OVEN-FRIED PARMESAN POTATOES
I found this recipe in a newspaper and adjusted it somewhat by adding additional Parmesan cheese. This is a wonderful side dish, and since the potatoes are cooked with the skin on, they are nutritious as well as delicious.

- Place potatoes in a large bowl. Drizzle with oil. Sprinkle with cheese, garlic powder, paprika, salt and pepper; toss to coat. Transfer to a greased 15x10x1-in. baking pan., Bake, uncovered, at 450° for 25-30 minutes or until golden brown, stirring once.

- Heat oven to 450 degrees.
- Scrub potatoes, but don't peel.
- Cut in wedges or strips.
- Place potato slices in a plastic bag with the oil and shake well to coat potatoes evenly.
- Combine remaining ingredients in a separate plastic bag.
- Add potatoes and shake to coat.
- Arrange potatoes, in a single layer, on a baking sheet that has been sprayed with cooking spray.
- Bake for 30 to 35 minutes or until golden brown.

- 2. Peel and cube potatoes and place in a ziplock bag. Add cheese and all spices to the bag. Shake to coat.
