet on top of the sandwiches.
- Bake at 400 degrees for about 20 minutes or until golden.
- Slice in half or into fourths.
- Delicious!

- Turn on oven broiler and either grease a baking sheet or prepare it with parchment paper.
- Spread a dollop of dijon mustard and cream cheese on sandwich slices.
- Top one side with cheeses and the other side with turkey slices.
- Broil for 5-7 minutes, until bread starts to turn golden and cheeses are bubbling.
- Remove from heat and top cheese side with desired amount of lettuce. Combine the sides together to make a sandwich, slice in half, and serve immediately.

- Mix the smoked paprika, garlic powder, onion powder, cayenne pepper, dried thyme, 1 tablespoon salt and 1 1/2 teaspoons black pepper in a bowl. Sprinkle some of the spice rub inside the cavity of the turkey. Separate the skin from the breast meat with your fingers, starting at the top of the breast and sliding to the right and left, then working down. Massage some of the rub onto the meat under the skin. Sprinkle the remaining rub on the turkey's skin. Place the turkey on a sheet tray and cover with plastic wrap. Refrigerate overnight or up to 24 hours so the flavors can marry.
- Set a rack at the lowest position in the oven and preheat to 325 degrees F. Remove the turkey from the refrigerator to bring to room temperature. Tie the legs together and tuck the wing tips under. Place the turkey in a roasting pan. Drizzle the outside of the turkey with a few tablespoons of olive oil and sprinkle with salt and pepper. Roast the turkey about 3 hours, or until a thermometer inserted into the thickest part of the thigh registers 165 degrees F. Transfer the turkey to a platter, cover loosely with foil and let rest 30 minutes before carving.

- Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat. Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes. Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil. Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
- Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread. Spread the top and bottom of the sandwiches with some butter. Heat the cast iron skillet over medium heat. Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side. Halve the sandwiches and serve with cranberry sauce, if desired.
